What’s for Dinner Tonight?

Not sure what I was thinking of but bought all the veggies needed for ratatouille from the farmers’ market.
Except zucchini!?! Seriously what the what?

This means tomorrow I’ll send my aide to local markets to see which one has the best offerings. Also means my kitchen work schedule will be completely wonked this week.
Oh well it is what it is.

Took leftover stir fry sauce, added onions, peppers and mushrooms to it and finally, already cooked chicken. Happy to use up leftovers.
 

Ended up making some salmon patties with mashed potatoes and some garlic green beans last night. Luckily DH enjoyed the patties because I wound up with no appetite.

Tonight's shaping up to be a spatchcock chicken on the grill. Probably some grilled zucchini on the side.

Tomorrow headed back to my parents since my dad was in the hospital again last night. DH will grill honey lime chicken and sides TBD. We are going to need a new plan here with my parents but that's a post for another thread.
Hope your dad recovers well. Completely understand the pressures of handling elderly parents in declining health. We're juggling that on three fronts here. It's not easy or for the faint of heart for sure.
 
Busy day and just didn’t feel like wrapping my head around any kind of cooking.

Made a hamburger with carrot slaw on the side for dinner.

We've been through that with all of our parents. It's mentally and physically exhausting, not to mention heart wrenching, all at once. I feel so sorry for both of you. :hug:
 
DS wanted a burger & fries. DH & I are sharing shrimp & grits.
I love shrimp and grits. Totally not a New England thing, so I save my shrimp and grits eating for Disney and New Orleans. I really should learn how to make good grits, but so far, no luck.

DH and I are on vacation so we've been eating out a lot. Sunday we had big lunch out with my cousins, so grazed for supper. Monday and Wednesday we went out. Tuesday we had steak tips on the grill at our cottage, with corn on the cob and Caesar salad. Not sure what's on the schedule for tonight... maybe Indian, maybe fried seafood, but I'm not cooking. It's vacation!
