I think those are my only exceptions and if it was easier to eat vegie for those things I would. My kids have always eaten jello from buffets and I have never made a big deal about it. What could a sample menu for a day consist of (exclusing tofu, because that just scares me for no good reason!)?

Breakfast usually is cereal or oatmeal and fruit. Lunches can be sandwiches (natural PB & J on WW, Hummus, etc...), soup (Black Bean, Corn Chowder, Split Pea, Vegetable, Lentil, Chili, etc...), salads or leftovers from dinner. Dinners are usually simple for me since the rest of my family aren't vegans. The staples in my house are beans, rice, veggies, tahini, cashews, almonds, fruit & spices. I can do wonders with that.
If you want to try some tofu, but are afraid, find Mori Nu pudding mix in your health food section. It is made for Mori Nu Silken Firm tofu. You mix it with a bit of water and voila, pudding. I made a chocolate pudding pie tonight: graham cracker crust, chocolate fudge layer (vegan cream chese, maple syrup & Ghiradelli's double chocolate chips) followed by the chocolate pudding mix. It was completely SCARFED down by the carnivores tonight. IF, and I mean IF, they even suspected tofu, my kids would have run screaming! But, instead, they asked, begged and pleaded for seconds. To me, that passed the test. And BOY, was it good!![]()

Chocolate Pudding Pie
1 chocolate graham cracker crust (bought or homemade)
1 bag Ghiradelli Double Chocolate Chips
1 container Tofutti Vegan Creme Cheese
Pure Maple Syrup to taste
1 package Mori Nu chocolate Pudding mix Pudding Mix Link
1 Mori Nu Lite Silken Tofu Firm
First make fudge bottom of pie. In a double boiler, melt chocolate chips, almost all the creme cheese and maple syrup to taste (I used about 1 tbsp). When smooth, taste. Spread in pie shell and chill.
Make Pudding mix as directed for pie (mix, tofu and 2 tbsp water). Blend very well in food processer or blender. Pour into chilled shell and chill some more.
Eat. Yum!Simple and Oh so good! Enjoy.
