I'm just looking for general suggestions and tips for traveling with a child that age.
 
I am interested also: younger great niece will be that age when we go next year.
 
Touring with DD when she was 15-months-old was the easiest out of all of our trips. At that age she was content to toddle around, take in the sights and sounds, and loved the characters and attractions. I made sure she stayed hydrated and had a little fan that clipped onto the side of her stroller. I always kept a small snack (grapes usually) on hand as well as a favorite (small) toy to entertain her if we were in long queue. Naps were critical but figure out what works best for you. I tried going back to our resort in the afternoon but DD was so excited and overwhelmed that instead of sleeping she kept pointing to the door and yelling "Ma! I go!". After two days of that I threw in the towel and she napped happily in her stroller for 1.5-2 hours each afternoon while we remained in the park. I simply settled on a bench or roamed the shops until she woke up.
 
We took ds last year at 15mo and it was a very fun trip. He has always been a good napper and easily slept in his stroller. We did not return back for nap or early bedtime.

His favorite rides included Nemo (and the aquarium afterward), the boat ride in Mexico, Buzz, Jungle Cruise, the Dig Site in AK, seeing the animals, and just about anything that was in a boat or included bright lights. ;)

He does NOT like the Haunted Mansion or Bug's Life. :scared:

Also parades were a big hit, the boat from TTC to the MK, the boat around the World Showcase lagoon, the characters (especially face characters that could talk to him), and fireworks.

Whole milk is kind of hard to find (milk in general isn't as easy to find as I expected) so you may want to bring a cooler if your toddler has limited patience waiting for it. I didn't care if he occasionally didn't have whole milk, but it could be a walk and a decent wait on line to get anything.

It's been a while since mine were that age, but we also found stroller naps the only way to go - too much going on to convince a toddler to leave. I simply announced that we were going to sit here for an hour waiting on a parade (and we did) - so find a shady spot to wait on the parade and toddler will sleep out of boredom as long as you promise to wake them when the parade happens.
The scariest for my children were the auto-flush toilets and the newer super loud hand driers. We used the toddler restrooms in the child/baby care centers for a non-scary toilet visit or diaper change. Epcot's also had a mini kitchen for heating food and little play area for down time - no idea which centers have what now...
