Definitely avoid chinese NY... it's like WDW christmas/NY crowd.
We went there during christmas day last year and the crowd was busy but definitely not as crowd as I expected.
That being said, just a couple things to keep in mind:
1. The place is tiny, not very many attractions in the park yet. I was quite surprised - 1 off peak day would be more then enough to go through the whole park (IMO of course).
2. The people have their own version of politeness. If for some reason you thought DLRP people were rude the DLHK people will surprise you even more.
Again that is my personal experience.
I don't know if you have been to DLP or not but we LOVED DLP. The theming we thought was wonderful. Detail wise we think it is the closest park to DL california compared to the other 2 disney resorts (we haven't been to Japan yet, so we can't compare

)
So if you had a choice btw DLHK or DLP I would pick DLP in a heartbeat.
We like it so much we want to go back there as soon as we scrape up enough $ (which could mean 6-10 years...

).
