Our LAST day.... Wahhhh.....

We'll pack up our things, load the car, and probably head to the parks pretty early (assuming Em and I don't use this as our run morning, that could slow us down a bit).

And we'll use this day as an opportunity to do Universal's Biggest Hits.

We'll have to make sure we hit the other two water rides on Thursday and Friday because I am NOT making a long car ride home in grungy clothes. So, River Adventure is as wet as I'm willing to get on this day.

I figure we'll hit the road no later than 5 p.m. That will get us home by about 9 a.m. Sunday. Leaving enough time to catch up on some laundry, relax and reboot before it's back to the grind on Monday. :rolleyes2

And, THAT, is the plan as it stands right now...
 
Your plans look great. I am also a fan of EoS but not a fan of the lines that are always there. I think that has to be the most crowded CS restaurant in all of DTD. So maybe WP is a better option. We have never tried it.

I can't wait to hear what you think of WWoHP. Although we have been to Universal and IoA many times we have not been since that opened. I do remember that Spiderman was our favorite when we used to go.

Everything looks great! Especially those runs! Hannah and I have talked about the next time we go to Disney we want to do some walks/runs along the Fort Wilderness area just because the trails look beautiful. Sure it'll be rough with the heat, but nothing is more satisfying then finishing a run.

My friend just asked Emily about babysitting on their fall Orlando trip. They are staying at Bonnet Creek and doing MK, SeaWorld and maybe USF. Emily was checking out the resort and seaworld on the internet and he was kinda :headache: :worried:. He told her "it's only because your the oldest." lol.
Long story short, I'm so glad I've got exciting news in store for him. He'll be thrilled when he finds out he's not really missing out on anything! :thumbsup2

Yeah, my semester is winding down and all the big projects are finished. So, I finally had some time to plan a bit.
FUN! :woohoo: All I've got left is two tests, one short speech, and a presentation that is finished and ready to go. COOL!
I'll try my best to catch some photos. It's hard to catch good pix in the car, but I'm gonna give it a shot. :cool1:
 
Yesterday was a perfect Spring day here in southern Indiana. The kids and I finally got our annuals planted, so here are just a few more photos. I swear they are the last. lol.







The macro lenses on this camera are pretty nice. Hopefully, once we master using them, we'll be able to get some unique photos on our trip, and not just the traditional snap shots. It will be fun to play with anyway.

Emily saw something like this on Pinterest and wanted to create one of our own. So, here's our flower fountain! Turned out pretty good, I think. Of course, it will look a bit better when the flowers fill in a little more. :thumbsup2



I think it's pretty cute. And I like the colors Em chose for the pots.
I finished off the evening with a nice long walk around town with just Matt. He's got jury duty this week, and is putting in long hours, so we haven't had much time. Glad we had a nice day for it!

I love the flower fountain! I love the look of pretty flowers and gardens, but my thumb is anything but green. I can't grow a thing! I just need someone to come plant my flower beds for me....and then weed them...and water them...and take care of them! LOL! :thumbsup2

I'm okay at planting, and typically do okay at watering....
but if you check the background of that flower fountain picture, you'll notice I "may"... "occasionally"... lag behind on the weeding. :rolleyes1
(I was a bit embarrassed when I saw that ginormous weed in the photo. :blush:) Weeding sucks. :laughing:

I am in the exact same boat! I don't dare buy any live plants because they are guaranteed to end up in the garbage. Silk plants are the only thing that works for me:)
 
I'm slowly getting better at the planting thing. I used to suck, but I'm getting there.

On the topic of my gardening...

I noticed the giant weed was gone yesterday, and told Em "Hey, thanks for pulling up that weed." (Since I knew the boys would have never noticed.)

And she responds "Oh, it wasn't me, it was Grandma."

OH, THE SHAME!!!!

My mom is one of those perfect people. With perfect yards. A spotless home. And she notices every little thing out of place. :crazy2: Drives me crazy.
And, of course, that wouldn't have slipped by her radar. :headache:

Oh, well, the weed's gone now. :p
 
Well, my semester is winding down and I'm starting to have a bit more free time. :cool1:
So, I spent a little time working on our menu for the trip. For a month or so there, I was really hoping to manage saving for our meals and just eating at inexpensive restaurants during the trip. But, with Em's eye springing a leak, the need to put up new siding, and all that fun life stuff, I decided to just go with the cheaper option and make our own food on the trip.

That said, I don't want to do a lot of work, or at least I don't want to feel like half our trip is spent in food prep. I also don't want a completely boring menu of deli sandwiches and chips.

So, here's what I've got so far.
And if anyone has any other suggestions that I can make work, please, please share them.

For now, I'm focusing on the Disney part of the trip. Since we will have the grill and our portable stove. I'm not yet sure what I'll do on our last couple days at Universal. I really don't want to live on sandwiches for three days. lol. I've gotta put some thought into that. Maybe we'll make another Walmart run on the day we move and get some "new" cold items like tuna salad.

Anyway, here goes:

We'll be at Disney from early Saturday to early Thursday. That's six breakfasts, five lunches and five dinners.

Dinners:

Skyline Chili Spaghetti

This is a local favorite. And if you've never had Skyline, well you haven't lived. It's pretty much the only place in town we eat at. lol. So, even though we get it often enough, I know the family will enjoy it on vacation.

I plan to buy the chili sauce, bag it in a large Ziploc and freeze it.
I'm also going to precook the spaghetti noodles and bag them and keep them cool in the cooler.

We'll pick up the cheddar cheese when we do our shopping in Orlando.
And I may also get some Texas Toast during our shopping trip.

Pure evil on a plate. And all I'll have to do to prep the food the fort is boil a pan of water to warm through the bags of sauce and noodles. And toast the Texas Toast on our griddle. Barely any mess or cleanup with this one.

I'll probably reserve this for one of the water park days since it's very filling and swimming always makes my crew hungry.


Hamburgers

That's sort of a gimme on a camping trip, right?
All I need are some frozen hamburger patties to cook up on the grill.
Obviously buns and some condiments. I'm trying to find a way to get the small packets of ketchup and mustard, mayo, etc. before our trip, so I don't have to deal with large bottles of the stuff. We won't need much and the less we have to carry/store, the better.
I've got some frozen garden corn, already in Ziploc freezer bags which I'll bring for a side. Easy peasy. Boil in the bag and done.
We'll use the grill for the burgers. So, again, very little mess or cleanup required.

Another camping tradition. We never eat these at home, so it's a nice change of pace when camping.
We'll probably have baked beans or potato salad and some yummy watermelon, purchased in Orlando, on the side. Another no muss, no fuss dinner. This is really the only other meal where I need ketchup/mustard. So, you can see why I don't want to bring an entire bottle of these. I've got to come up with a solution to this little issue somehow. :confused3

Walking Tacos

Simple enough. Corn chips I can pick up in Orlando, and precooked and frozen taco meat, which I can warm through in boiling water. Another simple and easy meal.
But, this is one meal I'm less than excited about. The kids love it, but it just feels like a snack to me, not a meal. Probably because it's what people get at football games around here. lol. And seriously, it's based on chips. :rolleyes1
I know I can doll it up with lettuce and tomatoes and sour creme for more of a taco salad type dinner. But, I'm just not sold on this one yet. So, if you've got any other ideas or ways to make it feel more like a meal, I'd love to hear it.

Barbecue Beef Sandwiches.

This is Matt's FAVORITE. I make it at home whenever we can find a good roast on sale. So, I know he'll love this. And, again, it' will be pretty easy to just warm through in boiling water.
It would be really nice to have diced baked potatoes (cooked in foil over the grill) for this meal. So, I'm considering that also.
This will probably be another heavy meal for a water park day since it's much more filling.

And, if anyone is wondering, I did as much research as I could on cooking in ziplocs. As long as I stick with name brand there doesn't seem to be any concerns (chemicals leaching into foods, etc).
I've never used this method before, but read about it on a lot of camping boards, and it will save all the dish washing we've done on other camping trips. So, we'll see how it goes.

So, that will cover our five dinners at Ft. Wilderness.
 
I've only got two "special" evening snacks I'm considering.

Smores, are a gimme. And we can enjoy the Chip and Dale singalong and a movie while we're at it. Sounds like a fun evening to me.

I haven't decided on whether we'll bring our own supplies or just buy the "kits" offered at Disney. Yes, the kits are pricey for what you get. But, buying a box of grahams and bag of marshmallows will be a lot of waste since we won't eat more than a couple on the trip, and they'll probably go stale in the pantry at home. Add to that, trying to keep the chocolate cool while camping, it just sounds like a waste in comparison. So, we'll see....

This is another option we're thinking about. We've never made them before, but the kids found this awhile back and wanted to try making them on our camping trip this summer. So, I think we'll give it a shot. We'd have to bring small marshmallows and chocolate chips, but they won't take up as much space and we can use them in cookies at home. So, it feels less wasteful, in general, than the smores ingredients (even though it's the same things). lol.

I just put ground beef, potatoes, carrots, and onions in aluminum foil with some oil, worcestershire sauce, salt, pepper and any other spices we like. Then wrap it up and cook over the fire. These are a camp staple!

For breakfast I do eggs and sausage, pancakes, breakfast burritos, and the standard cereal and pop tarts. I sometimes make biscuits (in our sandwich maker over the portable stove) with sausage gravy. YUM!

We make those bananas every year! A big hit! We actually just put them right in the fire for a few minutes rather than use the stove. (Using riper bananas is a good idea.) ;)

Yep, we do too. I hadn't gotten to our breakfasts, but rest assured, they'll be BIG! My boys love a big breakfast when we're camping.
