Woke up today with a sore throat, head ache and an annoying cough.

WFDT? DH has made some pumpkin soup. :goodvibes
 
Plans changed, yesterday. Instead of our usual St. Patrick's Day stuff and dinner, Alan got tickets to an outdoor expo. We spent the day there. Checking out new things, letting the kids rock climb, fish, tie flies, and all kinds of activities. We ended up getting dinner there. Alan's brother owns a catering company, and they were working the expo, so we feasted on smoked turkey legs and brisket. Yum!

So, today is our actual St. Patrick's day celebration. For dinner we are having corned beef and cabbage, colcannon and Irish soda bread. I've also made a German chocolate cake for dessert since it's also Alan's birthday.

So tonight is Chicken Cordon Bleu... Last day of Davids Birthday week...

Today is my last day of Spring Break. :guilty: Back to work tomorrow. I have so enjoyed my time with my family this week!

I've been cooking up a storm. I made a pineapple upside down cake and it just came out of the oven. YUM!

And tonight's dinner is pasta with a creamy tomato sauce.

Hope everyone is doing great! Although I know our PIO is under the weather. Feel better, honey!
 
I hope everyone enjoyed their St. Paddy's Day feast!

Tonight we had Swing Band rehearsal. I made 30 turkey enchiladas rancheras, some individual layered bean dips, salad and a storebought cake. I need to remember that these guys eat much more than I do because everything was gone but a little cake. Hopefully no one went home hungry, but I feel bad in case some didn't get enough!

I am TIRED! going to bed soon, see you all tomorrow!
 
I'm thinking Mexican tonight! I might have a Man vs Food challenge and make a 5 lb burrito... :woohoo:

Gluten-Free Meatballs and Italian Sausage with Ziti

My secret to less dry, HEALTHIER meatballs is, I steam them [covered] for a 1/2 hour first:

Dinner last night was really good! We love us some corned beef and cabbage! Unfortunately, we ran out of diet Coke, and didn't want to go to the store in the middle of a snowstorm (you heard me right), so I developed a nasty headache, that got worse as the night went on. I went to bed by 9:30, but was awakened by my hubby, searching for his keys. We never found them, but I knew I knew where they were. In my pain and befuddlement, I just couldn't remember. Poor hubby had to drive my van to work at 2:00 in the morning, pick up the extra set of keys for his work truck, drive back home, then back to work by 4:00. Crazy! Of course, when I woke up, I remembered the keys to his truck were in my coat pocket.

Dinner tonight will be sour cream enchiladas.
