Well, the pasta dish was a no-go for me. It just didn't have a lot of flavor. Alan liked it, but that man will eat anything, so I don't go by him. I'm not sure if it's a recipe I'll even keep to try to "nanatize." Just don't know if it's worth it when there are other, better recipes out there.

We got SLAMMED with winter last night. It started snowing at about 9:00, and so far, we've accumulated almost 4 inches on our front yard. I'm hoping the plows are out and about, as I have bowling this morning. I'm really not looking forward to that drive.

Dinner tonight will be baked creamy chicken taquitos. Yummy!! I love this recipe!

Be careful out and about.... The Creamy Chicken Taquitos sound good!

No time to do a good catch up with everyone - Sorry!! But please know I think of you all every day.

Busy week at work. I so wish I would win the lottery and I could quit. Don't get me wrong - I love my job - but there are just days/weeks that I really miss staying at home.

We went to Kearney for dinner with Marty and Stephanie last night. We had so much fun. We are all getting so excited for this little baby to be born. She is past the time when Elizabeth delivered (36 weeks). I am so hoping for a little girl but I will of course love a baby boy also.

Tonight after work I am going with Elizabeth to a wrestling meet for Ethan. So much fun - but this Grandma hates to see him pelted to the mat. But he loves it and really is pretty good.

Tomorrow Doug and I are taking Ethan to the IMAX theater and Museum. I have been waitng for the right time and tomorrow is it. I can't wait.

I'm jumping back in.

Dinner tonight will be porterhouse steak with vegetables for DS and myself. DH will get a fish with the vegetable sides.


Work has been crazy and I've been pretty brain dead lately. So, no creative juices flowing in the kitchen much. And I'm still on the WW bandwagon. Last week was a low weight loss of 0.1 kg (about 0.2 lbs). But it was a loss. Hoping for a little bit better this week.


We've officially hit autumn in Melbourne. Our weather? Wet, wet and wet. Remember last year when we had the floods? Well....looks like a repeat of that this weekend. Some areas in country Victoria have had over 10 inches of rain in about 1 - 2 days early in the week. The waters have not subsided and it looks like there is another 5 - 6 inches coming down today.

I'm fine in the city. We're seeing about an inch or two and it is welcomed rain for the garden.

Eggplant/aubergine and tomatoes are cropping right now. I'm at the tail end of zucchini season, thank goodness!. Starting to think about moussaka recipes - both of the meat and the vegetarian variety.

I'm taking Jacob to an all day Scout merit badge "pow wow" today. He and his cousin are working on 3 merit badges today. It's a pretty intense day, but when it's over, he'll have 3 more merit badges toward his Eagle award! He's excited! I think he's actually more excited to go to 5 Guys burgers after it's over. That's the reward for getting it done.

No idea on dinner. Alan will be taking care of that. My guess is some kind of stir fry.

So night before last I made Loaded Baked Potato soup and it was so easy and tasted so good, but I forgot to take a picture...

Loaded Baked Potato Soup

Ingredients

3 bacon strips, diced
1 small onion, chopped
1 clove garlic, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
3 cups chicken broth
2 large baked potatoes, peeled and cubed
1 cup half-and-half cream
1/2 teaspoon hot pepper sauce
Shredded Cheddar cheese
Minced fresh parsley

Directions

In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil; boil and stir for 2 minutes. Add the potatoes, cream and hot pepper sauce; heat through but do not boil. Garnish with bacon, cheese and parsley.

All I have left is my Dad, and my Aunt (Dad's Sister) and David has his Mom and his Aunt (mom's sister).

I know that David and I have jokingly called our trip in the upcoming fall, "our staying in the will trip" but this just makes me feel so urgent to go see our family.

Just a reminder that life is short and you should make every attempt to show your family and friends just how much they mean to you....

I just lost my very favorite Uncle a few weeks ago. It was extremely devastating to everyone in this house.

Brandi, the soup sounds great, so sorry about your uncle.

Jen, all your cooking sounds great, I can't wait to come visit!

Yesterday I finally cooked the turkey that I had been trying to cook for three days. I started it in the morning and by evening I was thankful to have it done. We have had beautiful weather so yesterday Fran put me through the ringer yesterday. We bought about 10 big bags of potting soil, 8 giant pots, and over the last two weekends we planted three fruit trees, three tomatoes, repotted three or four plants, and several herbs.

Since all our gardening is in pots and due to the nature of our side yard, there was a lot of weeding, sweeping and other hard labor involved. When we finally wrapped up after 5PM, I decided that all I needed was instant mashed potatoes and a can of gravy and we had Hot Open faced Turkey sandwiches. Easy and tasty!

She wants to get more pots at Costco today and finish planting the zucchini and cucumbers. I have no idea WFD tonight and I still have a ham to cook. However, until we buy the new freezer, I don't have any extra freezer space to freeze these meats I'm cooking!

If it's the English muffin bread I pinned, it's really easy! I've made it twice now, and both times, it turned out great! We really enjoy it in the morning. In fact, we're down to our last loaf, so I guess I need to make some more today, as well.

Wow! Our spring break is not until the week after Easter. Of course, if we had spring break right now, it would really feel like winter break. We have snow everywhere!

No idea what we're eating today. I think I'll let Alan decide!

I just wanted to take a minute to tell you about some neighbors of ours. They have 5 children, and 2 of their daughters have been diagnosed with Leaky SCID. This is the "bubble boy" disease, for any of you that remember that movie with John Travolta. Only 2 cases are ever diagnosed per year in the United States!

The 2 girls are undergoing bone marrow transplants now, and it's really been intense! They had to go through chemo therapy to kill everything off, and then the transplants. The older daughter (8) found a perfect match in her little brother. And a stranger tested a perfect match for the little one.

After the transplants, they have to be quarantined for an entire year. No one in or out of their house. The father had to give up his job, and they had to undergo training on how to keep absolutely EVERYTHING in their house sterilized. It's quite a thing! Worst of all, the father lost his job, and they are now broke. Our church did a silent auction/fundraiser to help them out. It was really something to see an entire community come together to help support this family. At the end of the evening, over $86,000 was raised to help them out.

It's been such an emotional thing for our entire community, I wanted to share with my "family." I'm posting a link to a Youtube video that the father put together to explain and say thank you to everyone. If you've got 10 minutes, it's definitely worth a watch!

How did you store your loaves? I have two, and we of course won't finish both of them.
