....WFDT??? I have no idea! :confused3 My kitchen is upside-down, so I have to figure out what I can prepare, especially without a STOVE....:confused3
 
I can't believe I am back to work already. Between taking care of Dad and getting him settled and grocery shopping for him, this weekend just flew by. I need another day to rest. We have a funeral this morning so the Church is buzzing. Not my favorite way to start my week.

I am going to Zumba tonight. I hurt my back so I haven't been back for awhile. I really miss it so I am looking forward to tonight. I will have to go slow but I will keep moving and that is all that counts.

WFDT ~ Tilapia, new potatoes, roasted beets. Doug is on his own as I don't get home till 6:45. So we shall see - but that is what he wanted.

Well, Timmy did great at the jr. high preschool!!! My neighbor came and picked him up, and he left with her, without a murmur! That, in itself, was a small miracle. She called me from the school, and said he'd cried for about 5 seconds when she dropped him off. She left her phone number with the teacher so she could pick him up if he got too upset to continue, but it didn't happen. He had a great time. Carol took him for a treat on the way home, and he came in happily sucking a tootsie pop, carrying a diet Coke for me! I love my neighbor!!!

He loved the preschool so much, I told him that once he's completely potty trained, and wearing big boy underwear, we'd look for a "real" school for him to go to. That's really helped his potty motivation!

I took the kids to the local natural history museum on Saturday evening. Alan had some homework to do, so he set up in the museum cafeteria, and worked while the kids and I wandered the place. It's really kid-friendly with lots of hands-on exhibits. We ended up spending about 4 hours in the museum. So much fun!!!

Katie got her hair cut this weekend. It started out mid-back, and now is up around her chin. She looks darling, but oh, so much older than 14. She loves it and has received so many compliments on it. Good for her self-esteem.

Today will be a quiet day. Timmy is fighting a bad cold and fever. He was up most of the night, just burning up. The fever is gone, for now, and he's resting on the couch. I think, though, that he's warming up a nice case of croup. His cough is starting to sound like a barking seal. Good thing we don't have to go anywhere today. I foresee a nap or 2 for both of us today.

Dinner tonight will be ham fried rice.

Charlene did get to the nursing home today so I am staying home tonight. The girls are both feeling much better today. Rylee is still a little off kilter but Nola is wired for sound. Both are napping so that is good.

Anna is here today. Poor thing started up the truck this morning, forgot she had it in reverse so she got out to scrape the windshield. Truck rolled backwards and she tried to stop it, the door caught her and knocked her down while it went zipping down her driveway, over the center median in their little street, between two pole things and crashed into their neighbors bushes. She is okay but was banged up a bit. Donny was at work and a mess. He sent Dan over to pick her up and bring her to me which is fine, she was shook up. But for a man who is brilliant he sure needs to learn how to communicate with his family. His first call left us thinking she was in need of 911 and that the truck was totaled. everyone knows that if you ask for Buddy to go to a crash someone is hurt and the vehicle needs a wrecker. He also needed to be told not to send a frantic "call me ASAP" text to his brother. Knowing Donnys recent trips to the ER that would have freaked Dan out. DOnny forgets that most of us do answer our phones adn respond to texts ;)

I am not sure what to make for dinner. the race is 7 PM now and I have no idea who is going to be here. I have plenty to pick from so we'll see.

I hope that your life settles down, girlfriend! I don't know how you do it all!

Afternoon y'all!

This whole house is sick except for me. My poor wife, son and BIL have the death cold that I had the last few weeks. And we thought they'd escaped it too.

Tonight's dinner is a tomato soup with pasta in it. It's a new recipe. We'll see how it goes.

Glynis- I am so gald that Tim did well. They generally do better when Mom is not around to witness the performance :rotfl2:. I bet a preschool will be a great motivator for him. I do hope he gets better soon! Poor kid is getting whallopped this winter :sick:

Yikes! Poor Anna!!! The same thing happened to Alan's mom several winters ago, however, she wasn't so lucky. She tried to jump into the car to stop it, and ended up getting dragged under the car. She was trapped for quite a while, with her legs getting burned, until help arrived. It was a long recovery. I'm glad Anna's experience wasn't that bad!

Well, we woke up to a winter wonderland. There was a huge storm overnight, and the forecasters say another one is headed towards us on Thursday. We'll see!

Timmy and I are staying home today. His fever finally broke around 4 this morning, so he's exhausted, and so am I! He's still pretty icky, though. Coughing and runny nose, etc. So, we'll stay in and snuggle today. I already cancelled my scout meeting for today. No sense taking any germs to those boys!

Dinner tonight will be macaroni and cheese. Comfort food at it's most basic. Leslie will probably add chili to hers, because she doesn't like it plain.

Recipes, please!!! I love Kung Pao Chicken!!!

Kung Pao Chicken
Ingredients

1 pound skinless, boneless chicken breast halves - cut into chunks
2 tablespoons white wine
2 tablespoons soy sauce
2 tablespoons sesame oil, divided
2 tablespoons cornstarch, dissolved in 2 tablespoons water
1 ounce hot chile paste
1 teaspoon distilled white vinegar
2 teaspoons brown sugar
4 green onions, chopped
1 tablespoon chopped garlic
1 (8 ounce) can water chestnuts
4 ounces chopped peanuts

Directions

To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a glass dish or bowl and add marinade. Toss to coat. Cover dish and place in refrigerator for about 30 minutes.
To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste, vinegar and sugar. Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic.
Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear. When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.

Crazy, busy Saturday. Started with a funeral for a young woman who worked for our program. :sad1: She was only 30 years old and left behind a 6 yo.

After that I went on a shopping expedition and tried to get lost doing so. :rotfl: I was going to take a co-worker to an Amish Market then to Wegmans. She has never been to Wegmans and we were going to a different AM than we normally do because it was closer to the church where the funeral was.

She ended up not going, I think she was avoiding the funeral, :sad2: so I decided to go shopping afterwards anyway. I usually go to Wegmans in VA when I am at my sisters, the closest one here was in the opposite direction of where the funeral and AM are, and I had never been to this one so I didn't know where I was going.

I used the handy, not so dandy, GPS on my cell phone. :sad2:First it took me to a residential neighborhood to a dead end, then it took me out to an industrial area near a shopping center and told me to hook a "legal" u-turn and my destination would be on the left. :eek: The cool thing was that I got to see the Redskins stadium.:lmao: So then it took me back on to the DC Beltway and as I get on there from the ramp I look up and there's the Wegmans.:headache: After yet again being taken somewhere and told to hook a "legal" U-turn with my destination on the left I was determined to find the Wegmans I saw and went back and was able to finally get to the darn thing. :thumbsup2

It was in a VERY new shopping center so I think it just didn't have the street in it.

Day two of my better living and doing good so far. Went to the gym last night and plan to make it there tomorrow and Friday.

Tonight's dinner is parmesan tilapia with asparagus.

Not yet, but my frozen pie crust is thawing. As soon as the kiddies get home from school and can entertain Timmy, I'll start working on the pie.

It is a pretty nice store, a mix of gourmet and regular. We are getting our own in June, can't wait! And I was actually having a pretty nice time, seeing a part of the state I've never seen before. ;)
