Thanks for the photo compliments. I will have a blog soon. Laura is building it and we will be sharing it. It is mostly going to be cooking but also some travel stuff. But, as you all know, she has been insanely busy so I don't know when it is going to be ready to share. The design is done and some recipes and photos are loaded, but I haven't checked on the progress for a couple of weeks.

Alan is at work today until 7:00, so once he gets home, he and I are going to have a heavy duty talk about his mother, and her abilities... or lack thereof. I just don't think she's going to be able to stay at our house on Saturday, and I want to get all my concerns on the table. Cross your fingers that he'll see things my way, and we can talk some sense into his mom.

Oh, I hope it goes well :hug: And what a blessing to have the kids out of the house for awhile!!




I took off work today... and probably tomorrow, too. There just isn't much to do right now. I'm spending today chillaxing and cleaning house.

I think we may try out the new waffle iron and have waffles for dinner.

I will post it as soon as I try it, if everything goes okay. I got the recipe online but am "nanatizing" it. :rolleyes1 They are peanut butter cookies coated with a chocolate peanut butter mixture then coated with powdered sugar. The original recipe calls for using packaged mix for the cookie but I am using my simplified recipe instead. They tend to be really soft so I need to see how well they stand up to the coating part. :thumbsup2

Buddy is taking Kady out shopping and to dinner. They do this every year.:goodvibes She comes home with a lot of stuff!! She has already done all fo her shopping and she paid for most of it herself. Marisa slipped in money where she could but Kady did a great job!

My dinner was Kraft mac and cheese. The powdered stuff. I like it, don't be haters ;)

Morning, all!

I am making chili today, per my husband's request. My goal today is to get all my wrapping finished. I think once I get that done, I can relax.

I'm rethinking my plans for Saturday. I got an e-mail from Amanda saying could we do 2 or 3 since they have dinner later at her mother's. I was planning on making a rum cake, derby pie, and some white chocolate cherry chunk cookies. I was also going to have an antipasti platter so we could have some "food food" to snack on. After what she said, I'm thinking about making the rum cake and nixing the rest. There's no point in making all that food if it's not going to get eaten, you know? What do you guys think? Oh, BTW, I was going to make the cookies so Ryan would have something finger-sized to eat.

Also, I need a really good rum cake recipe. The one I normally use has nuts in it (to make the top crunchy, sort of) and my father-in-law has a hard time with nuts. Help!!!

ETA: Here's the rum cake I normally make. It's my mom's recipe.

Mitzi's Rum Cake

Grease and flour tube pan.

Place ½ cup chopped pecans on the bottom.

Mix:
1 box yellow cake
1 box instant vanilla (small)
½ c light rum
½ c water
½ c oil
4 eggs

Bake at 325 for @ 30-40 until toothpick comes out clean.

Glaze:
1 cup sugar
1 stick margarine
¼ c light rum
¼ c water

Place on stove and boil for 2 minutes. Pour on hot cake while still in pan. Sit for 30 minutes in the pan. Turn over on serving platter and let cool.

I say save yourself the frustration and the time and don't cook if it's not going to be eaten. Unless you're in the mood to bring it all home and eat it yourself, which is TOTALLY something we would do. :lmao:

Today is going to be a fun day in the household. We're leaving this afternoon for a neighboring town, we'll all go to dinner, and then we're going to watch one of those choreographed light shows at a home, and then we'll be walking through a light village and hopefully taking pretty pictures of lots of Christmas lights. I can't wait!

The rest of the day, we have laundry to do...and that's about it!

3 more days till Christmas. All of a sudden I'm excited.

Lindsay why not bake the cake without the nuts, and then if you want something crunchy on top, after you take the cake out of the pan sprinkle it with crushed toffee or toasted coconut? Just a thought.

Here are some pictures. Monday we had broccoli soup with Pioneer Woman's rosemary rolls. I used multigrain bread dough instead of the packaged frozen rolls she suggests:

At 10AM the box office opens, so depending on when we get tickets, we'll need to reschedule one of our dinners. If we don't see her tonight, we'll be dining at Del Frisco's Double Eagle Steakhouse.

Glad to hear that! I'm pretty anti 1 use kitchen appliances but for some reason, making rice on the stove ticks me off. My stove runs super hot and I often struggle to get it fluffy.

My friend who had brain surgery is struggling but the doctors think it may just be effects of the procedure. He's DH's very closest friend here so we're a bit anxious.

A neighbor knocked on our door this morning with a plate full of Christmas candies, so I had to knock out some toffee to go pass around the neighborhood before we leave town this afternoon. :lmao:

Well it is down to the wire here. Are you all ready?? I guess I am as ready as I can be. I have to go to the grocery store tomorrow after work for a few last minute things. I ordered a meat and cheese tray for dinner tomorrow night. We are having our family celebration then. On Christmas Eve morning, Doug and I are going to babysit Liam for the first time - heck it will be the first time they are going out of the house. They are taking Ethan to see Santa and for a fire engine ride. He is so excited!! Then Church and soup at SIL's. Christmas day we have Santa (YES I still believe) Church then dinner and gifts in Cozad.

Christmas dinner is set:

Crab Legs
Baked Potatoes
Cheesey potatoes
Scalloped Corn
Swiss Beans
Frogs eye salad
Western salad
Rosemary rolls
Black Cherry Pie
Peach Pie
Pumpkin Pie
There will be 12 of us and I know we won't starve.

Liam had his first checkup yesterday. He is now 20 1/2 inches and 6 lbs. 4 ozs. He is just doing amazingly - thanks again for all of your prayers.

Matthew got home last night around 10 - Man it was good to see him as around 9:00 it started to snow. He was so excited to be home and is out hunting already this morning with his HS buddies.

WFDT ~ Chicken Royal - in the crockpot, green beans, green salad and rolls.

Well I got the outfit I wanted for a friends GD! :yay: I have been looking and looking for the right combination and braved the mall today. Who knew it would be so hard to find a black shirt and tights and a red skirt and shoes for a 1 year old. :sad2: I got the skirt and tights at Gymboree, the shirt at the Children's Place and the shoes at Target.

Funny thing about the shoes. I had looked at several differant places for soft red sparkly shoes and no one has them, they top part is hard and she has thick feet. Well I looked at a pair of black satin ones that were on clearance at Target and finally decided I would switch the colors for everything, went back to get the black ones and they had the same shoes in red, also on clearance. :woohoo:

It's a type of creamy fruit salad with a large tapioca in it. The tapioca pearls plump up with the liquid and those are the "frog eyes." It's actually really yummy, if you like the texture of tapioca.

We are back from our evening out.

We went to Chili's for dinner and then we went to two different choreographed light show homes. The first one we went to had Disney themed music. The second one had more lights and was simply amazing. We had a blast!!!! :lovestruc

It was so nice to spend an evening with just the four of us.

Tomorrow we'll start making some of the appetizers for our Christmas dinner.

It's almost here! Can't wait. Hope the rest of you are ready and as excited as we are. :banana:
