I thought your DH didn't eat chicken. :confused3



I've got Extra Virgin Olive Oil, Light Olive Oil, Canola Oil, Peanut Oil, Grapeseed Oil, and I forgot about chili Oil!



This is where serious relationship issues occur. I REALLY would not want to put my name on anything that comes out of a box, but I often have to cook for large parties of musicians. Fran has literally threatened divorce if I don't make "instant potatoes" :sick: I try to strive for a balance of what makes her happy and doesn't have me cooking over sodiumed, prepackaged garbage.

I forgot about the grapeseed oil, I have that too...

I understand about balance also, my DH will not eat corn except for on the cob!
 
Good Morning!! Yesterday was a gross rainy day, so I ran home after work and made a giant pot of Hamburger Barley soup. I changed the recipe a little and used ground chicken instead of ground beef. I bought a loaf of italian bread and that was dinner!!

HAMBURGER-BARLEY SOUP
(The Big Book of Soups & Stews; Vollstedt)

1 tsp. vegetable oil
1 pound lean ground beef (or soy crumbles)
1 lg. yellow onion, chopped
1 clove garlic, minced
2 stalks celery, chopped
2 carrots, chopped
1 can whole tomatoes, coarsely chopped with juice
1/2 cup pearl barley, thoroughly rinsed
4 cups beef stock or broth
1 cup water
1/4 tsp. dried thyme
1/4 tsp. dried marjoram (any combination of green herbs should work!)
1 bay leaf
1 tsp. salt
freshly ground black pepper to taste

In a Dutch oven over medium heat, warm oil. Add meat, onion, garlic, celery and carrots and cook, breaking up meat with a spoon until no longer pink, about five minutes. Add remaining ingredients and bring to a boil. Reduce heat to medium-low and cook, covered, until vegetables and barley are tender, about one hour. Discard bay leaf.

Serves 6. Also suggested to make ahead and let flavors develop.




Kady is sick today so I think we are going to have leftover soup for dinner and just watch t.v. and relax tonight. Have a great day all!!!

My wife would LOVE for me to use instant potatoes now and again. She loves them.

At this point, I just refuse to make 'em. :lmao:

Dinenr is ravioli in red sauce and I made a chicken salad for Bud JIC. He choked down the soup I made yesterday, gagging the whole time and washed it down with 1/2 loaf of bread and leftover chicken wings. Apple cake to make sure it was all gone :rotfl:

Jen - I love to make Halloween dishes for my kids. Here are some of my favorites: Wiggly Worm Sandwiches: Spread mayo or Miracle Whip on a Kaiser roll. Slice bologna or deli ham into long strips. Place them on the roll, and there you are. Goblin Goo: Make up 2 "halloween-y" colors of jell-o (I like orange and purple). In clear glasses, scrape alternating layers of jell-o (with a fork). Slowly pour Sprite over the top. I've got others, if you want 'em!

I know I missed Kat and Sheryl. I hope they're having a good time.

Marilyn - sorry about the tooth pain. I'm hoping it's the popcorn, and nothing worse.

Nan - I love the descriptions of your nanatizing! Makes me feel right at home! When I think of the meals that Alan choked down, all because he didn't want to discourage me from learning!

Dinner tonight is minestrone with garlic-parmesan rolls. Yum! I wanted something warm, since our furnace is out. It's been a bit chilly here. Luckily, we have received 2 estimates today, and it doesn't look like it will be as pricy as Alan originally thought. I hope we can get it done and installed within the next week, as temps are dropping seriously at night.

Vegas was a ton of fun. Well, as much fun as a non-drinking, non-gambling lady can find! While Alan was working, I spent hours in M&M's world, and the Coke store. Found fun things for the kids, and enjoyed myself immensely! On Tuesday, as I was walking back to our hotel, I stopped in at Planet Hollywood, to see if I could find something good for lunch, and lo and behold, my eyes spied an Earl of Sandwich!!! We loved it in Florida! I was thrilled to see the Holiday sandwich on the menu. Without any hesitation, that was my order! It was really good, but in retrospect, I think it was too heavy to eat on a very hot, Nevada afternoon, when I still had to walk a mile back to the hotel. I should've gone for the Caprese!

Most of the rest of my spare time was spent in either the hotel room (so nice to be by myself, and not hear "mom, can I?"), or in Starbucks, guzzling salted caramel hot chocolate. The hotel kept the air conditioning on HIGH in the lobby, so I was cold a lot!

Dinner tonight was Mexican. I forgot to take pictures so I'm posting pics off of the blogs I used.

Entomatadas with cheese

For the sauce:

2 pounds tomatoes, cored and cut in half, lengthwise or 2 15-ounce cans of diced tomatoes, preferably fire roasted
1 jalapeño, seeds and stem removed, cut in half lengthwise
3 garlic cloves
1/3 medium yellow onion
1/2 teaspoon ground cumin
1/4 teaspoon ground allspice
1 cup chicken broth
1 teaspoon vegetable oil or lard
2 tablespoons chopped cilantro
Salt to taste

For the entomatadas:

1 tablespoon vegetable oil or lard
12 corn tortillas
4 cups grated Monterrey Jack or Muenster cheese (16 ounces)
Avocado slices for serving

Method:

Heat up the broiler and line a baking sheet with foil. Place the tomatoes seed side down on the sheet, along with the jalapeño, garlic, and onion. Place under the broiler and after 4 minutes, take out the jalapeño, onion and garlic and place in a blender.

Continue to cook the tomatoes for 5 more minutes or until the skin blackens. Take out the tomatoes, and when you’re able to handle them, remove the skin and seeds. Place the tomatoes in the blender. (If using canned tomatoes, skip the broiling step and just add them to the blender.) Add the cumin, allspice and puree until smooth. Heat the oil in a pot on medium low, pour the sauce into the pot, add the chicken broth and turn down the heat and simmer for 15 minutes, stirring occasionally. Stir in the cilantro, adjust seasonings and add salt to taste. (Note, if your tomatoes are especially juicy, you may forgo adding the chicken broth if you prefer, or add less than one cup.)

Preheat the oven to 350 degrees and grease a large baking dish. In a skillet, heat up the oil or lard on medium-low heat. One at a time, heat up the tortillas in the hot oil until soft. Keep them wrapped in a cloth or tortilla warmer until all the tortillas are heated.

Take each tortilla and place 1/4 cup of the cheese in the center. Roll the tortilla and place in the baking dish seam side down. Repeat for all the tortillas. Cover the tortillas with the sauce and the remaining cheese. Bake for 10 minutes or until the cheese on top is brown and bubbling.


Simple Spanish Rice

Ingredients

1 cup rice
1 cup water
1 can diced tomatoes with green chiles
1 can tomato sauce (8 oz)
1 tsp. chicken flavoring or bullion
1 tsp. chopped garlic

Toss all of the above ingredients into a pot and bring to a boil. Turn down to a simmer and let simmer until all liquid is absorbed. (approximately 25-30 mins.)




Dinner was YUMMY!
 
Ok, Jen. Here are some other ideas:

Haunted Taco Tarts - Using pre-made pastry crust, cut out halloween shapes in pairs (2 tombstones, 2 witches, 2 ghosts, etc.). Make up some taco meat with ground meat and spices. Place a couple of tablespoons in the center of one of the pastry shapes. Top with cheese. Place the matching shape on top and using a fork, crimp edges together. At this point, you can bake them up (350 oven for about 8-10 minutes), or you can make a "paint" using egg yolk and food coloring and paint the tarts. Then bake them up.

Eyeball cookies - Dip Nilla wafer cookies in white chocolate. Before the chocolate sets up place a chocolate chip in the center for the pupil. When the chocolate dries, you can "draw" bloodshot veins on the eyes with a food coloring pen.

Ghost cookies - Dip nutter butter cookies in white chocolate and decorate with mini chocolate chips for eyes.

I'll have to look in my files for any other recipes. Lately, I've just been using recipes my family likes and giving them halloween names: guts and blood instead of spaghetti, etc.
 
Dinner tonight was Swai fillet, parmesan noodles and roasted brussel sprouts.

On to my next busy weekend in a row. Have football tomorrow night and birthday parties on both Saturday and Sunday. Also thinking of going back to the farm for more apples, broccoli, chard and beets. It will probably be the last weekend for all but the apples.
 
Well we're still very touchy, but we have the all clear for all our trips. We just left the doctor's office (well, we were starved so we got some fast Greek food.

We had set the appt up on Monday after our friend had her appt with the cardiologist, then the Doc was going to take a peek at her leg. Well last night it was clear that she had some sort of infection. The Dr. called in an antibiotic and I picked it up last night. The pain got so bad that we had to find the bottle of leftover morphine from her last knee replacement. Over night she took so much that she has been throwing up all day.

When we saw the doc today, gave her a new antibiotic, with a more broad spectrum and a prescription to help with the nausea. The Dr. gave her the OK to travel four hours up to take our friend home, but we would not have made it before midnight at the rate we were going so we postponed taking her home to Sat/Sun instead. The doc feels that she will be recovered enough by Tues to fly. I should go and clean up the wound.
