Jen - I'm glad you can use some of the halloween ideas.

Allison - I'm so glad you got the ok to travel! Just take it easy, and don't try to do everything. That's the nice thing about Disney... it's always there!

Lindsay - I'm thrilled that you no longer have to deal with Diva! There's no excuse for trying to bring someone down. Sounds like your new group is perfect for you! I have followed you on fb long enough to know that others think your singing is beautiful! I sure wish I could hear it! Good luck on the job front, too!

Dinner tonight is King Ranch chicken casserole, and broccoli quinoa casserole. We are having a family pot luck dinner tonight, and those were the 2 dishes that I had the ingredients for. The King Ranch is smelling so good!! Can't wait to dig in!

Now, does anyone have any advice for someone who is dealing with a snoring hubby? It used to be that I could ignore it, and sleep through it. I've tried earplugs, but if I use them, my ears ring all the next day. We've tried Breathe Right strips.... no good. Any other home remedies? If not, he may be moving to the guest room. I got a grand total of 2 hours of sleep last night. I'm surviving right now on sheer will and a whole lot of Diet Coke!
 
Actually we get in too late for any parks in 5 days, but in 6 days we'll be at Hogwarts and drinking butterbeer. In 7 days we will be eating and drinking our way around the world! :thumbsup2 I just hope that she feels better enough to do that.

I am soooo jealous you're going to Harry Pottah land! :worship: I need a full review on everything, especially butterbeer.

An update: rehearsal Wednesday night went really well. Said Diva was not even there so I didn't have her haunting me. The BETTER news, there were praise team auditions for new people last week and our director ended up re-doing all of the teams. I am not longer on a team with the Diva!!!!!!!!!! Praise, glory, hallelujah!!! I'm so happy! I'm filling in on a team this week and love the people on it. It turns out, I am now on that team. Lindsay is very happy! (doing the dance of joy!)

Today we are having the jambasta I made yesterday. I have to run to Chattanooga and pick up a few things for our trip. Also, I need to run by Bath and Body Works and pick up a few Wallflowers. A youtube guru I watch was saying how nice and pleasant they are so I tried one out. Every time someone walks in my house lately they have commented how warm it smells. Eureka! (I use the cinnamon one) I am very anal about my house smelling good (since I pretty much have ZERO sense of smell) so I wanted to pick up a few more.

I also need to run to MAC and pick up a few things for vacation. I don't know if I mentioned it or not, but I recently applied for a job there :)

I hope everyone is doing well this morning and people are feeling better. I'm off to go refill my coffee cup! :surfweb:

Actually I will probably get up and go to the farm tomorrow morning, just not super early, then go shopping for a gift.

The party on Sunday is at 1 in VA. It's for my youngest DN, she turned 8 yesterday.

The little witches hates are cute as are the spider cookies. Kids can decorate them without too much direction.

I want to make the decoupage lanterns with Kady. I have a lot of mason jars so my purchases are going to be minimal.

Kady is home sick. She was running a 101 fever all night. Normally her temp is 97.1 So this was high for her. The doctor wants to see her when it hits 100.5, but since it was nighttime I wanted to wait until the morning. She is now at 98.1 right now so her fever has finally broken. I knew it was broken because she told me she was bored:rotfl: Yesterday she stayed home with jeff yesterday and slept all day. So bored means she is starting to feel better :cloud9:


I am working from home today so I have to get back... Have a great day all!!!

I just got a recipe for king ranch casserole. I've never had it before! It looks good!

I'm not sure about the snoring. I wish I could help. Have you had him see his doc to be evaluated for sleep apnea or anything? What happens if you go to sleep first?

We're going to start a POTC movie marathon this weekend. I haven't seen the new one, and UncleR has never seen any of them, so we're going to hunker down and watch movies all weekend.

Dinner tonight was steaks and sauteed squash. :cloud9: Tomorrow we're having carne guisada with homemade tortillas. :yay:

Hi everyone. It's already Saturday afternoon here! Time goes fast during the weekends, doesn't it.

Nancy - Those treats are cute. I'm heading to the Halloween party organised by the American Women's Association in Melbourne. Needless to say, I'm actually stalking for pictures on the Scav Hunt....but it is for a good cause. Proceeds raised by the AWA go towards the Royal Children's Hospital. I wish I could make some of those...but we've been asked to bring individually WRAPPED candy to hand out for the kids. :sad2:

Janice - Happy Birthday! I hope the cooking isn't going to be too onerous or time intensive so that you get to enjoy your birthday!

Marisa - Glad that Kady's temperature has broken and that she's feeling better. But that would have been scary to have it running that high.

Becky - nice looking bacon (and peas and pasta). How was dinner with Laura and the kids?

Aimee - Glad that you and the vet managed to figure out Winston's problem quickly. We have lots of animals in Melbourne with allergies. Spring is not a good time for hayfever sufferers as there is just so much pollen in the air. Its not good for the animals too. One of my cats sneeze a lot but aside from that, there are no other symptoms.

Glynis - my DH doesn't snore. But my dad and both my brothers snore....a lot....and loud! :rolleyes: (Might run in the family....because DH thinks I snore a little; usually pushing me over on to my side works...according to him).
I sympathise. Even though my brothers and father slept in different rooms, I could hear them all down the hallway with 3 doors closed between me and them. Is there a sleep clinic near you? One of my brothers went to a sleep/snore clinic because his partner had the same issue. Turns out he was suffering from sleep apnoe as well, which was contributing to the snoring. I think they managed to help him some with the snoring. If not, I reckon the guest bedroom might be your only alternative.

Jen - Enjoy the PoTC marathon. Say hello to UncleRemus for me.


WFDT? I think I might cook some rice and serve it with stir fry beans/vegies and make some sweet and sour shrimp. I've pulled the shrimp out of the freezer and it should thaw out by the time dinner comes round.
 
Buttermilk Pancakes and Apple Cinnamon


I had the buttermilk leftover from cooking up the Apple Cider donuts and needed to finish it up before the use-by date.

So I made some pancakes for DS' afternoon snack yesterday.



For the pancake mix:

  • Self raising flour, 1 cup
  • Buttermilk, 1 cup
  • Egg, 1
  • Oil, 1 tablespoon
  • Salt, a pinch
  • Oil for cooking


Mix all the ingredients together until smooth. You should end up with a batter the consistency of thick cream. If the mix is a little too thick, add some milk to thin it out.


Heat a pan on a low/medium flame. Add a little oil to the pan and place a little batter in to the pan. Cook for 1 - 2 minutes, or until bubbles appear on the surface. Turn over and cook the other side for another minute.


Remove the pancake from the pan and continue cooking until all the mix has been used up.

For the Apple Cinnamon:

  • Apples, 3 - peeled, cored and cut into chunks
  • Sugar, 3 tablespoon - I used brown sugar this time, instead of white
  • Cinnamon, 1 teaspoon
  • Vanilla, 1 teaspoon
  • Water, 1/4 cup


Place the apples and water in a pan.

Add the sugar and cook on high heat for about 5 - 7 minutes, stirring all the time.

Add the cinnamon to the pan.

Continue to cook until the sauce has reduced to a sticky consistency. This should take another 5 minutes.

Serve the apples on the pancakes and drizzle a little of the sugar sauce over.

You can, of course, choose to serve this with cream or ice cream on the side, if you like.

Glynis - Get him to a sleep Doctor, he probably has sleep apnea. There are oral devices that can be an alternative to using a CPAP.

She's spent the whole day in bed resting, there is a small amount of improvement on the leg, but as I said we'll need a miracle to make this right. I need to start investigating refund policies. At least if we don't go, I'll know two days before the Disney portion of the trip, so I can cancel the DVC reservation and not lose the points, they will just go into holding.

I'll have to use them by September of next year. I'm sure I could find a use for them. They can only be booked 60 days in advance, but I would just put in for a bunch of nights at the Grand Californian.

We have a trip in February where we booked a one bedroom, I could try for a two bedroom, that would eat up some of the points, we could also see about going back to WDW at another time.

However, I really wanted to go to F&W. :sad2: She's not ready to cancel yet, and is willing to see if it will work out, but I'm going to start preparing for disappointment. I don't want to spend this trip in the hospital and we've done that before.

Home from the game. They won which was pretty much expected but it was a nailbiter. Tout of my Crocs hey were down so many players due to injury and only had about 22 players. :scared1:

My godson was on FIRE! His name was announced about 10 times for tackling. And there were lots of times he was in on tackles but not the main player in them.

We "discovered" Hot Hands tonight. They're kind of like an ice pack but hot. I forgot to change from my Crocs to my tennis shoes and my poor feet were freezing! I put the HH in them and my toes were nice and toasty.:cloud9:

Yesterday turned out to be an adventure. Amanda (my SIL) texted me yesterday asking what I was up to. I told her I was going to Chattanooga and asked her if she wanted to go with me. (she drives me nuts sometimes; she will hint that she wants to do something but not come right out and say so. I have to do it, ugh) So the two of us and the kids went shopping. I hadn't seen them in forever (sigh) and I couldn't keep Ryan (age 5) off of me. It was so sweet.

The thing that makes me want to strangle Amanda is that Chloe has been sick with a sinus infection, and had JUST come from the pediatrician. It was obvious the poor little puss didn't feel good and Amanda really should have taken her home. Anyway, I digress. Poor little thing had watery, crusty eyes and was so snotty. It was pitiful. I felt so bad though. I have to sing tomorrow so I snuck off and washed my hands as much as possible. Between singing and my upcoming WDW trip, I cannot get sick!

Today we are going out. Not sure where yet. I hope everyone has a great day!

ETA again: I wonder if you guys could help me. When I update the index, it is coded like crazy and it makes it very difficult to do. That's why some things are bigger fonts than others and the spacing is off. Once, I went to edit and it looked exactly like it does on the OP, no coding at all and it was so much easier. I haven't been able to get it to do that again. Do you guys have any idea? I want the index to look nice and this is making me nuts! Help!
 
Hi Lindsay. Hope that you're having a good morning and remain germ-free between now, your performance and your trip.

Regarding the index - the key to making it look nice is to be able to understand the "BB codes". I certainly don't want to tell you anything you already know but BB codes are written in two parts; using the open and closed square bracket so that the forum knows that it is a code.

So for making things bold, you have a "{b]whatever text you want to bold[/b}".
I've used the curly brackets at the start and the end to show you how it would look as the two part. The first part is the "b" for bold; and the second part has the "/b" to indicate that this is where to end the bolding.

For italics, you would use "i" and "/i".
For underlines, you would use "u" and "/u".

You will also note other items such as "url", "quote" etc which is used for BB Code language (for want of a better term). There is quite a list of BB Codes if you google and look for them. I believe that the webmasters can control which codes are allowable on a particular forum and which ones are not...so if you do google, you'll find a whole host of things that don't seem to be valid on the Dis.
There is a box right at the bottom of every dispage...if you scroll all the way down that has Posting Rules. In this box, there will be BB Codes and it will be underlined. If you click on this, it will take you to a new page and all the allowable Dis BB codes will be displayed.

On to the index. I've taken a quick look and there are a number of doubled up Bold codes dotted through the sections. I've attempted to clean it up and have copied my edits here. Sadly I don't think that you'll be able to just copy my edits. :headache:

You will need to go through it and look for the matching pairs. If all else fails, just delete all the BB codes EXCEPT for the URL ones and start over.

ETA: I should have also pointed out that the "size" and "color" BB codes also need to be cleaned up as well. I know there are a number in the wrong location, which is why you're getting the inconsistent sizes. Just look for the matching pairs.

Next time I have to make sure to open them earlier. They were warm but by the time I got home last night they were really warm. I had dropped them in the front of my camera bag and the whole front of the bag was warm.

So, I told y'all that we got a McDonald's in town and it opened this week. We took J and Big C to lunch there today. Before we moved to this little town, J and I used to go out to eat a lot. Since we've moved here and there's such limited options, we've gotten away from doing that. Plus, I love cooking for my family. Well, J acted like he'd won the lottery because he got McD's for lunch. :lmao:

I came home and started my carne guisada stewing. I'll be making homemade tortillas to accompany it. It smells delicious. I'll post pics and recipes later!

Well I may not be going to Florida. Unless we have a miracle there's no way I can make her get on a plane. She's spent the whole day in bed resting, there is a small amount of improvement on the leg, but as I said we'll need a miracle to make this right. I need to start investigating refund policies. At least if we don't go, I'll know two days before the Disney portion of the trip, so I can cancel the DVC reservation and not lose the points, they will just go into holding.

We'll lose the money for our US/IOA part of the trip and hopefully we can reuse the plane tickets. :faint: I need a miracle. :sad2:

And WFD? No idea! We need to have it soon though, so I beter figure it out.

Oh no... I'm so sorry y'all are having to make this decision. Surely you can get airline credit due to illness? I would bet you could get refunds on US/IOA, too... maybe? I'm sorry :hug:

Home from the game. They won which was pretty much expected but it was a nailbiter. Tout of my Crocs hey were down so many players due to injury and only had about 22 players. :scared1:

My godson was on FIRE! His name was announced about 10 times for tackling. And there were lots of times he was in on tackles but not the main player in them.

Dinner is out with our neighbors. I was at teh nutritionist and plan on getting back on my diet so I have been having my last supper all week long
 
I'll have to use them by September of next year. I'm sure I could find a use for them. They can only be booked 60 days in advance, but I would just put in for a bunch of nights at the Grand Californian.

We have a trip in February where we booked a one bedroom, I could try for a two bedroom, that would eat up some of the points, we could also see about going back to WDW at another time.

However, I really wanted to go to F&W. :sad2: She's not ready to cancel yet, and is willing to see if it will work out, but I'm going to start preparing for disappointment. I don't want to spend this trip in the hospital and we've done that before.

Vegetables and Ground Bean paste


This is a side that I serve when having rice. The ground bean paste has a different taste to the standard oyster/soy sauce combination.


My starting ingredients:

  • Round beans, 1 lb – cut into 3 cm lengths
  • Asparagus, 1 bunch – cut into 3 cm lengths
  • Ground Bean Paste, 1 teaspoon – on the generous side
  • Soya sauce, 2 tablespoon – definitely generous.
  • Garlic, 1 teaspoon – minced
  • Ginger, 1 teaspoon – minced
  • Pepper, to taste
  • Oil, for cooking

Heat the oil in a wok or a frying pan. Add the garlic and ginger and toss for about 30 seconds.

Add the beans and the ground bean paste to the wok. Quickly toss on high heat for about 2 – 3 minutes. You want to fry the ground bean paste to release the flavours and ensure that the paste tastes less ‘bean-y’.

Add the asparagus to the wok and toss for another minute. I prefer my vegetables ‘al dente’ so if you prefer yours a little softer, toss for another minute.

Add the soya sauce to the wok and season with pepper to taste. Cover and allow to cook for another minute, ensuring that the vegetables are well coated.

Wom bok and fish ball stir fry

This side is another dish straight from my Asian nursery food days! I always have wom bok vegetable in my fridge. This one had been there for about 10 days and I decided to cook it up before it could got to the stage where I wouldn’t be able to salvage it.


My starting ingredients:

  • Wombok, ½ bunch or about 15 leaves – cut into chunks with the stem separated from the leafy bits
  • Fish balls, 1 packet
  • Soya sauce, 2 tablespoon – generous
  • Oyster sauce, 1 tablespoon – generous
  • Garlic, 1 teaspoon – minced
  • Ginger, 1 teaspoon – minced
  • Oil, 1 tablespoon for cooking
  • Pepper, to taste

NOTE: I’ve included my spoon size in the picture…it is the Asian kind and I think it is equivalent to about 2 tablespoons using a western measure. I’m pretty liberal with the sauces; providing I stick to a 2:1 ratio for soya : oyster. But a note of caution….it is possible to ‘oversauce’ the vegetables and then you’ll end up with an overly salty dish.



Heat the oil in a wok on medium/high heat. Add the ginger and garlic and toss for about 30 seconds.

This vegetable does shrink significantly; so you have to make sure you don’t overcook it.

….followed by the sauce. Toss quickly and cover the wok. Cook for another 1 – 2 minutes.
