The What's For Dinner Thread - November '09(recipe index in OP)

Hey y'all,

My headache went away right before bedtime, but has come back again. I'm skipping PT, because the coffee has not removed the fog in my head.

Glynis, I think I'll try diet coke next! ;) I can't take any meds today, cause I'm having a neck injection tomorrow. :headache:

Becky, Please share that new method of cooking polenta! That polenta & ragout looks delicous!

Laura, I really did get a lot accomplished yesterday! I just didn't realize how much it was. With the chairs & extra tables, the up & down on the ladder, I was pooped!

I have chicken thighs in the fridge & haven't decided what I'm going to do with them. I was thinking gumbo, but that's too ambitious for today. I would rather get the tree down.

Our weather people obviously goofed. It was 32 getting DH & A off to work & school. It's 46 now, so I don't think we'll be seeing 60. I think we are supposed to get a hard freeze again tonight.

It's a chilly day here, but nice and sunny. It's supposed to get into the 40's on friday and I'm really looking foward to it. I love the snow, but I would like some of it to melt.

Ann- I can't help you with the chicken. I just flatten it out, put a piece of ham and swiss in, roll it up then cook it. Hope yours comes out good.

Glynis- Nice job on the test! I'm sure it's lots of detailed stuff that as you do it it will become second nature.

Becky- If you go to BJ's they have had the best grapefruits. Eight for five dollars, I've been having half of one everyday and they are so good this year. I also love their organic baby greens, huge container for five dollars.

Lori- The eggs were really easy. I used a third of a pack of frozen spinach, 2 ounces mushrooms, a garlic clove. Put it on the parchment with two eggs, seal it up. Bake at 400 for 6-9 minutes. I did 8, but the next time I will do the full nine. It's from this months martha stewart everyday food.

Off to do a few things before the kiddo gets home from school. The peanut gallery will be happy tonight, burritos for dinner.

The meeting with the bank yesterday went well. Hopefully, we will be able to close in about a month. Then if the permitting process doesn't take too long, we should be breaking ground by the first part of March. Keep your fingers crossed please ladies.

Tonight's dinner is swedish meatballs and egg noodles. Mom is making brownies for dessert.

I have a question. If Rick gets me cookbook software would you be interested in a hardcopy booklet of our recipes? He was going to get me a Kindle for Christmas but I think I'd rather have a Demy or some good cookbook/sorting/filing software. Just wondering.

Polenta

1 cup medium grind cornmeal
4 cups water
1 tsp. salt
2 tbsp. butter
1/3 cup freshly grated parmesean cheese


Bring the water to a boil in a heavy bottom saucepan with high sides. Reduce heat to medium, add the salt, and add the cornmeal in a thin stream, whisking constantly to prevent lumps. Only put in a little cornmeal at a time--it should take about one full minute to add it all. Continue whisking, and bring back to a boil. Stir for two minutes to thicken the polenta a bit, then reduce the heat to low, cover, and cook. Open the lid and stir thoroughly every ten minutes. Total cooking time will be 40 minutes or so. Once the polenta is ready (taste it: the cornmeal will taste cooked and will have a tender texture), stir in the butter and the cheese.

That's it!

Today is another busy Wednesday. I'll be here late but I have leftovers from lunch and a TV dinner I can choose from. DH will eat leftover salmon from last night.

I think you should get both. I LOVE love love my Kindle. But I also think the software would be great. So there ya have it - my vote is for both.

Glynis ~ I guess I will stop complaining of having to pay $10 for my library card. I have protested for a year. I live out of town, so I have to pay to get a card, that if I lived in town would be free. I just don't think it is fair. But I will stop now and just go pay it.

Vicki ~ Did you ever get my Christmas card? I still haven't recieved yours either. The USPS stinks - just checking!!

Laura ~ I am so proud of Caili. Way to go - the video was beautiful, I cried.

It is suppose to get up to 50 today. YEP that isn't a typo - you read it right 50 DEGREES. I will promise, you we will see someone today in shorts.

Tonight is date night so we will grab something at our favorite cafe. No matter that we just got back off of vacation - remember we DON'T mess with date night.

However, we do not even have the new place yet and I must reclaim the patio ALREADY! Someone seems to think we need a 2 person hot tub on it....apparently the one by the main pool is too far away........:headache:

(although if the patio was bigger I may not mind this thought as much....:rolleyes1):lmao:

I've been working on my coding class and it's become really frustrating. They gave an email address to use for questions on the textbook, workbooks, lectures, etc. I've had to use it 4 times now, and each time I have to wait between 24 and 48 hours to get an answer to my question, and sometimes I don't even get the answer! Grrr!!!

Anyway, I just took a test, and ended up with 92 percent. Hopefully, it's sinking into the gray matter, because I couldn't tell you what it was about!


O am sorry thtat you are getting frustrated, that time frame for an answer really is not acceptable. I know that you are absorbing the material though so keep your chin up!

Dinner is out of the fridge. I cleaned all day but finally have everything back to normal. I also glazed my floor in the bedroom so all of the floors have been done. We had a late lunch so Buddy is not at all hungry. We had a nice late afternoon. Nola got a little "quad" for Christmas so she was all bundled up adn cruisin down the street to show us. SHe was too darn cute in her little pink quad toodling down.

Well, it is cold out but we are warming up in front of the fire with some brandy. Beats dinner any day!

I was JUST thinking about something like this this morning while stuck in traffic! I remember just about every church in town had a cookbook that was a compilation of the members' favorite recipes. I was thinking we ought to do this! It crossed my mind that they are saved on these threads, but if they ever clean out the archives, we're in trouble!

It is ground beef with a slice of broken up bread, chopped onion, I think an egg and Worchestershire sauce mixed in. Then it is fried and she adds canned brown gravy to it. And I do not like it, never have, and any time she makes it she offers it to me! :headache:

She ended up making a taco bake kit from Old El Paso.

That cookbook sounds good. I just got a copy of one that I submitted recipes to, years ago, at work. It was a fundraiser and I never heard anything about it after we submitted the recipes and didn't know we had gotten them until someone came around getting rid of them after she cleaned her office.
