Wendie, I didn't accomplish as much as I had hoped. I did get almost all of the Christmas stuff put away. Extra table & chairs put away & all of the large dishes, plus most of the decorations. Just have the tree left.

I was hoping to attempt popovers tonight, but got a rotten headache this evening. We just had the soup.

Morning, all!

Dinner last night was really yummy!

I marinated chicken thighs in the zest of 1 orange, 1 lime, 1 lemon, the juice of the orange, 1 clove minced garlic and 3 tablespoons olive oil. Marinated it for about 30 minutes. Then I pan fried the chicken until it was done (it would be really good on the grill, but it was too cold to stand outside!). While it grilled, I made a simple vinaigrette from the juice of the lime and lemon, 3 tablespoons olive oil and salt and pepper. When the chicken was done, I cut it into slices, heaped it onto a salad, topped it all off with toasted almonds and feta cheese, and drizzled the vinaigrette over it.

This was a Rachael Ray recipe, and it was a keeper. The vinaigrette was a little overpowering on the salad, so next time I won't use as much. It was a really filling dinner, though!

I have no clue about tonight's dinner. It depends on what time Katie and I get out of the dentist, and if I can get over this headache. I'm thinking I might make the pork chops I was going to make on Monday, but never did. We'll see. I'll update y'all later!

Oh sure! Rub it in! We are looking forward to Friday so we can see 40. It has been nice during the day but the temp drops like a rock once the sun goes down.

We were going to visit a friend of Buddy who opened his own Italian restaurant but I really want to get the rest of my cleaning done and catch up on my laundry so I will probably cook dinner instead. I feel much better when I have everything the way I like it but I really am going to have to work on my time management and my organzation. I cannot believe that I still am cleaning like I never cleaned before!

Ii think I want chicken legs and mashed potatoes. My Mom used to just roast them with S&P and garlic powder. I do the same thing when I am feeling a little nostalgic. It's funny, Welby had them here one night adn she has said that they don't like dark meat on a chicken. She called the other day and asked how I cooked them and she and her DH were alswo taken back to their childhoods. Their Mom's did the same thing and they both had said they would never eat them again. Funny how that changes and the foods you did nto want anymore become your own comfort foods

Yikes I am running so late this morning...just could't get my butt moving...I should be at the gym right now. I still have to get dressed go tan and then get there. Sigh...but at least I am going...right?!!?

Nancy--Every once in awhile I have to make drumsticks like my mom used to....I don't really care for dark meat, but once in awhile I will make them. She used to make a sauce out of Ketchup,Lemon Juice and some melted Butter and brush it over them then broil them.....I think it wash her sauce I miss more...hmmm I never thought to try it on breasts...
I always thought this was such a fancy way to prepare chicken, never giving it much thought that drumsticks were inexpensive never mind the sauce, lol. Hmmmm thanks for the memory:)...I am really missing my mom this week...next week will be 2yrs.

Janice I hear ya on the temps...we will have the mid to high 20's for Friday!! We are in the teens today and tomorrow.

Lauren--Any of the pm meds make me feel loopy the next day, but sometimes I have no choice if I want to get some sleep.

Ok....I will bbl I have to get to the gym.

supper will be ....ummm determined later today as I have not taken anything out yet or thought of anything, lol.

Sheryl and Glynis -- I hope your heads are feeling better. Sheryl, I think getting all the Christmas stuff put away is accomplishing a lot. I know I was pretty sore and tired the day after I did that.

Wendie -- :hug: Hopefully, a good workout will brighten your mood a little.

Janice -- Yesterday at the bus stop it was in the low 30s and we were all saying how beautiful the weather was. We even hung around and chatted for a while instead of rushing back indoors.

Here is dinner last night. I made a salad of arugula with pistachios, aged gouda, apples, cranberries, and bacon with a maple mustard dressing. It was good:

Howdy ya'll! Sorry it's been so long for posting, but I have been keeping up!;)

We filled out our apps for the place in FL. If all goes right we should be picking up keys on Jan 23 or 24. I'm excited, but trying to reign it in a bit. I have to be on the road for 3 weeks in Feb so the move may not totally happen till March. Rick's overplanning everything which annoys me to no end.

But the plus side- I should be able to see Wishes from the patio.:rolleyes1


I already have the guest room booked for one weekend of F&WF! And depending on when we all get together this year, hoping to put a WFDer in for another!:thumbsup2


I hope everyone is feeling better and warm!

Dinner last night came out really tasty. I tried a new method to make polenta and it was the creamiest I have ever made. Of course, despite much scrubbing, there is still polenta sticking to the bottom of my cooking pot! I need to get a non-stick pan to make polenta in from now on. Here is a picture:

WFD: I had planned to make the featured dinner from this month's Martha Stewart magazine--croque monsieurs, new potato-frisee salad, and roasted pears and red onions, but John said that he might want to go to BJs after work and do our four times a year stock up. YUCK. If we end up doing that I am probably not going to be cooking much of anything!

Hi Lori! Sounds like things are moving along with the apartment. That's great. The dressing is homemade, it is a Barefoot Contessa recipe. I used lemon instead of orange because I did not have any oranges. Here you go!

Maple-Orange Dressing

3 tablespoons apple cider vinegar
1 teaspoon grated orange zest
2 tablespoons freshly squeezed orange juice
2 1/2 teaspoons Dijon mustard
2 tablespoons pure maple syrup
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
2/3 cup olive oil

Combine everything and whisk together until it emulsifies. Makes enough for six salads.

We're in a rut and I thought "new place, new recipes" might be a good shock to the system for us. I plan on alot of patio dining so these lighter things would be great.


However, we do not even have the new place yet and I must reclaim the patio ALREADY! Someone seems to think we need a 2 person hot tub on it....apparently the one by the main pool is too far away........:headache:

(although if the patio was bigger I may not mind this thought as much....:rolleyes1):lmao:

The recipe actually called for breasts. I picked up thighs at the store since they were 3 dollars a package as compared to 6 dollars a package for breasts. I think it would be even better on white meat.

Sorry, Ann. I don't have a recipe like that. Have you checked All Recipes online? Sometimes I find just the recipe I've been looking for there.
 
Well, one diet coke later and my headache is gone. Think I'm addicted???? You betcha! I'll freely admit it. Of course, I only allow myself one a day, so I'm not too bad, right??? I'll just keep telling myself that.

I've been working on my coding class and it's become really frustrating. They gave an email address to use for questions on the textbook, workbooks, lectures, etc. I've had to use it 4 times now, and each time I have to wait between 24 and 48 hours to get an answer to my question, and sometimes I don't even get the answer! Grrr!!!

Anyway, I just took a test, and ended up with 92 percent. Hopefully, it's sinking into the gray matter, because I couldn't tell you what it was about!
