The What's For Dinner Thread - November '09(recipe index in OP)

Lauren just called me with some awful news. Her Mom passed away unexpectedly. No details yet as Lauren is still in Pittsburgh. My poor friend sounded like she was in shock, please keep her in your prayers.

I just spoke to Kathy, I was so dumbfounded when I read this.

Friends, we all need to pull together in prayer & good thoughts for our good friend Lauren. This is just beyond sad.

I used the PW's recipe for sesame noodles, with soba noodles. The only change I made was adding some canned straw mushrooms to it. (I marinated the mushrooms in the sauce for just a bit.) I did the slaw with ginger dressing.

I swear 2010 stinks so far!

I have a headache that just won't go away today, I think it's the weather. So far we have about 4 inches of snow on the ground! :sad2: Good thing I didn't get up this morning and go in to work like I was going to. :scared: Supposed to be in the 40's tomorrow, I sure hope they aren't wrong about that I need to get out and get a lot of stuff done.

DM is making dinner tonight, leftover meatloaf in gravy with roasted potatoes.
 
I had to read this twice, for a moment I thought do I know another Lauren. How very sad for Lauren. As shocked as I am I just can not imagine what Lauren and her family are feeling.

I did my grocery shopping today. DH decided he wanted me to bring home a brickoven pizza from Dave's Market. It had pepperoni, mushrooms and artichokes. (only on my pieces) I picked up a brownies for DH and some grapenut pudding for DD & I to share.
 
Just walked in from the airport & I can't believe the news.
My heart is aching for Lauren.

Kat, do you know when Lauren is returning to home?
 
Okay, I made this for dinner and we both really liked it but the NOLA friends may say it's a bad recipe... I don't know... it's from Southern Living this month.

Easy Chicken Gumbo
Makes 6 servings

1/2 cup peanut oil
1/2 cup all purpose flour
1 cup chopped sweet onion
1 cup chopped green bell pepper
1 cup chopped celery
1.5 to 3 tsp cajun seasoning
2 tsp minced garlic
3 14 oz cans of chicken broth
1/2 lb andouille sausage, cut into 1/4 in thick slices
4 cups chopped cooked chicken
okra pilau (see below)

1. heat oil in large dutch oven over med high heat. gradually whisk in flour and cook, whisking constantly, 5 minutes or until chocolate colored.

2. reduce heat to medium. stir in onion and next 4 ingredients. cook stirring constantly 3 minutes. gradually stir in chicken broth and sausage. increase heat to med high and bring to a boil. reduce heat to low and simmer, stirring occasionally, for 20 minutes.

3. meanwhile, prepare okra pilau. stir chicken into gumbo; cook 5 minutes. serve with okra pilau.

Okra Pilau
3 bacon slices
1 large sweet onion, chopped
1 16-oz package frozen sliced okra, thawed
2 (8.5 oz) packages ready to serve cajun style rice

1. Cook bacon in large skillet over med-high heat 5-7 minutes or until crisp. Reserve 2 tbsp drippings in skillet. Crumble bacon.

2. saute onion and okra in hot drippings over med-high heat 6-8 minutes or until tender.

3. prepare rice according to package. Stir rice and bacon into okra mixture in skillet.

Joanne - What a scary drive! I hate driving in snow. On snowy days, here, I just hunker down at home. I can drive in snow... I just really hate it.

Maria - Are you home now? Will you be going back to Chicago? How's the tooth doing?

Well, I thought we were out of the woods, as Friday came and went without anyone new getting sick. Then, yesterday morning, Leslie began running a temperature again. She spent most of the day sleeping, very lethargic. At about 2:30 this morning, Mary came into my room, woke me up and informed me that Leslie was crying. I went to their room, and Leslie was burning up! Her eyes were glassy, and her cheeks were bright red. Poor little thing! She told me that her ear hurt. I gave her some of the ear drops the doctor prescribed for Mary, and a dose of Mary's antibiotic. Some Tylenol for the fever/pain, and then we all tried to go back to sleep. Within a half an hour, though, she was in our bed, still burning up. I got a cool washcloth for her forehead, and turned our ceiling fan on. She finally dropped back to sleep at about 3:30. Of course, I couldn't sleep at all, so tossed and turned, listening to Alan snore, and Leslie whimper in her sleep. Finally at 6:00 I got up for the day. Hopefully, I'll be able to sneak a nap in later today.

I'd like to try to hold off on taking Leslie to the doctor until Monday morning, as the ER co-pay is ridiculous! Since Mary and Leslie are exactly the same weight, they can share a prescription, until I can get the doctor to write another one. He's very understanding about this kind of stuff with the twins.

On the up side, Timothy is getting so much better every minute! He hasn't had to go to the hospital since Thursday! His eyes are clear, no fever, and you can't hear his breath rattle in his lungs anymore. Of course, all the medications have given him a pretty case of diaper rash, but that's easily handled! Desitin is my friend!!!

Katie's play was so cute! I was so proud of her. She looked so grown up on the stage, that I almost cried when I saw her. What happened to my baby???

Today will be a day that I stay home! I'm sending Alan to church with Katie and Jacob, but the twins, Timothy and I will stay home! The doctor doesn't want Timothy out and about until Thursday at the earliest, so we will just make ourselves comfortable here.

I'm making my yummy pot roast with carrots, onions, and potatoes. We'll have a jell-o salad to go along with that. Biscuits, if I get inspired later! For dessert, I picked up a Reese's Peanut Butter Bar kit on sale at the store. I'm going to make them in muffin cups and we'll eat those while we watch a movie together tonight. Not sure what we'll be watching. We still have The Sword in the Stone, and The Tale of Despereaux that we got from Christmas and haven't opened. I'm thinking it will be one of those, since we've watched live action movies the last 2 weeks. We'll see what the kids want to watch.

Lauren -- I am so very sorry for your loss. I too was shocked to read that sad, sad news. :hug: You and your family are in my thoughts and prayers.

Glynis -- I'm sorry Leslie is sick now. You just can't catch a break. I hope you can make her comfortable enough to get through the weekend and go to the doctor tomorrow.

The kids and I are having the usual Sunday linner with my family. We are having stuffies and cod pomodoro.

I'm annoyed at myself that I didn't get up until 9....again 2 and a half hours later than I was planning to. :headache:

I am meeting someone today to paint pottery. Her husband is getting deployed soon; he is still in the states for training but will be gone until about the end of February. When I called her yesterday, she said she could sleep all day on the weekends because she "has no reason to get up." :sad2: So, we are going painting! It should be fun. :thumbsup2

Glynis - I hope this is the last of the illness in your house. I think you've had your quota for the winter!

Aimee - That gumbo recipe looks really good! I'm going to try that okra recipe. We love okra and any new way to use it is a welcome addition to my files.
