The What's for Dinner Thread- June 2012 (recipe index in OP)

WOW - sounds amazing. Then you topped it all off with chocolate and ice cream. YUM!!....

...yup....the ice cream was from Friday, when my mom and I visited a couple of wineries. We passed an ice cream creamery that makes home-made ice cream, using the cream from a local dairy farm that is less than a mile away...I'm not so much an ice cream aficionado, but their ice cream is TO DIE FOR!!!
 
Ethan's team won again last night. It was close though, they were down by 3 going into the last inning but the boys got those bats swinging and ended up wining 4-3. They were so excited - so were the parents and Poppys & Nannys. :cool1:

I am working out in my boarders this weekend. We have placed the "curb it" around the house and then we placed fabric and white rocks down. It is so pretty but I have one spot by the front door that has lots of weeds. I always put Round up on it but this weekend I am going to redo it. Take all the rock out, treat it and put new fiber down. It has to help. It just looks really bad the way it is.

Lilly is coming to spend the night tomorrow. Stephanie bought a golf and stay package for Marty for Father's Day. They will be back early on Sunday afternoon and then we are all (Elizabeth and the boys to - Jay is at Guards) going to the Country Club. Should be a fun time.

Happy Fathers to all of the Father's out there. You make such a difference in our lives. Thanks!!

David loves Tuna Salad stuffed tomatoes!

Last night David had steak, sweet potato, with Cauliflower roasted and covered in "Cheese Sauce" It is made with cauliflower, no cheese or milk, vegan style.

Tonight is Stir Fry, Fried Rice and egg drop for David...

Thursday was the first night soent in the house. And they still havent worked out our wonky refrigerator. The coolest ive seen it is 46 degrees. All our dairy and meat is in one of those mini fridges. The only thing in the big fridge is wine, soda, mustard and tortillas.

We still dont have half our clothes over here. I just brought the everyday silverware yesterday. We've been eating off the fancy Mickey silverware. Ill be back with pictures from the first dinner I Cooked us here.

Tuesday night and DH made a brilliant lentil dish tonight. He used some of that curry powder we bought and added it to the lentils. It was really good. So, I ate a big bowl of that instead of the baked potato.

We had a weekend filled with chores. Aside from the cleaning and washing, I ended up heading out in the garden and doing a bit of weeding. Why is it only the weeds grow and not the plants? :rotfl:

This week is going by so slowly for me. I've got a sore throat and I can't afford to let work slip this week. Is it the weekend yet?
 
Thanks for the thoughts and PM's everyone (even those of you that never post). We are in the middle of the state - Lexington. A lot of times on the news they talk about North Platte, we are about 55 miles to the East of there right on interstate 80.

My poor state has been hit so hard this year!! The tornadoes yesterday hit in the NE corner and were just devastating. The town of Pilger (population around 300) is no longer. There is nothing, well except the water tower, standing and 2 lives were lost. Just heart breaking. We (meaning me) are under the gun again today. As I have said before I HATE this time of year. It seems that most times they hit at night and being in the country we don't hear the sirens and I can't see the sky. We do have a cellar (it is SO icky down there) that we will go to if we have time. Thanks again for everyone concern.

Kimmar ~ That ice cream sounds just heavenly. Last year for my birthday my FIL gave me money and I bought the new Cuisinart Ice Cream maker. I LOVE it and it is so easy and fast.

Alison ~ that would be so frustrating about the walk in refrigerator. I know when you and Fran were looking at this house that was a big selling point. Hopefully the get it right real soon. How are the kitties today?

Brandi ~ As usual dinner sounds great. You have this new/old diet down lady.

PIO ~ feel better. If you are like me - you don't have time for this.

Ethan won his game last night. I just can't believe how good these 9 year olds are. Just amazes me. We have a make up game tonight, so I will be on my bleacher seat again. Oh the joys of summer - I love it.

So here's the first meal that I cooked in our new house. First tomatoes from our garden.



I made some Caprese Salads and drizzled them with Balsamic Vinegar and Extra Virgin Olive Oil.



And we had grilled cheese sandwiches and salads for our first meal.



Our first meal at home was a success!

More terrible tornadoes (3 in all) last night. Coldridge (a small town, about 50 miles to the west of Pilger (the town destroyed the night before) was destroyed last night and 15 farm steads. We have a group of men leaving this morning from the church with trailers and semis going up to try to gather the livestock. Most of the cows are beef cattle (so very big) and they are just roaming around. They are warning everyone to be very careful. If you hit one it's like hitting a brick wall. We are told to be very careful again today and tonight. OH JOY!!!

Ethan won his game again last night. They will start tournament play next week. :cool1:

Lilly's Daycare is closed the rest of the week so Doug has taken off of work and he is watching her. He is so excited!! For our Anniversary I gave him tickets to the Buffalo Bill Rodeo (Nebraskaland Days celebration) for the next 4 nights. We are taking her with us tonight. We shall see how she does. This could be a lot of fun or a complete mess. I'll let you know.

Morning everyone...

We had Chickpeas mixed with Garlic Chili Paste, a mixed salad of Musclin greens, tomatoes, onions, cucumbers, tomatoes, carrots, snow peas, and it was very yummy... David added a piece of grilled chicken and desert was strawberries.
