The What's for Dinner Thread- June 2012 (recipe index in OP)

I came home and made minestrone soup in the end. We stopped by the grocery store and bought the pre-cut soup mix; and when I got home, I fried it up, added a tin of tomato, stock and cannelloni beans and simmered it for 20 minutes. We got a crusty baguette and some olive bread to eat the soup with.

Sounds wonderful!

Brandi ~ Yes Doug is a keeper and he always knows when something is wrong. Even when I try SO hard to not let it show. I guess after this many years we just know.

Alison ~ I sure hope you start feeling better. Your put together dinner sounds really good - just what the Dr. ordered. Soup heals everything!

PIO ~ Never a doubt in my mind that you won't survive Mum being gone. Good for them for taking holiday. Hong Kong is one place I have always wanted to see. Maybe someday.

We are in for a heat wave today. Suppose to get to 80 (I'd put the degree mark up, but I don't know how) today. That is just way to hot already but then it's to go back down in the high 60's low 70's which is normal for us for this time of year. I didn't even wear a coat this morning. I did notice that the yards are greening up. It's nice to see some green.

Tonight is our last Lenten Dinner and service (the kids are in charge tonight - I can't wait - so cute). We always have a 9x13 potluck on the last night. I am bringing a baked spaghetti and a loaded green salad.

I'm not going bonkers.....but then I get to watch it over and over and over again. Of course, I am a GOOD girl too.

Yup. I think a solo trip to the movies might be in order.
 
We are having a great week at the music program. But I have been coming home pretty tired and brain dead. Lots of takeaway dinners this week.

I'm sorry Kimmar, but I don't get the clip. There's a guy taking off his shirt and he has tattoos. Are we supposed to like this? I'm sorry perhaps it's not a lesbian thing. :confused3 Normally I actually like attractive men since I have a low score on the lesbian scale (ie Kurt Russell, he was cute!) but tacky tattooed guys, I'm not impressed.

Now Nathan Fillion he's nice! :love:

Wednesday was our last Lenten Dinner and yesterday was the last Lenten Luncheon. I got statements and the Easter letter out yesterday. Took me all day and I even had 2 volunteers helping. Sometimes it is just easier to do it yourself - :razz:. They were totally clueless - no help at all. We have a funeral on Monday ... ugg. That is something we sure didn't need during Holy Week.

Doug has two concerts over the weekend with a practice tonight at 7 and then Palm Sunday services with the bells on Sunday. Stephanie has asked me to come to Kearney for the Spring Craft sale tomorrow so Doug and I will go early and then at 1pm we have appointments to get our hair cut. Was suppose to be last Friday but she had an emergency so rescheduled.

WFDT ~ Annual Fish Fry at the Legion Hall. Alaskan Pollock, potatoes and coleslaw - so not on my diet so I will have to be very careful. But friends really want us to go.

Alison - I'm still waiting for pictures of Kurt Russell; or at least tell us you did/didn't get to meet him!!

Ellen - I hope your weekend went well. I guess Easter will be over soon; so I hope the church settles down a little. Your fish dinner sounds delish!

It's back to work tomorrow; and it will be a short week. Here's hoping that the work load isn't too bad when I turn on the PC tomorrow.



I mentioned the shrimp risotto for dinner the other night. Here's what it looked like.







WFDT? Asian. I made some rice and got some of the Chinese BBQ pork from the local shop. Also made two other dishes to go with it so that my vegetarian DH could enjoy as well. The first dish was stir fry broccolini with some garlic and ginger; and then added some oyster and soya sauce. The second dish was using some salted fish; which I diced and then fried until crispy. I then stir fried some bean shoots with a dash for soya sauce and some pepper. When done, transfer to a dish and put the salted fish on top. YUM! The second dish.....

Breakfast with Friends




I had breakfast with some good friends last weekend and thought you might appreciate the food porn.

The place we went to was one of those specialty coffee houses. Needless to say, the coffee was great.







One of the friends ordered a chai latte/tea.






DS settled on the hot chocolate.







I shouldn't laugh; but my vegetarian DH was really interested in the seeded mustard hollandaise. It sounded interesting and so he got it on the side. He was so focussed on the hollandaise that he didn't realise that it came with the eggs benedict......with ham. DS was more than happy to pull the ham off the toast and eat it. Poor. DH. (he did eat the rest and that hollandaise was worth it!) :rotfl:







My friends order the ham hock breakfast with poached egg and spinach.....







....and a lamb kofta.








Me and DS? We could NOT resist the doughnut French toast with apricot, blueberries, pistachio, cream and syrup. This was definitely the pick of the breakfast this morning.

This thread has been so quiet I thought I had unsubscribed myself!

Patience PIO. I'll post the update over here on the Kurt Russell dinner once I get it up on my PTR. I'm in process of writing it but I have another update in the pipes to come first.

Last night I made a turkey. It was good. We had stuffing, gravy, green beans and corn on the cob. Tonight we're having hot turkey sandwiches with mashed potatoes and gravy.

David has not been on the detox, it was just me... So he has been eating meat 4 to 5 times a week.

I am done the 24th of April it will be 8 week total, not too bad.

The annual fish fry sounds like fun? How was it?

I've been busy too....lots of takeaway dinners last week.

My mother is still in HK so we're cooking dinner at home tomorrow night. Or I should say....I think DH is. If I'm lucky, I'll come home and find some spags bol waiting for me. That's what DS wants.....we'll see if DH remembers how to cook meat. :rotfl:
 
I picked up some deli roast beef and will make a brown gravy to heat it up in. Make some mashed potatoes on the side with a veg and calling it dinner.

I've never done it with the roast beef before but have with deli turkey, so we'll see how this works out.
