The What's for Dinner Thread- June 2012 (recipe index in OP)

Even though I've been with the Dis for a few years, I've never made my way over to this thread. I've been reading many of the posts this morning and read a lot of yummy ideas.

Here's my WFTD:

Turkey breast, mashed potatoes, stuffing, gravy, cranberry sauce, roasted asparagus. Might even bake up a pan of brownies to top off the dinner.

Yep, a complete Thanksgiving meal. I usually make this meal a couple times throughout the year and will use a turkey breast instead of breaking out the whole turkey. SO much easier, but just as good.

This dinner idea totally back fired on me yesterday. :rolleyes2 I ended up being gone most of the day and by the time I got home there was not enough time to make this big ole meal. So I figured I would just hold off another day and make it today. NOT!!! I had bought those frozen turkey breasts that you cook in the bag they come in. Stupid me, never read the instructions and I took them out of the freezer last weekend so it'll thaw in time for yesterday's dinner. Problem is, I guess you were supposed to cook them still frozen. So now, they've been sitting in my fridge for the past week defrosting and when I went to open it up this morning it just didn't smell too great. So I tossed it.

Oh well....

WFDT? Filet Mignon, mashed potatoes and roasted asparagus. MMMmmm

That's bizarre that you cook them from frozen, I never would have known that either. Good call on tossing them!

We are having French Dip sandwiches and Cole Slaw. I'm coming down with the bug that Fran has had for the past couple days. :headache: I may be going back to bed.

Kimmar ~ So do you like peas? Because that is the only thing in the whole world I do NOT like - I love asparagus.

PIO ~ Good for DS. I remember on your last trip you finding him somewhere to practice the piano. What other instrument does he play? Enjoy your time off with him.

We had such a fun weekend but it sure went fast. We knew it would but we had a ball. The kids took us out for dinner on Friday and then we went back and played with Lilly until bedtime.
On Saturday, Matthew met us at the racetrack. We had a blast. I won 2 races, Matthew won and came home with $65 to the good and Doug won every race except 2 (I won those) and the Daily Double. Needless to say he bought dinner.
Lilly was precious yesterday and a great day was had by all. I can't believe she is 2.

You dinner sounds right meatless for this monday!

We will go on vacation in 34 days! and no I don't pack this soon.... Mostly the night before or the day of. This time we are only take one small roller suitcase each and a backpack... Nothing more! This is a test run for future vacations!

....shame......mine turned out AWESOME!
 
WFDT? I took the leftover gravy and turkey, shredded it, and made cream of turkey soup with monterey jack cheese.....super good!
 
WFDTomorrow? I am gonna make baby back ribs in the crock pot with bbq sauce....nice and easy for the family since I will be chaperoning our school book club to go see Divergent after school....then we [the teachers] will grab something to eat later....
 
Maslex - Shame that your turkey dinner didn't work out for you. But your fillet mignon dinner sounds awesome!


Alison - Hope you and Fran feel better soon. Rest up!

Halloeus - YAY for having your sister cook for you!


Ellen - DS plays guitar as well. In fact, both DH and I are also learning from the same teacher. So we're both looking forward to this week. Glad you had a fun weekend. And you ended it with more money than you started. I'd say that was a great weekend!


Brandi - I hope your packing light works for you. DH and I headed to San Francisco in 2009 with only carry-on luggage on the way there. We were there for 5 full days; so it made complete sense to go as light as possible. We did come home with a new medium checked bag.....full of clothes.


Kimmar - I hope you'll let us know how you enjoyed Divergent. I finally decided that I really wanted to read the books before the movie started here; so I've been reading Divergent. I quite like the concept and it makes for easy and interesting reading; so I'm keen to know how the movie stacks up.




Busy day at work and it was nice to come home to a cooked meal. I have to admit that I'm a little over the baked spud dinner; but I don't have to cook it.

Tomorrow might be Wednesday but my mother's kitchen is closed for the next two Wednesdays. She's. gone. away. for. holiday. :faint:
I have no idea what we'll be doing for dinner. But I can guarantee that we will be eating something. ;)

Brandi ~ for some reason I thought you were leaving sooner than that. Good luck with the lighter packing. On a cruise I always pack more with day clothes and then evening wear.

I am totally impressed that you are learning the guitar. I play the piano but that is the extent of my musical talent. :rotfl2:

Today has to be better than yesterday - right?! I am so glad I don't have bad days very often - hardly ever, but man when I do they are huge!! I couldn't wait to get home last night. Doug walked in the door, took one look at me and knew something was wrong. He went into the kitchen, turned dinner off and brought a bottle of wine and 2 glasses out to the living room. We talked for 1 1/2 hours, drank the wine and I felt much better. Needless to say we didn't eat dinner - but we did have some popcorn at 1/2 time of the basketball game. Today is much better - and the sun is shining. That always helps!!

I only took one big bag and a backpack to Spain for three and half weeks, and this is only 7 days, so I think I can do it no problem!

Plus I we get two free bags of laundry on the cruise!

I leave this job on Friday the 11th, and I start my new job on Monday the 14th.

I go to the Dr. On the 25th of April for my blood work and that is the official end of the Detox....

I cruise on the 11th of May.

and My June is totally shot, every weekend we have family and friends visiting...

I think that about sums up everything going with me.

Don't you just love that unspoken bond you have with your SO.... David can read me like a book, I am sorry you had such a bad day, but I love it that you have someone like Buddy to share with.
 
I would like to comment on everyone's posts, but I still feel cruddy. I did OK yesterday when I was sitting in my chair watching TV and reading on the DIS, but everytime I got up to fix something or whatever I felt dizzy. Im still in bed but today I have to get up and do some things outside the house. Blech!

Ellen - I play piano as well. In one of my alternate universes, I am living a life of the musician. :teeth: DH plays drums and picked up piano later in life. When the guitar opportunity came along, we both figured why not? My parents are in Hong Kong. My bother and his daughter are holidaying in HK for the first time and my parents decided to tag along with them.

I hope you're feeling better today. That's a man you have in Doug. So glad he got the wine and sat down to talk with you.



Brandi - Sounds like you're going to like travelling light. :thumbsup2 I have no idea what we'll do for Wednesday night dinners for the next two weeks!!!! :faint: I think we might just do some takeaway or something for dinner tonight. Two things are certain.
1. I have no doubt we'll be eating something.
2. I have no doubt that mum, dad, my younger brother and my niece will be eating something tastier than us in Hong Kong.

I came home and made minestrone soup in the end. We stopped by the grocery store and bought the pre-cut soup mix; and when I got home, I fried it up, added a tin of tomato, stock and cannelloni beans and simmered it for 20 minutes. We got a crusty baguette and some olive bread to eat the soup with.
