The What's for Dinner Thread- June 2012 (recipe index in OP)

Oh I'm having chicken roast dinner today it's a firm family fav do yes I will commit to a roast dinner xx

Even though I've been with the Dis for a few years, I've never made my way over to this thread. I've been reading many of the posts this morning and read a lot of yummy ideas.

Here's my WFTD:

Turkey breast, mashed potatoes, stuffing, gravy, cranberry sauce, roasted asparagus. Might even bake up a pan of brownies to top off the dinner.

Yep, a complete Thanksgiving meal. I usually make this meal a couple times throughout the year and will use a turkey breast instead of breaking out the whole turkey. SO much easier, but just as good.

Hi all! I am still alive but barely! LOL. No cooking for me, not much anyway. I have about 5 more weeks of school and then my life should settle down some and we can get back to good meals and a clean house in the G Household,

I also want to let you all know that Buddy is doing well. He has been cleared to work by both Dr's so that is good. He works for a construction company so they start up slowly, thank goodness. He said it was a LONG day this week, and he was shocked at how much he felt he needed to "relearn". I was glad he is back in slowly, his head was killing him! He is not scheduled for Monday, but this week he will be back setting up jobs for opening the following week, and we will see how that goes. His employer told him that he needs to do what works for him, and if he needs to take a step back, they will support him, and have someone else back him up. We feel Blessed that they
are so understanding, because now there is no pressure for Bud. He said if he had to jump back in, stay in rotation, and know he was stuck for hours on end, he would begin with a headache!

I do read what you all are up to, and miss chatting but just cannot keep up.

Anyway, I hope all is well with you! May 15 is almost here, at least that is what I have been told. LOL

Welcome to the thread!

We don't do Thanksgiving in Australia so Turkey is not the traditional meal for that time of year. But it is for Christmas. I do turkey breast at Christmas instead of a whole turkey. Yes, completely agree. It is so much easier.

....hey, know what I do that's also easier, if we want to have some turkey? I wrap turkey thighs with a slice of bacon (shocker) and roast them in a glass lasagna pan....so good!

Halleous - Great! I'm pretty sure that one of us will remember about the roast dinner at the end of the month.

Nancy - So nice to see you post. Hang in there. 5 weeks of school is not long to go. Thanks for letting us know that Buddy is well and cleared to go back to work. That's so nice of his employer to back him up.
May 15 is your countdown? That's a couple of days after my countdown. Phase 2 of my program of work launches on May 13. Looks like we're counting down together.:

Kimmar - What's wrong with asparagus? Do you not like it?

We had chicken dinner tonight.
It's Sunday over here and we did the clock "fall back" last night. So, my schedule on the Dis is probably an hour later than what it was yesterday. I suspect it gives me more overlap time at this hour of your morning for the people from the East Coast; but less overlap time with the West Coast at the end of the day. Oh well. It does make life interesting.

Have a great day all.

I'm totally in for the chicken at the end of the month, but then again you all already know this.

Welcome maslex! I too make a full on Thanksgiving dinner several times a year. We buy turkeys in bulk when they are on sale at Thanksgiving, then I make them throughout the year. I'm overdue for making one so I've put one on the dinner rotation for next weekend or the following.

Yesterday I went out to lunch with jedijill who has been at DLR all week. We went to one of those restaurants where they dump a mess of seafood, potatoes, corn and sausage on the table and you get a bib and mallet and go for it. We left with two boxes of leftovers. Jill was getting on a plane so I took the leftovers. I turned them into crab and shrimp cakes, that we ate with the corn and potatoes.

Tonight I'm making a Tri Tip roast. Not sure yet what the sides will be.

....hey, know what I do that's also easier, if we want to have some turkey? I wrap turkey thighs with a slice of bacon (shocker) and roast them in a glass lasagna pan....so good!

...taking my own advice....but I am also roasting a small turkey breast with the thighs...*sniff*, *sniff*....smells great...

Hi everyone. hope your weekend has been wonderful...

David is home and feel better, it has been a long weekend for us. We have got a lot done and looking forward to relaxing at work HaHa...

Thanks again for all the positive thoughts and prayers for David they were greatly appreciated.

Glad to hear Buddy has been cleared for Work, that is great news!

PIO - I will still be doing the Veggie stuff until April 25th!

Hope you have a wonderful day

Kimmar - Bacon makes everything taste better. Bet that turkey dinner would have been yummy....with sweet potato and broccoli.

Alison - Hope you had a great time with Jill. Can't wait to see the pictures. Glad you're in for the chicken dinner.
How was the tri tip dinner?

Brandi - My calendar puts the chicken dinner for the weekend of the 26/27th April. Depending on how you re-enter caveman carnivore world again, you could possibly have chicken. If you don't want to roast it, you could think about poach?
Glad David is home and feeling better. Sounds like there was no complications. :thumbsup2

WFDT? I think it might be pasta. I found some tomato sauce in the freezer and have pulled it out. It has 4 hours of thawing; if not it'll be thawed in the microwave after that.

Have a great one all.

That puts you off the Veggie diet just in time! You can join in if you want. I think we should make the parameters cook a whole chicken in whatever manner you please.

Jill and I had lots of fun. Pictures to come! Tri Tip came out awesome! Nice and red on the middle! :rotfl2: I did it in the oven instead of on the grill. It worked out OK.

See Brandi, even PIO picked up on that you could be in on this!

Alison and PIO - I can do that... I even know what I will be cooking... Beer Can Chicken! A whole chicken!

Yummy!

Dinner last night was Broccoli and Brussel Sprouts!
