The What's for Dinner Thread- June 2012 (recipe index in OP)

Hi all, remember me? :rotfl:

I would like to join back in if you all don't mind. I have missed you all a lot. I talk to PIO but I miss you guys.

I can't read back that far so I will just jump in - ok?

I can't wait for tonight. We are going Christmas caroling at the 2 care homes. The Faith Friends (the pre K - 5th grade) are joining the Middle School UMYF. Plus Liam is going also. I just love seeing all of the faces when we go down the halls. But I am such a sap that I cry through most of it. It is something that they love and we love doing. It just wouldn't be Christmas if we didn't. For some, sadly, this is as close to family and Christmas they will get.

WFDT ~ I truly don't know. We are leaving at 5:45 and then we have Bells and Choir till 8:30. Might just be a bowl of cereal when we get home.

PIO ~ Thanks for the welcome back. I hear you on the countdown to Christmas. It dawned on my yesterday that in 2 short weeks it will all be over. I have barely started. I had better get busy!!

We had a lot of fun caroling last night. But the highlight was when one little lady got up with tears streaming down her face and came up and sang with us. Good grief their wasn't a dry eye in the place. I even saw a few of the kids get choked up. I think they really realized what Christmas is all about.

Tonight Doug and I are going to go pick up my layaway. I finally found the little ones presents. I looked all over Lincoln, Kearney and Grand Island and was out for groceries at Wal Mart on Tuesday and found them both right here in my little town. Score!! We got Liam a Little Tykes basketball set with hoop and Lilly a Minnie Mouse (she loves her Minnie) ride on. I was by myself and they were to big for me to get home so I put them on layaway and Doug can get them with the pickup.

WFDT ~ Bacon cheeseburgers, avocado salad with chips.

Nan ~ Good luck on the final I know you will knock it outta here. I will repeat it here you are my hero - so proud of you!!

Tonight is Doug's Christmas party. I can't wait. We always have so much fun. Doug was in charge this year and we are having it at the Country Club. He is a bit nervous - he says, "If it is a success he will not hear a word, but if it is a bust he will REALLY hear about it." Poor guy, he has tried so hard to make it a great night. Last year we had it at the Winery and everyone had a fit because all they could drink was wine - HELLO people it's a winery. So this year Doug had it at the Country Club. They make the BEST prime rib!! I hope all goes well!!

WFDT ~ Prime Rib, baked potatoes, salad and garlic bread.

That prime rib sounds wonderful! I have no idea WFD! Out realtors are taking us on a Harbor Cruise this evening. I haven't made plans in case we are going out. To dinner afterward or just making something out of the freezer.

It's Saturday here and an absolutely crazy day. There are a few Christmas catch-ups happening so I'm not cooking dinner.

Wow - what a week ( The size of Disneyworld blows me away )
We have dined at Wendy's for lunch & Wolfgang Puck express on Monday night
Seaworld & our resort on Tuesday
On Wednesday we ate at liberty tree tavern for lunch
Thursday we had a Fantasmic package lunch at the Hollywood Brown Derby with a snack @ Epcot in the evening
Friday we had. Candelight processional lunch at Via Napoli with dinner @ La Hacienda San Angel
Saturday today we ate lunch at Flametree BBQ ( we are both so full )
When I get home & can access pictures from my camera - I will post on here
Next week is 3 days @ Universal - before heading back to the beach club @ Disney - so will have had more awesome meals
Can't believe the size of good portions here - think im gonna explode.

Good Sunday Morning!

Wow! It is cold and winterie here. WE had some snow yesterday and once the sun shines, it is going to be gorgeous!
Ellen- I know Doug is going to be fine. I cannot understand the mindset that allows no positive feedback when things are right, but has plenty of negative when things go wrong. It is very disheartening, IMO.
I am impressed with your shopping, I have not done any. I am going very light this year, I just don't feel like it.

PIO- There is no way I could even pretend to be watching my food during holidays. I am very :worship: with you!

Dean- I cannot wait for your pics! I am glad you enjoyed WDW food. We went last year, and I was a little disappointed, so I am glad that was not your experience.

Allison- I am so jealous of your "cruise"! I would live that!

Dinner is a simple American Chop Suey, our go-to snow meal. Buddy requested Hot Dogs yesterday, and since I have not been cooking I was happy to make anything he wanted. Marisa picked me up and we headed to the store for rolls and a few "storm" supplies....(donuts) :rotfl:. We had macaroni salad and caramelized onions to go with his dogs. And wine!

Girls- I have a favor. I need ( really I want) a few prayers, but I can't share why today. If you could send a few good thoughts or prayers for my favor, I would appreciate it. Nothing is wrong, but I could use a little :listen: from above. Thank you!

Dinner on Saturday night




My company held it's annual Christmas dinner on Saturday night. When the invitation come, the theme for this year's party was less than inspiring for me.



It was an 80's party! Big hair, big shoulder pads, lycra and leg warmers......NOT! This is the decade that I pretend did not exist. Somehow, I don't think I was the only one less than enthusiastic......



.....because......



....look what was on the table waiting for us; so that we would get into the mood.







It was super dark in the venue.









And it cast a pink light over everything!














The entrees.













So I decided I needed to flash. And I'm not talking about flash dancing....although there was the requisite mirror balls.








Main courses.














It was very hard to pick between the two. I did canvas a few couples that did the swap and share thing and it was split 50/50 as to which protein was better.


DH had the vegetarian option. I can report that my lamb was much better.







We had potatoes and salad sides. I only got the spuds.








Dessert! They placed these platters at our table. Help yourself.





















There was a proper coffee cart outside for us to enjoy. Imagine my surprise when I realised that there were more and different desserts out there!






























Yup. Desserts were ALL great! I loved the passionfruit lollipop.





And whilst there was no flash dancing, we did have entertainment.





















He was sooooooo goood!

Nan ~ Prayers have been with you all along. I really hope all is well and our prayers and good thoughts have helped. You are so special I hate to see you worried. Please know we are all here. You have my number if you need a shoulder.

Alison ~ How was the Harbor Cruise? You and Fran do the most fun things.

PIO ~ Your dinner looks amazing. Wow - just wow!!

Brandi ~ Welcome home!! Are you and David still doing meatless Monday. I have a friend who has started this also, and I thought of you guys.

Dean ~ Tell Mickey "hi" for me. I think I am the only one who does not love Disney at Christmas time. I have been a few times and I do like it, but I would rather be at home. Have a nice time! Your meals sound amazing.


The Christmas party was a complete success. So much so that before we left they requested it for next year. Doug was so relieved!! We had a ball!!

We got most of our baking done on Sunday. We had so much fun. It is one thing we do that I look so forward to. This year was a ball decorating sugar cookies with the little ones. They really got into it. Poor Elizabeth will be finding colored sugar for awhile. :lol:

Yesterday was a very hard day for us. Jay and Elizabeth's dog hasn't been doing well since we got home from New Mexico and they had to make the hard decision to put him down yesterday. I went over to stay with Liam - Ethan was at school. Poor Jay, I felt so sorry for him. They had had Roscoe since they were first married, and this was the first time he had to be a BIG boy and take care of things. He brought him out to the farm to bury him. Doug and him took care of everything. Doug said he really had a hard time. These furbabies are so a part of our families. It kind of makes you say - Never again. And then we do. Such is life, but sometime it's just really hard.

Today is my baby girl's birthday. We are going to Kearney tonight. She has requested Bilinas. They are a tradition in our family for birthdays. I haven't made them for many years, but today she wants them. They are a German pancake. Real yummy and full of memories. My Momma made them for us and now I am making for my babies. I just love traditions.

Oh Ellen. I am so sorry. I know how hard losing a pet is. I think that making the decision is almost worse than having nature take its own path. My old vet used to say "Do an old friend a favor", which kind of put decision in perspective. My brother refuses to have any more pets because he always had to be the one to take them when their time came, and he said he cannot do it again. Sending you a huge hug!
Happy birthday to your precious girl!

I have a lot to do today, and the roads are covered in ice, so I am a bit frazzled already, but I will chack back later this aftenoon!

Welcome Back Brandi and Dean!

The harbor lights cruise was really nice. I had no idea that the houses on the canals did such intricate decorations. Evidently there is a contest. It was very beautiful! There were six of us on our little Duffy boat, our realtor's husband drove the boat. They brought wine and a Greek appetizer platter for us to snack on while driving around. It was very fun and relaxing.

Dinner tonight? I think steak and potatoes.
