The What's for Dinner Thread- June 2012 (recipe index in OP)

Sorry for everyone with cold issues. I'm still fighting a cough, so annoying!

Last night I made crab cakes. We had some of the crabs that Bret gave us Thursday night. There was about half a crab left so Fran cleaned them for me and I made them into dinner. So yummy!

I don't know what we will have tonight. I have Pad Thai on the schedule but we have been deviating from that schedule, so who knows!

I'm heading to the market this morning. Hoping to get my Christmas food shopping done.

I had a simple chicken salad for dinner last night. Nothing too exciting. Just leftover chicken that I shredded and added to a bunch of greens. Salt and a squeeze of lime was all I added. DS turned his nose up so he got pasta. DH just had the greens; no chicken. I'm counting it at three separate meals! :rotfl:

SO sorry to hear some of you are feeling under the weather! I hope you get better son=on. How are all the holiday plans coming? I finally got my shopping done,and had a marathon wrapping thing go on tonight. Then a cocktail while Buddy finished swapping the faucet in the bathroom out. ( I really needed two, he cannot fit under there, so it was stressful! He requested burgers, so that is what I made, and there are enough for his lunch tomorrow.

Christmas dinner is pretty simple. Roasted prime ribs of beef, Rack of pork,glazed with apricot, mashed potatoes and gravy, veggies ( i am not sure what) garlic bread, Potato rolls ( my son loves them) maybe stuffed mushrooms. Wine and pomegranate spritzers Marisa and Erica are making cookies, and I am picking up two cakes. We are keeping appetizers to a minimum, just cheese and crackers, because no one eats dinner. Donny and Anna are coming Christmas Eve, and Donny is bringing BBQ.

My Christmas food?

I picked up a turkey breast roll today. It's a lot easier than doing a whole turkey in the oven. I'll be roasting it on Christmas Day.

The other protein I've gotten is salmon cutlets. So, it'll be the stuffed salmon cutlets that I've done for the last 3 years. It's quite a hit in the house on Christmas Day; so it's become a keeper.


I'll be serving the proteins with the following sides:
  • Roast potatoes (probably with rosemary and garlic)
  • Snow peas, lightly sauted with cherry tomatoes and sweet chilli sauce
  • Manga Tango salad (I've just finished making it and I think it will be quite nice with the fish)
  • Garden salad. I picked up some butterleaf lettuce from the market. It'll make a nice change from the standard iceberg.


Dessert will be plum pudding. I'm contemplating making a trifle; but there is no room in the fridge for the jelly to set. I've also got some brandy snap cups. I've got some mango sorbet and will cut some mango up to scoop over the sorbet on the day.



Hmmm.....might go collapse on the couch first.

I don't really have a "recipe", it's kind of one of those things that I just kind of make.

I take the crabmeat, mix it with some cracker crumbs, egg, parsley, thyme, and pepper. I just make it into little cakes and roll it in bread crumbs. I put them in the freezer for an hour or so to let them set up and then fry them in butter. They come out pretty good. I like them with cocktail sauce, she likes them with Tartar sauce.
 
Everyone's dinner plans sound so good.

Christmas Eve we are roasting a Prime Rib (Herbs and Horseradish crust), Cauliflower and Brussel Sprouts with Pumpkin Soup

Christmas Day we are roasting a turkey (whole), cranberry relish, salad, Sweet Potatoes and White Potatoes, Mac-n-cheese....

Picked up fresh rosemary and olive oil bread, and cream brie for an app

Wow! I am impressed with those of you who make two meals over Christmas! I used to have the stamina, but no more.
PIO- your mango salad sound delicious! Stuffed salmon is something I never heard of, what do you use for stuffing.
Brandi- Dinner sounds yummy! We usually have a turkey sometime during the Holiday season, and a Ham on New Year's Day. Turkey is one of my "festive" meals, and I save it for special occasions.

Allison- Buddy loves crab cakes, but I have never been brave enough to make them.

Well, I think I have caught up. I finished my shopping. I started on Friday, so it was a marathon weekend! Gifts are wrapped, (no homemade bows like Marisa always makes) and under the tree. I got the house cleaned, and the silver polished, so that is done. I have to meet with HR this morning, so wish me luck! i have cooking to do, and did not want to go out but I really want this job!

SO...I made the filling for French meat pies, and will make my pies this morning after I get home. I also want to bake a sour cream coffee cake for tomorrow morning. DOnny and Anna are bringing BBQ for dinner tonight, and then we are going to midnight Mass. It is a beautiful service! But way past my bedtime! LOL.

I will get back here later, but in case i run into time management problems again, I want to wish all of you a Merry Christmas. I enjoy all of you so much and want you to know how much you give on a daily basis. Stay safe during the Holiday!
 
Hi all! I will be making a Prime Rib tomorrow. I'm hoping to find some bean sprouts today so I can make Pad Thai for dinner tonight.

My wish for each of you is that this Christmas is the best yet. I so wanted to post to each of you but my schedule just won't let me. With working for a Church, today and tomorrow are the biggest times.

Love to you all, you are the best part of my day. And I thank the Good Lord for you all.

Christmas Eve Dinner


As always, we spent it at my mother's. Lots of curries!

Christmas Lunch




A quiet Christmas lunch at my place. DH, DS, my parents, MiL and myself made 6 for lunch.








Salmon cutlets, which I stuffed with breadcrumbs, fried onion, toasted pinenuts, dill, parsley, salt, pepper and vegetable stock to moisten everything until the stuffing held together.






Baked in the oven for 10 - 15 minutes.







Turkey

I like a breast roll, basted with butter, garlic and parsley.








I also made individual serves of stuffing to go with it.

Pan fried snow peas and cherry tomatoes, with a sweet chilli dressing.









Roasted potatoes with rosemary and garlic.









I made a smaller trifle for dessert.

Eow PIO! No wonder you were in a food coma! I didn't take any pictures of our dinners. They were nice but fairly ordinary. I did find my bean sprouts but it was somewhat of an ordeal. Evidently they carry salmonella and most stores have taken them off the shelves. Only whole paychecks had them.

Our christmas prime rib was good too. We have leftovers to make french dips, hot roast beef sandwiches and beef stroganoff.
 
Wow! Hope that they clean up the salmonella outbreak from the sprouts. Glad you found them in the end.
 
Good Morning All! I have been in a coma, period! Actually, just lazy, but enjoying every minute.

I just caught up on the Holiday food, here, and it looked like everyone ad wonderful meals. Our Christmas dinner was good, but like Allison said about hers, fairly ordinary. The prime rib abd rack of pork was delicious, but we have a lot of meat left over. So much so, that Buddy, who hates breakfast for dinner, asked for eggs last night ;) :lmao: Donny forgot to take his package home, so that added to the leftovers.

Today I am going to get some housework done, and then collapse again. Mass is at 4PM, but I already am looking for excuses! Not good!

I hope that if I miss anyone in the coming days, you all have a safe and Happy New year!
