The What's For Dinner Thread - Feb '09(recipe index in OP)

Decided no Boston for me...just not there yet. I really feel like I'm pushing to hard.

Glynis--that makes me so sad about your Katie. She's just adorable! Hugs to her and to mommy as well!

Kathy--Hugs to Kyle! That must be really painful! Hope he's better soon.

Well, finally went to the grocery store. Gonna have Kathy/Aimee's Baked Ziti tonight. The recipe just sounds so yummy and I've been craving it! Guess I better get moving, huh?;)
 
Merle I hate computer problems. Does your Mom know about computer or is she like me click here and there and ooops :scared1

She actually knows more than I do which is why I asked her to look at it, I thought she would be able to fix it. :headache: Unfortunately I haven't been able to mess with it since that night, I have two quilts that someone is having me make that I have to get finished by this weekend.

Congrats on the new house. Some people are a pain when it comes to buying/selling a house. When my DM sold the house we lived in when I was in HS the buyer had our Weber Grill added to the contract, made a big deal about it :confused: The weird thing was that it wasn't a new grill, we had had it for years. Didn't really matter though as my DM was moving to Cape Cod and wouldn't need it but weird about how much of a stink he made.


I made a really good chicken salad for lunch today. We had rotisery chicken for dinner last night and I chopped some up and added mayo, dill, lemon zest, a tiny bit of lemon juice, Kalamata olives, feta cheese and pepper to it. :cloud9: So good!

Dinner tonight will be grilled salmon and asparagus and rice.
 
Glynis - I'm so sorry I missed that post about Katie, I would have cried. I've been very "spacy" today not sure what's up with me. Sorry.:hug:
 

Kathy Spacey is my middle name :hug: I hope Kyle gets better quickly

Glynis I never thought Alex was 'chubby" but his little stick figure "friends" did. He would never wear his swim suit with a tee shirt because of the rude comments from friends. He is now quickly approaching 6 foot and attracting lots of female attention much is my dismay :eek: . Long story short is his now very normal looking. Katie will come into her own soon and turn in the swan we all know. I think people who are born beautiful never appreciate it and take it for granted. I perfer beauty that you grow into it is more lasting.:hug:

Maria Rest up and try not to do to much :hug: Boston will always be there.

Tonight Costco was kind enough to make for us, nice huh!:rotfl2: They made chicken and I'll throw some carrot and fruit on the side.

Tonight we are having Liver and Onions, roasted new potatoes and Harvard beets.

Cute story **** Doug and I were very young when we had our girls. I was a SAHM so money was very tight. I could get a container of liver for around .49 cents. I could feed the four of us for very little. We used to have liver 2 -3 times a month. My girls thought it was steak. They used to ask for it. :rotfl2: Now that they are older they won't touch it. :confused3 Go figure.

I consider myself an adventureous eater and I cannot bring myself to try liver.

Not good, I'm going with him to the Dr. this afternoon.:sad1:

I have not been successful losing weight on my own. I never could do the WW plan before either, I was manipulative with the points. The Core, now "Simply Filling" plan works for me, but mostly the accountability of meetings keeps me in line. Go on over to the WW thread on the Wish board, it is really informative and supportive. I made my goal last Monday :yay::yay:

I'm a manipulator, too :sad2: I tried tracking on Sparkpeople and just manipulated things to make myself look better. I wonder if I would do the same with the points.

I think the in person weigh in will motivate me. I need to check into pricing in my area.

Pray for my mother and granddaddy. She is (attempting) to take him to some assisted living places tomorrow. I got a bunch of info for them today so me and mom are going to work on it tonight so she has a plan. His memory seems to be worsening by the hour. She is shocked at how much it's changed since she was with him in Nov.
 
Contrary to everything we've been told my doc says wrapping the rib cage actually makes the rib hurt worse in many cases, depending on where the fracture is. He gave Kyle some pain meds to take at bedtime and told him to use heat instead of ice from now on and no more wrapping/taping.:confused3

Alan was told the same thing. It was a tough few weeks, but he's all better now. Give Kyle a hug and tell him you love him. That seemed to help Alan!

I think that this friend is trying too hard to join the "popular" set, and in order to do that, she has to be too cool to hang with her old friends. I think she sees Katie as "safe", in that Katie doesn't get angry or hold a grudge, so Abby knows she can make fun of Katie and Katie will still be there for her.

It happened again today, so I told her that next time, she needs to stand up for herself, and tell Abby to stop it. If that doesn't work, I'll be all mama bear over this girl. Katie doesn't need to dread going to school at this point in her life. So, we'll see what happens tomorrow. I may be taking a trip to the school to talk with the principal and Abby's mom.

I hate to step in for every little thing, but this has gone on long enough!

That's exactly what I tell her! I think, seeing herself in that swim suit, did more towards making her believe that, then simply listening to me.

You don't know how hard it's been to watch and not step in. She doesn't want me to, but I told her that there comes a point where I need to step in. She's so hung up on being nice and not getting anyone in trouble. She's also afraid of retribution when Abby finds out. I'm hoping that if Katie can stand up for herself, that will stop Abby cold. She's not used to that! She's used to just rolling over on Katie and Katie taking it.

What's hard for me to believe is that Abby will treat Katie so badly, but then still call and ask Katie to come over to her house. What's up with that?

I'm so sorry about your UTI! That is never fun! It seems like you've had more than your share, lately.

I think some girls at that age are "all over the place" mentally. They're growing up and their brains go haywire. Having only had a boy that's my two cents which isn't worth much.;)

I went out and about today in the city. Great day for it! Less than five minutes after I got home, a big argument broke out in the street in front of my building with cursing and all that jazz...:sad2:
 
This recipe was so good tonight! Very easy, fresh, and summery.

Grilled Flank Steak with Avocado Relish - taken from Cooking Light

A little fruity avocado oil and fresh avocado (both full of good-for-you fats) boost flavor in relatively lean flank steak. If you don't have avocado oil, use any type of fruity olive oil, like an Italian extra-virgin variety. This recipe also works well in a grill pan over medium-high heat. Don't seed the jalapeño pepper to pump up the raw heat factor in the relish.

2 teaspoons grated lime rind, divided
4 teaspoons avocado oil or fruity extra-virgin olive oil, divided
1/2 teaspoon salt, divided
1/8 teaspoon freshly ground black pepper
1 garlic clove, minced
1 (1-pound) flank steak, trimmed
Cooking spray
1 cup diced peeled avocado
1/2 cup chopped plum tomato
2 tablespoons chopped red onion
1 tablespoon fresh lime juice
2 teaspoons finely chopped seeded jalapeño pepper (about 1 small)
4 lime wedges


1. Combine 1 teaspoon rind, 2 teaspoons oil, 1/4 teaspoon salt, black pepper, and garlic in a small bowl.

2. Score a diamond pattern on both sides of steak. Rub both sides of steak with oil mixture. Cover and refrigerate 2 hours.

3. Prepare grill to medium-high heat.

4. Place steak on a grill rack coated with cooking spray; grill 6 minutes on each side or until desired degree of doneness. Let stand 5 minutes. Cut steak diagonally across grain into thin slices.

5. Combine remaining 1 teaspoon rind, remaining 2 teaspoons oil, remaining 1/4 teaspoon salt, diced avocado, tomato, red onion, lime juice, and jalapeño pepper in a small bowl. Serve sliced steak with the relish and lime wedges.

Yield: 4 servings (serving size: 3 ounces steak, about 1/3 cup relish, and 1 lime wedge)

They are so good at that, they made my chicken on Sunday night! :rotfl:

Dinner was so good tonight. I grilled some mushrooms along with the salmon and asparagus and had it with some cous cous my DM made.
 
Hey y'all,

A quick checkin here, l don't want y'all to start worrying. Alexis was off of school today because of the school fair. I was suffering last night & today from all of that fried fair food.

I was all set to respond to everyone and now Tommy Boy is waking! I am going to start a Word doc and then cut and paste...I think that might work.

We are having grilled steaks and salad tonight. I did good with the eating and exercise yesterday...:cool1: so I have to try and keep it up.
