I am sorry for your loss :hug: I agree with your Mom, I have told my family that they do not need to attend on Tuesday, it is really too much with all they have to do. If your Aunt was anything like mine she would be irritated if you went and the kids missed out on the game.

Also, we disovered something at P.F. Chang's I just had to share with you. While perusing the menu, Kevin noticed an Asian plum wine was on the wine list and commented that it sounded interesting.

Does it taste the same as the plum wine in China at Epcot? I didn't care much for that but figure there may be different kinds :confused3

If anyone is interested, I can post some pictures tonight! Nan will still have Kady in the morning. I have to drop her off around 6:30 so I can get to work for 7, and then she will still pick her up from school. So they will still see her alot everyday.

Here's the recipe I use but it makes a ton so I cut it by half. I also use Italian sausage/ground beef combo:

Baked Ziti

* 1 pound dry ziti pasta
* 1 onion, chopped
* 1 pound lean ground beef
* 2 (26 ounce) jars spaghetti sauce
* 6 ounces provolone cheese, sliced
* 1 1/2 cups sour cream
* 6 ounces mozzarella cheese, shredded
* 2 tablespoons grated Parmesan cheese


1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

This is my no-fail recipe, too. I make it for company a lot, and for new babies. Always a hit and always get requests for the recipe later. It's very creamy and cheesy.

The morning went really well - great day at church. My mom is spending most of the day with relatives. She doesn't know if she'll be home for dinner or not but we're cooking something that will make enough in case she does. I'm leaning towards jamalaya with sausage, chicken, and shrimp.

It's official. This weekend was a bust workwise! I have accomplished nothing! What is surprising to me is that this afternoon Buddy tossed in the towel and said he gave up too, since we got nothing done up until that point he figured we'd both just start tomorrow. That's my guy :love:, :happytv: and snoozing on his chair while I :surfweb:
 
Hi ladies,

I was NOT last!!! I was so darn proud of myself. I think the girls were too. We started off all together and my girls started a good run. I kept up with them for a bit and then had to walk. Stephanie ran the whole race and came in 2nd for her age division. Elizabeth ran and walked and finished 6th. As I started off there was a lady with a running stroller in front of me. I decided I would keep up with her. She jogged some and I did to, but I kept her within a distance. Close to the end of the race I saw my girls at the finish and I jogged ahead of her and passed her. I suppose I finished in the last 2/3 but I WAS NOT LAST this time baby. Woohoo!!!!!!

Doug is at the Country Club today, playing a round of golf with his friends and I am home baking. I have 2 loaves of Banana bread in the oven as I type. It smells great. I love days like this.

Doug brought home a package of Lamb chops. I will take your advise and marinate them and then grill them. I told Doug that i had asked all of you for advise and he thought you were all great for the help. He loves you all for getting us started on the Rosa. He loves it as much as I do.

Just got back from the musuem. We all really liked the Harry Potter exhibit. It was very well done. They had alot of the costumes and wands from Harry, Ron and he who must not be named.;) If it comes anywhere near where any of you live you really need to make the trip. Doby and Buckbeak are way cute.:thumbsup2

We are having spaghetti and meatball salad and garlic bread.

Nancy Marissa will just have to have a glass of wine with the ziti cause mojitos just don't go :sick:. I do remember the apple wine the strawberry and many many other flavors.:rolleyes1

Maria -- Have fun in Boston Wednesday. The weather is supposed to be beautiful this week.

Liam's game went well today, although it was very warm. I really shouldn't be complaining, but I'm just not prepared for high 80s in April. All three of us got sunburned, despite wearing sunscreen. Apparently, our skin was not prepared for such high sun exposure yet either. Anyway, Liam was the starting shortstop, and one of the younger players said he thought Liam was the best player on the team, so that was good for Liam's ego. The team lost, 10-7, but they were down 10-0 at one point, so they almost mounted a Sox-like comeback.

Well, I thought the applesauce chicken was a hit! The kids must have, too, since there's not a bit left.

Here's what I did.

I plopped a package of frozen chicken thighs into my crockpot. In a small bowl I mixed about a cup and a half of applesauce, 2 tablespoons dried onions, 1/4 teaspoon cinnamon, 1 tablespoon apple cider vinegar and a pinch of red pepper. I poured that all over the chicken and cooked it on low for 5 hours. We served it over rice, and I loved it!

Next time, I'll probably add more red pepper, as it needed more kick!

Now, dessert is in the oven. Chocolate cherry cheesecake! If it turns out, I'll post the recipe. maybe I'll even take a picture!

I tried a new wheat bread recipe yesterday, and I think we're on the right track with it. The kids seem to like it almost as much as the white bread, so that's good, right?

I decided on grilled turkey burgers with goat cheese spread for dinner. I'm going to cancel out the saved calories by eating turkey instead of beef and making velveeta shells and cheese (mmmmm processed cheese product :lovestruc) but I'll also grill some asparagus to go with it.

They sell it in the store & it makes for a lovely little nightcap! Beware the headache is a killer!

My baked ziti is similiar to all posted but I like to put ricotta cheese & plum tomatoes in as well, keeps it moist and makes it creamy.

Dinner was hot dogs on the grill in potato rolls & baked beans....love a grilled hot dog:lovestruc

Hey all! We've had a very busy weekend. But very, very fun! Disney on Ice was so much fun! We had great seats (thanks to a discount code my bff found for us) and the kids were on the edges of their seats the whole time. Then we rushed home for a quick lunch and naptime, so we could go out and hang out with some dear old friends that were back in town for the weekend. It was also a great time.

Then my crazy husband decided to doing something crazy! He is obsessed with checking airfares to find a good deal to go somewhere. Well, he found great airfare to guess where? Orlando!!:cool1: So of course we had to book it, it was good deal, right? We've used most of our DVC points (even into next year already :rolleyes1) so we did hotwire and got a really cheap rate on a DTD hotel. The kids don't know yet, so they'll be so surprised. We're "just" gonna do waterparks this trip since we were just at MK in February. We'll do a day at each one. Can't wait, I've never been to either.

As for WFD the past couple days, Friday was "Friday Night Pizza", Saturday was cookout food, and tonight was "whatever you can find in the fridge" night.

Hope everyone else is doing well. Love the Strawberry Hill references! Anyone like Purple Passion??? Or was that an Arkansas thing?:rolleyes1

For dinner tonight, DH ended up making a beer batter and deep frying zucchini and squash - though it took him a few batches to get the hang of it, the last few batches were really good! When my mother came in for the night, she ate the rest dipped in ranch and loved them.

I made these to go with them - very good! DH was whining about 1) ground turkey instead of beef and 2) goat cheese but he ate it all very happily and admitted it was tasty.

Grilled Turkey Burgers with Goat Cheese

Yield
6 servings (serving size: 1 burger)

Ingredients
2 teaspoons grated lemon rind
1/2 teaspoon salt
2 garlic cloves, minced
1 pound ground turkey breast
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 large egg white
1/4 teaspoon freshly ground black pepper, divided
Cooking spray
1/2 cup 2% reduced-fat Greek-style yogurt (such as Fage)
1/4 cup (1 ounce) crumbled goat cheese
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh mint
6 (2-ounce) whole-wheat hamburger buns, toasted
6 green leaf lettuce leaves
6 (1/8-inch-thick) slices red onion

Preparation
1. Combine first 6 ingredients and 1/8 teaspoon pepper in a large bowl, mixing gently. Divide turkey mixture into 6 equal portions, shaping each into a 1/4-inch-thick patty. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook 8 minutes on each side or until done.

2. Combine remaining 1/8 teaspoon pepper, yogurt, and next 4 ingredients (through mint) in a bowl, stirring well. Spread 1 1/2 tablespoons yogurt mixture on the bottom half of each bun; top each serving with 1 lettuce leaf, 1 onion slice, and 1 patty. Place top half of bun on each serving.

Ive ran a charity 5k for cancer research the last 7 years(since I lost my dad) but with my Health being iffy im gonnae miss this years...im so sad about it.

This sound yummy and easy (big plus) and i think the boy would like it but hes not big on any spicyness...did it have any kick ?
And could i leave out the pepper without loosing taste ?

Scotlas I am not sure I understand Harry Potter but I did like reading the books and watching the movies. I don't understand the intense following though. Even with Twilight the books maybe ok but :confused3

Hopefully the surgery with bring you back to health. Maybe you can still partipate in the Cancer race working the sidelines. That way you are still there doing something that matters to you.:hug:
