Dinner last night was BLTs with my parents. I took my DM out shopping for a first communion gift for my nephew. We have a party on Saturday for him. It was a nice day, she bought Luke the cutest sports lamp for his big boy room. Now I just have to get motivated and change rooms for him!

They are suppose to rehook and fix our heating system today. Hopefully, I will have central air again by the end of the day. I have my fingers crossed this is the last maintenance and the fix the problem that has been on going all winter long!! Thank goodness it has been under warranty.

WFD- chicken cutlets with mushroom gravy (per DH request), green beans and caprese salad. Some kind of starch just not sure what.
 
Morning all! I'm leaving MYO pizzas with my mom for dinner tonight. The kids are very excited.

Thanks, everyone, for your words about Katie. She's dreading going to school today, but says she's going to be ok. I'll be monitoring the situation closely.

The Florentine casserole last night was so yummy! My kids ate everything, except the spinach which they picked out (as much as possible). I'm hopeful that because it was chopped spinach, they did manage to eat some of it!

Dinner tonight is pork chops with stuffing. Yum! Some kind of veggie, not sure what, yet.

We're sticking pretty close to home these days. Word of the swine flu has got me a bit freaked out! With our DL trip so close, we want to stay healthy!
 
Morning all, it's a beautiful day here and I have lots of windows open. It's great to have some fresh air blowing through the house.

Glynis- I'm sorry for Katie, I had a "friend" like that. I really regret letting her walk all over me and that is the one thing I would change if I could do middle and high school over again. I'm sorry to say I didn't get the strength to stand up for myself until a couple of years ago, but now it's here to stay. My daughter is an easy target and she's only 8, I hate to think what middle school will bring, she's just thinks everyone is nice.

Aimee- I'm sorry for what your going through with your grandfather. It really stinks watching them age. My grandmother is almost 90 and her mind still works 100%, but I think it's a blessing and a curse. I like that for the most part she still can still live on her own, but that's just it, she's on her own and she knows it. All of her friends have passed away and it's almost like she's just waiting her turn. Sometimes I think if her mind didn't work as well it would be a little easier for her. I guess the grass is always greener.

Lauren- I did good with eating yesterday too! This morning I went to have a bagel (the good imported NY bagel that I won't get to have after my parents house is sold) and I decided I only needed half- and it was actually enough.

Sheryl- I was thinking of you when I was in New York, the lady that lives next to my parents sells Mary Kay and she just got a new pink cadillac.

I'm off now, I have to go take the dog for his yearly checkup. I haven't seen the vet since she put my other dog down, so I'm bringing tissues. It's funny, I'm so good about bring my animals for checkups, but I haven't had one since my college physical.

Probably chicken for dinner, I don't know, I have to go to the store.
 

Glynis -- I wish Katie well and the strength to stand up to that "friend." Girls can be so mean, and Katie needs to learn that real friends don't treat people like that. Unfortunately, I can tell you from experience, that is something she has to figure out herself.

Nancy -- Congratulations on meeting your goal!

Kathy -- I hope you and Kyle feel better.

Maria -- I'm sorry you have to cancel your trip, but your recovery is more important. Take it easy.

Janice -- It must be so nice seeing Alex grow into his own...despite the girls.

I am taking Caili out of school at noon today so we can have an afternoon together. She wants to go skating. The kids want grilled chicken for dinner, so I have to get to the store before going to the school.
 
Glynis, sorry to hear that Katie's friend is bullying her. I hope it gets resolved soon. I was bullied so badly when I was about 10 or so that my parents ended up switching me to a different school! It was the same kind of stuff--clothes, hair, size, etc. It started out as verbal bullying and eventually escalated into physical bullying, so keep an eye on things. Not that I need to to tell you that! :)

Here is dinner last night. I made flounder coated in panko and almonds, dressed with just some lemon juice. It was delicious, but the accompanying salad was the real star. I know this is going to be in our regular rotation, especially when the summer tomatoes come in. Here is the recipe:

Jasper White's Portuguese Salad

1 large cucumber, peeled, sliced into 1/2 inch thick rounds, lightly salts for at least 15 minutes and patted dry

2 bell peppers, any color, roasted, peeled, and chopped into approx. 1" pieces

2 tomatoes, roasted until the skins blister and start to crack, peeled, seeded, and chopped into large pieces

1 handful of cilantro, roughly chopped

1 tbsp. red wine vinegar

2 tbsp. olive oil

1 tsp. sambal oleok

Combine everything in a large bowl and serve.

Im not too sure yet.I havent spoken to the surgeon since this latest flare up.
I am so lucky support wise,my family are all around me and my neighbours have all offered help with taking and collecting the boy from school....feelin quite loved !! :love:

Contrary to everything we've been told my doc says wrapping the rib cage actually makes the rib hurt worse in many cases, depending on where the fracture is. He gave Kyle some pain meds to take at bedtime and told him to use heat instead of ice from now on and no more wrapping/taping.:confused3

I was told the same when i hurt my ribs last year at training,its really just a wait till they heal...give Kyle a gentle hug from me.

Decided no Boston for me...just not there yet. I really feel like I'm pushing to hard.

Your post a bout watchin old movies together made me smile...then made me a wee bit sad.

I got a bunch of info for them today so me and mom are going to work on it tonight so she has a plan. His memory seems to be worsening by the hour. She is shocked at how much it's changed since she was with him in Nov.

DSD came over with my DGS to surprise us. We took the two boys in the front yard and let them dig in the mulch with new shovels and buckets. They had a ball being boys, they got filthy!!! Boy is it hot out there!!!

Vietnamese chili sauce. You should be able to find it in the Asian section of the grocery store. Here is a link to the brand that I use so you will know what the label looks like. It is GOOD!

Thanks! I have seen that before, I'll have to see if my grocery store has it, if not I have an Asian Grocery store not to far from me.

I looked back & I'm not sure who asked for the recipe Greg made me last week but here it is:

Fruit Cornbread Upside Down Cake:
Ingredients

For the cornbread:


  • 1 cup all-purpose flour
  • 1 cup stone-ground yellow cornmeal
  • 1 cup heavy cream
  • 2 eggs
  • 1/2 stick butter, melted
  • 2 tablespoons brown sugar
  • 1 teaspoon baking

  • 1 teaspoon salt
For the sauce:


  • 1/2 cup dark brown sugar, firmly packed
  • 1/2 stick butter
  • 1 (15.5 ounce) can fruit cocktail, drained
  • 1 (12-ounce) can maraschino cherries, drained
  • 1/2 cup chopped walnuts
  • 1/4 cup brandy
  • Whipped cream, for serving
  • Special equipment: 1 (9-inch) cast iron skillet
Directions

Preheat oven to 400 degrees F.
In a large bowl, mix together flour, cornmeal, heavy cream, eggs, butter, brown sugar, baking powder and salt.
In the cast iron skillet over medium-high heat, add sugar and butter and let melt. When melted, remove from heat and add remaining ingredients. Be sure to place maraschino cherries evenly throughout. Pour in batter and smooth top with a spatula. Bake 25 minutes, until cornbread is golden and a toothpick comes out clean.
To serve: place a platter over skillet and invert cake. It should slide out easily. Slice into wedges and serve warm with whipped cream.



***We didn't use whipped cream on top & used the no-fat 1/2 & 1/2 instead of the heavy cream the recipe calls for.
DH also didn't use the brandy in the sauce.
