Now that the vacation fun is over, back to attempting to eat healthy: Skinnytaste roasted chicken with brussels sprouts (from the Simple cookbook) and roasted butternut squash.
Ate a late lunch of F&W. Maybe we’ll get a salad at Publix for dinner. @tarheelmjfan I Drake Maye!!! Pats win again! They are talking MVP possibly! DH was a little upset he couldn’t watch the game. We are watching highlights now.
We went to bff’s for football and her husband’s birthday. We had wings, flatbread, jalapeños poppers, Caesar cups, Brie, chips and dip, and banana cream pie (birthday boy pick).
Yes, autumn is here in earnest and it's definitely time for warm, heartier meals. Tonight we had smoked sausage with sauerkraut and pierogi with mashed rutabaga on the side. We never eat stuff like this during the summer. The first couple of times in season are such a treat!
Today was a busy day. Woke up in the middle of last week and decided I needed a new winter wardrobe: stupid spending and wiser returning ensued.
Certainly I need to eat lighter for one of my acquisitions (a green sequined fringe skirt. O be still my heart) so pulled some chicken tortilla soup minus the tortilla but with added chopped avocado out of the freezer.
It’s rainy and chilly here so I made macaroni and cheese with salad and garlic knots.
I worked from home today and I meal prepped over lunch. I pounded out some chicken breasts put some stuffing in and rolled them. Tomorrow I’ll brush with melted butter and roll in bread crumbs then bake. Hoping this helps keep me on track.
We again had a late lunch at F & W…. Well isn’t that why I’m here??!! After a fabulous brunch with the most delicious pumpkin pie cold brew!! It may have been better than Starbucks.
Ordered some dyes online for my white swimwear. Should arrive tomorrow so wish me luck with free style tie dying. However it comes out it is going back into the suitcase; heck, it’s only color.

Tonight I took the chicken I prepped (thin chicken breasted stuffed with stuffing and rolled) yesterday and brushed melted butter in the rolled in bread crumbs and baked with asparagus. I also made mashed potatoes and used some orange cranberry sauce I canned last week.
I had today off after working 3 16 hour shifts (I do this every other weekend) I had Microwave Velveeta Shells and Cheese at about 1am. Then I got home at about 9am and crashed for a few hours. Then this afternoon I had to take my mother in law to a cardio appointment and afterwards we went to a Cousin's Maine Lobster that was in town today and brought it home (After stopping at McDonald's to get a Big Mac for my non-seafood eating Hubby)
I had Lobster Tots and Lobster grilled cheese with some Lobster Bisque. It was good, I didn't try the Bisque yet.
