Bethany I don't think living in those conditions is healthy. I also think it is grounds for breaking your lease. Make sure you are documenting all this for the building people so they don't say "but you never told us" and try to stick this on you two.

Hey ladies...just a quick check in to say I am back have been for about a week. Just overwhelmed with a lot of stuff, not going to drag you all down with it, and trying to get the house back in order from the trolls that come and party it seems while we are away.;)

I did send a pm to Lauren on Friday to let her know my heart and thoughts were with her, and when we got in last night the first thing I did was come here for the update!! He is just perfect!! I am glad to hear that Lauren is doing well. I look forward to more pics of our "nephew":)

I promise to be back on and planning to (or at least attempting to) catch up this week.

Kathy we would definitely miss you :hug: We miss all of our friends here when they don't check in.

Tonight is pot roast and noodles and something green.

I think it has finally stopped raining here. I have a swimming pool in my front yard and my planters in the back look like water buckets :sad2:

I made falafel also but they were way too stiff and dry. I have not made falafel since college--I obviously lost my touch! The tahini sauce with them was good though. Dry falafel:

Another failure was tabouli salad. I actually threw this one away before dinner--the bulghur wheat was nasty! It soaked for an hour and cooked for an additional 20 minutes, but it tasted so crunchy and raw. My fault--I should have tasted the bulghur before mixing it with the herbs, but I hate bulghur so I skipped that part! Lesson learned.

Finally, I made a whole grain pilaf to satisfy my parents' diet. It has a mix of whole grain rices, beluga lentils, onions, mint, parsely, pine nuts, currants, lemon, and cumin. It actually was pretty good. For a whole grain thing.

Hi, everyone. Sorry I haven't checked in before now. One of our neighbors was diagnosed with pancreatic cancer in November, and he's swiftly going downhill. A bunch of us have volunteered to bring in meals so that his wife doesn't have to worry about cooking. She can just concentrate on him and their 2 sons. So, today is my day. I've been running around to make a lasagna, jell-o salad, green salad and a dessert. I just doubled what my family is having, so it wasn't too much trouble. It's just heartbreaking to see what this family is going through, and they are being so brave about it all. I just want to help out in any way that I can!

Anyway, just popped on to see if there's an update on Lauren and baby Thomas. have a great Sunday, everybody.

Mom and Baby are doing well. Mom is resting she had to get general anesthesia but is now back in the room.

I will go back to reading now! I just couldn't hold back my excitement on this! I have to tell y'all I was lucky enough to be with Kat yesterday as texts were coming from Lauren. So I knew he was here & all was well, but had no idea how beautiful he was!!:goodvibes

It's definitely not a kind disease! Poor Richard is a shell of himself. He's lost so much weight he just looks like a walking skeleton. He's at peace with his death, and now he's just trying to help his wife and 2 sons be at peace with it.

Not so much. Kat- you check on us and keep us all in place. I cannot imagine anyone of us managing that....I just manage to keep me in one place ;)

I like bulghur ( My spelling must have been making you :dance3:) but it has to be soft enough. This time I bought Bob's Red Mill, which was good but "stiffer" than what I was using. I think in a salad it would need to sit overnight.

Your pilaf sounds good. I never thought of that for us but with the warm weather coming (please) that sounds like a good way to get a grain

:sad1: My DFIL passed on from pancreatic cancer and it was not pretty. It is good that you and your neighbors have taken meals off of the to do list for his wife, she has her plate full now. I will include your friends in my daily prayers.

Dinner was good. I made a spicy tilapia, asparagus, corn, mashed potatoes and a green salad. Dan grilled pork chops for the non fish eaters in the family.

I don't think I'll fix the fish this way again, it was spicy but the fish is so delicate that all you tasted was the spice mixture. I think if the fish was a full bodied fish it would have been okay. Salmon or swordfish would be good.

I did not get to the store, so I'm calling in a pizza delivery order. :rolleyes: I want something with a little more zest to it, but I'm too lazy to go out right now. I didn't sleep well last night so I'm tired so I want dinner to just come to me. :laughing:

Becky, I could have made a meal on those dips and pita bread! Yum....do you have a hummus recipe? Since I got a food processor for Christmas, I need to try to make my own.

Nancy, I'm giggling over Buddy's shed & truck! :laughing: He reminds me of my Daddy! As a kid, I was so embarrassed over his truck. It was a zillion years old, very rusty, he had built a wooden camper like thing on the back to keep things dry!! Oh and he had a doorknob for a gas cap. :sad2: He loved that truck and would get so mad if we said bad things about it. But now that is all very nice memories of him.

We had a blast yesterday at our Meet! :goodvibes It was so much fun. We sat there forever just talking & laughing. It was like getting together with friends you've known all your life!
