The What's for Dinner Thread - August 2014 (recipe index in OP)

I know what you mean about late lunches. I won't eat after 3PM and mostly have been doing two meals a day. My dinners are generally healthy so I'd rather not snack on unhealthy food which I know will deter my appetite.

I just hope that it's my dieting practices that are helping me lose weight and not some kind of sickness in my body. I'm avoiding overeating, but I don't feel like I'm doing quite enough to warrant the weight I'm losing. Maybe it's just in my head.

We were expecting some sausages we ordered online to be delivered today, but instead they shipped today. So they will be here Friday. I switched dinners and tonight we had a sausage and rice casserole dish

Don't discount the impact of healthy food and reduced portions on your weight loss. My son had a terrible scare earlier this year, and was treated for Diabetic ketoacidosis. That w not what suffered, but it was how he was rushed to the ER> He is being treed for type 2 diabetes and after a rough lifestyle change where the DR gave him a A for effort but a B- for implementation he is shedding pounds rapidly. He really is not exercising, but is moving way more than was prior to this happening, so altogether, he has lost a great deal of weight.

Buddy and I talked about our late afternoon lunches, and today it stops (I hope!) I liked our grilled ham and cheese last night, but it really is not dinner, and I woke up starving!
 
Morning ladies,

It is bitter cold here this morning. That dang Groundhog saw his shadow - so 6 more weeks of winter. But our winter really hasn't been that bad so I think we will live. :) We really need some snow. As much as I don't like to drive and be out in it we really need it. We were just on the verge of a drought last year, and if we don't get more snow it is going to really be a rough summer. It is to be in the 50's over the weekend. Which is good as we need to drain, clean and refill the hot tub.

I have no idea what happened to my posts the last few days, but they never showed up. Darn it!! I hope this one does!

Nan ~ I can't tell you how neat it is to have you back in the fold. Alison, PIO, Brandi and I have made a conscious effort to stay connected. I think FB has hurt us and people just don't post as much. I HATE FB!! Especially right now. I have very few friends - the ones I do have I really want, but even then I have had to unfollow a few due to being so tired of their hurtful triads. I will nOT play their game.
I find that on the weekends Doug and I could easily just eat 2 meals a day. I am not one that can eat as soon as I get up, so breakfast at 10ish is perfect and then a nice dinner at 2 is great. But where we are both still working that just doesn't work.

Alison ~ You totally made my mouth water with your prime rib sandwiches. Would you tell me (I am sure you already have, but do it again please) how you fix your prime rib. I just don't think mine turn out that great.
I pray that all is right with you and you are just losing weight because you are healthier.

Ethan has a basketball game that is home tonight so we are planning on going to that. Most of his games have been out of town and they start at 4pm, so I haven't been able to see many of them. But tonight I will be in the stands cheering him on!!

WFDT ~ We are all going out after the game. Yea, I don't have to cook.

Ellen- I know about that snow thing! We were on the verge of drought too, so water is necessary. I just am not a snow bunny!!! I have a problem with FB and some posts lately too. It's been pretty terrible from both sides I'm afraid, and I don't like it.

For me that's kind of nice. I'm getting to wear shirts with sleeves! That's kind of nice considering most of the year I'm wearing tank tops and capris!

I know what you mean. Though most of my friends are on the same side of the fence as me, their posts are still depressing. I try not to look at it too much.

Would you tell me (I am sure you already have, but do it again please) how you fix your prime rib.

The first thing I do is take it out of the fridge and let it come to room temperature. Then salt and pepper the outside and I take whole garlic cloves and stick them on the meat with toothpicks (see below).



Now this next part I developed part from Alton Brown's Good Eats and something I learned in a time of stress. Remember several years ago when my freezer died and I had to cook all the Turkeys, hams and Prime Ribs? That's how I learned this.

I heat the oven to 400 or 425 and put the roast in for 25 minutes. Then I take it out for several hours and let it return to room temperature. Then about two hours before cooking time I put it back in the oven at 200°. I let it cook for about an hour or until the instant read thermometer reads 125°. I like my meat red.



If you like it more done, let it go to 130° or 135°. Something I started at Christmas (mom suggested it and it was delicious! ) is making Yorkshire pudding with the beef fat. That takes half an hour so I let the meat rest while the rolls cook.
 
Good Evening Girls!

DInner last night was a compromise. I tool Rylee to gumbastics class because Nola was sick, so we had a chicken and stuffing casserole.

Today Donny and Anna insisted us over for a table games day. They supplied all kinds of finger food, MArisa bright some gynormous grinders and I brought chips dips and snacks. I also baked a cherry angel cake.

Tomorrow is Super Bowl, but I am not planning much for the evening. I have buffalo wings and some BBQ ribs and sweet and sour Meat balls. Snacks etc. I plan to bake an applesauce cake, and we will eat late in the afternoon until we want to give up. I think my neighbors will drop by.

Is anyone having a super bowl party?
 
We are not having a super bowl party. We will start watching it late enough in the game so that we can forward through all the pesky football parts and just see the commercials!

We got a delivery yesterday of 12 pounds of sausage. I only wanted three pounds (minimum order) of merguez, but Fran gets overzealous and we ended up with all this!



I use the merguez for Moroccan Cous Cous. I make a modified "mixed Grill" since I get full with just a piece of Braised Chicken and one sausage. This is Fran's plate.



This is my plate, I've added the spicy Harissa, plus you can also pour the braising broth on your plate to add a moistness.



Tonight we'll be having the Bacon Cheddar Wurst with some Costco Macaroni & Cheese, plus cole slaw on the side.

Well it's been a couple days since I checked in here! Sunday night I made a new recipe that Fran found and posted on FB for me. It was a Cabbage Roll Casserole. It was kind of meh.

Last night we went to Tortilla Joe's in DTD. I met a DIS friend there along with her traveling companions. Tonight I'm going to a Jazz Club to hear Tracey's (Trublu) son play in a jazz band. It's an Italian place so I may be having pasta!

We had a nice non Super Bowlbowl Sunday. I was not up to Buddy;s monoloigue concerning teh whole deflated thing so no football!

I have a lot left so last night and this evening we are having leftovers.

I have to work tomorrow, which is my normal day off. I am afraid I may be stuck at home on THursday, a Nor'easter is threatening. I see an end to my year end at work. I have all yearend payroll related work done, so all i need to do is transfer all my 2016 to folders and store them. It wil take time, but it is not difficult.

I have good days and bad days, I have been surprised that I am having more Bad days now in week three then I did in week in two.
I am resting a lot, hanging out on the couch reading and bing watching Downton Abby, I am in the last season of it right now.

I was totally swamped on Monday and yesterday I had a Dr. appointment in Omaha. We have had a tragedy here in our little town. A young man was tragically killed early Saturday morning. This is one of the draw backs/beauty of living in a small town. Things like this devastate us. The family is absolutely falling apart. It's so sad. Monday was spent in counseling the family and trying to make arrangements. The funeral will be here at our church tomorrow. It will be huge! Our sanctuary holds around 300, but it will also fill our Fellowship Hall at 200. If you all have a few prayers please send them our way. This is going to be a really tough one.

Yesterday I was in Omaha most of the day. We did come back to Lincoln and saw Matthew and Katlin. We went for dinner and sat and talked for over an hour. It was so nice to see them, as I hadn't seen them since Christmas. It was way to fast though.

Nan ~ Good luck with the year end stuff. I am just now finished with mine. It isn't hard work, just busy work. I saw on the news this morning that you are to be dumped on. Take care my friend.

Alison ~ your plate looks delicious. Lucky you for having dinner at DL with friends.

Brandi ~ Hopefully next week you will turn the corner and really start feeling better and on the road to normal.

Today is been a rough day to start I ended up taking a pain pill last night and today is not been much better. I'm really hoping that tonight or tomorrow I do turn that corner and start feeling better. thanks for checking in on me I hope you have a great day.
 
I'm so sorry to hear about the death and the funeral, Ellen. Prayers going your way.

Brandi, I hope you start feeling better soon....

We were going to have meatloaf, mashed potatoes, and green beans but I'm taking an application at 5:30. By the time we get home it will be too late to cook so now we're picking up food on the way home. Probably BBQ ribs.
 
What was for dinner last night? Swedish [turkey] meatballs with mashed potatoes....WFDT? Asian chicken with brown rice.

Well we weren't hungry enough to pick up takeout on the way home so I poked through my pantry and found a taco kit. I had everything on hand so dinner was tacos. Not too much food and easy to make.

Tonight we'll have the meatloaf, mashed potatoes, and green beans.
