The What's for Dinner Thread - August 2014 (recipe index in OP)

So glad to see you back Ellen! I was busy (sort of) and this thread was not in the forefront of my mind until Brandi asked for support. Then I realized we had seen you for a long long time. Good thing it was happy busy stuff!

Brandi, I hope you are recovering from your surgery and that this solves your pain.

Tonight is band and normally we would go through a drive thru, but Fran says she wants to save money and calories, so I'm make us roast beef and cheddar sandwiches with some leftover prime rib that I have. We'll eat those on our way to band.
 
Morning Ladies,

We are to get to almost 50 degrees out today. I know there will be people in shorts. :) But I am not complaining as we have been very cold.

Alison ~ Thanks for the welcome back. I really missed you all. I would give anything for your leftovers. My left overs are NOTHING like yours. Heck, I bet Doug would even eat them. We did have prime rib on New Years Eve and it was very good.

Wow! It's barely gotten out of the 50s here and I'm wearing long sleeve shirts, full length pants. I even have my gloves and scarf out of their drawer!

I would give anything for your leftovers. My left overs are NOTHING like yours.

Normally they're not that good, but I still have 6 turkeys from 2015 and I have one more Prime Rib which may be dated 2014 so it needs to be eaten soon. Fran buys too much that I can't cook or eat. I've had to step it up so we get rid of our turkey and ham packets.

WFDT? Costco Mac and cheese that I have in the freezer, sausages, and a salad.
 
Morning girls,

It is cold and foggy today. We aren't going to see the sun till maybe tomorrow afternoon. Kind of gloomy.......I wish I was home all snuggled in reading a good book. It's that kind of day.

Girls can you believe it - Harper Kay is 2 years old today. Wow that went to fast. She is such a sweet thing, and she loves her Poppy beyond belief. We had them a couple of weeks ago and every time it was time to rock I wanted so badly to cuddle with here but all she wanted was Poppy. The little traitor. I am so luck that we get to see her often. I know I am not the long-distance type of Nanny.

Ethan came home from school with the Influenza. Elizabeth took him to Urgent care and they just said, “yep, he has the flu.” They didn’t give him anything (Theraflu or Tama flu) I guess being 12 they just wanted him to deal with it. Poor baby he feels miserable. I sure hope I don’t get this but it is everywhere.

Alison ~ You feed the kitties the turkey don’t you? That is at least one way to use those up. I need to get one. We traveled for Thanksgiving and Stephanie and Marty had Prime Rib for Christmas. I am not a real fan of Turkey, but I like it a couple times a year. I love cooking one and then making up thanksgiving dinners and putting them in the freezer. There is nothing better than thanksgiving in June.

Brandi ~ I am so glad to see you posting a bit. Every day will be better than the last. Feel better soon my friend.

PIO ~ I am loving your pictures. I really do think you should quit your job and do this as a profession. You really have the eye for the beauty of the world. Just amazing.

howdy ladies,

I made it, I think I see the light on the other side. I can at least stay awake for a couple of hours now.

Pain pills every four hours, percocet, then 800mg of ibuprofen every 6 hours, and a slew of other stuff, cranberry pills, senakot, gasX, and something else.
David has to write everything down, he can't keep up with it in his head, we have alarams set to take pills, it is crazy, sleep, wake up take pills, drink a lot of wate, sleep, wake up pee, take drugs, sleep, all day long.

The pain meds made me have some nausea, and it was hard to read anything on the computer or my phone,.

The surgery was more invasive than what was planned. The Dr ended up finding all kinds of bad things in there and had to spend more time getting it out.
She was not sure if I had endometriosis before the surgery and told me that there was no way for sure to diagnosis it without going in and looking.

STOP READING HERE if you don't want to know about the surgery.......

Turns out that I had a very bad case, it had encased my left ovary, my left tube, all over my uterus, around and on my bladder, and even so much that it was putting kink in my rectum. She said it was really invasive and was causing me a lot of issues, and she was surprised I was not in severe pain, told me that I must have a very high tolerance for pain. So the uterus, cervix, both tubes and my left ovary is now gone. Good bye! Surgery was at 7:30 am, I was in recovery at noon, and in my room at 2:30 pm

The Dr told David that I would spend an extra night in the hospital since the surgery was so rough, but I did come home the next day. To leave the hospital, I had to have catheter removed, urinate on my own, walk to the end of the hall and back, pass gas, and cough. I was done with all of that by 8 am, which all the nurses and my Dr were surprised. she told me that I would feel much better than I had before, and I told her I was looking forward to it.

I'm glad you are feeling a little better. Sorry about all the meds and such. I stopped reading where you warned me. Can I have the Cliff notes version? Obviously the surgery had to do with your lady parts, was it a hysterectomy?
 
Ellen, not all our kitties like turkey. It was Olga that we were feeding the turkey, but she passed away. I'll just need to cook one every six weeks or so. We are also eating the leftovers in whatever I can think if to use them up. Enchiladas, egg foo young, turkey and dumplings, hot turkey sandwiches, turkey salad sandwiches...got any other suggestions?

Yes, with additional surgery on my bladder and rectum.

Hope you are having a good Monday

The wind is whipping and the rain is heavy and will be here all day long.

It took me all day, but I made spinach enchiladas. I had to do a little prepping, then rest, prepping, then rest, cooking, then rest, and final I ate, then went to sleep. LOL

But we enjoyed them.
 
Spinach enchiladas sounds good. Were they vegan or did you put cheese on them?

It rained all day yesterday here. We just hid inside the house.
 
I put vegan cheese on them, I made a tofu ricotta, cashew cream for the sour cream, and used a vegan pepper jack shredded cheese.
 
Morning everyone,

We had such a beautiful weekend. Weather wise and family wise. The temps were in the 50's and clear blue skies. We worked around the house on Saturday, which needed doing. We slept real good that night - we were pooped. I don't think I sat down once. On Sunday after church we headed to Kearney to celebrate Harper Kay's 2nd birthday. We had so much fun. Liam had gone the night before for a "sleepover" with Lilly. Her theme was Mickey/Minney Mouse. We had - Toodooles punch, Goofy's hats (red and green grapes on skewers), Mickey PP&J sandwiches (in the shape of Mickey), Hot Diggety Dogs (pigs in a blanket), Mickey's bow tie pasta and Minney Mouse cake. It was darling!! Stephanie had her dressed in Mickey tights and a Minney Mouse dress. So cute. We had a ball!! Even Ethan was able to come. He is feeling better but pretty wiped out. He didn't do much, but hadn't had a temp for 48 hours, so now he just needs to build back up. He had the Flu shot, but yes this was a strain that it didn't cover. But he is on the mend and was back in school yesterday. It is running rampent here!!

Today is nasty out. It is snowing as I type - really snowing!! We are to get 3-5" of the white stuff today. But it is Nebraska and it is winter so we expect it. The fields need the moisture.

Brandi ~ I am so glad to see you posting. What a surgery. You should feel like a completely new person. I had endometriosis also. Not a fun thing, but I felt so much better after it was gone. How long are you taking off of work? Don't rush it.

Alison ~ Turkey pot pies would be good. I made 4 the other day (chicken) and froze 3 of them. They freeze good and are so easy! I have been worried about you with the weather you are having. You are not in the brunt of it are you?

WFDT ~ I have chicken & stuffing in the crockpot, green beans and peach cobbler for desert.

Ellen, sounds like a lovely party you had! Funny how you said highs in the 50s were welcome. We've been in the 50s and everyone here is whining, we can't wait to be back in the 70s later this week!

Yes we were in the middle of the weather. Long Beach got 3.97 inches in a 24 hour period on Sunday. That is the most rain ever recorded here. Our infrastructure is not built to handle that. Several places flooded very badly. I was lucky that our house isn't located in one of those areas. There were other places around LA where there were problems, but that's what happens here when it rains more than half an inch or so.

Saturday afternoon I went to the grocery store and got everything we needed. Sunday we slept in, watched the rain from our bed for a while, and then went into the family room and binge watched Game of Thrones and some other TV shows. I just cooked us food and snacks all day and checked on the rain periodically. We have a large storm drain in front of the house and I kept checking to see that it wasn't clogged and water was pooling in the cul de sac. It didn't so that was good.

Good morning all,

We ended up with almost 5" of snow. Kind of took us all by surprise as they said we would get less than an inch. But it was the kind of snow that if you got out and scooped it was dry. I had a meeting here at the church last night and as we were all leaving it was misting and we knew it was going to be a mess today and it was. I had to take the boys to school and it is sheets of ice on the side streets that hadn't gotten scraped yesterday. We are to get above freezing this afternoon so hopefully it will be gone. It is cloudy and dreary right now so it better hurry.

Alison ~ I totally understand. When we are going into fall and the temps drop to 50 we all freeze. But when the temps have been single didget or below freezing for as long as we have, when the temps rise to 50, it's a dang heat wave. Funny creatures we are, huh?
I have really been thinking of you with all of the rain. Glad to know it hasn't affected you. Now that you have gotten the rain are you more able to take a nice soak in your walk-in tub? Glad to see you again going to band. I know you really enjoy it and miss it when you can't go.

It's Friday - Woohoo!!

The sun is shining this morning and we have a beautiful blue sky. But it is freezing out. The wind is blowing and with the windchill it is 5. And of course today is the day I have to get out and get Liam to preschool and then back home. Burrrrrrr! We are to be almost 50 on Sunday. That will feel so good and hopefully melt the ice that is still on the side streets.

We don't have a lot planned for the weekend and I am so looking forward to a quiet one. I am planning on making some freezer dump meals for the crockpot. I have found a neat site with about 30 different meals on it. I am really hoping for some good ones. I do love my crockpot. After working all day there is nothing better than walking in the door at night knowing that dinner is ready. Plus I usually don't give myself enough time in the morning to do a lot of prep work. I like the thought of dumping it in and - wala - dinner is set. I will let you know how it goes.

Brandi ~ I hope every day is a bit better than the last. My prayers will continue for a speedy recovery.

Alison & Fran ~ take care of each other. You are pretty special to all of us.

Pio ~ I heard yesterday that it was Australian Day. Happy day a day late.

Kimmar ~ Is you remodel completely finished now?

Hi folks! I've been reading every day but I forget to comment. I had to scramble for last night's dinner. I had planned on pork chops, stuffing and gravy, but Fran had some dental work done. I was going to the grocery store so instead I picked up some Ravioli and Alfredo sauce. Turns out I had beef Ravioli and cheese Ravioli in the freezer, but the one I bought was spinach and cheese so we had three kinds of Ravioli with a salad and Texas toast.

Tonight I hope we're going out to dinner. We're going to the LA Classic Car Show in downtown and I don't want to cook when we get home. There's some good restaurants up there so I'm really hoping to get a night off from cooking!

Getting better day by day here. Today I am making a Poblano casserole with blackbeans, cheese (vegan pepper jack) and brown rice.

Ellen, I am out of work for 6 weeks, and Monday will be two weeks since surgery. I am binge watching Downton Abbey when David is at work, he has only gone in 4 days since surgery. His boss has been great, letting him work from home so he can help me.
 
I'm glad you're feeling better, Brandi. Your meals sound very nice, though I couldn't do the meatless thing. I will be doing a few vegan or vegetarian meals over the next few weeks. I really want to be able to wear my light saber skirt (comfortably) on our Star Wars Day at Sea cruise.

So nice of David's employer to let him work from home and help you out.

Tonight will probably be the pork chops that we didn't eat Thursday night. I may fix them a different way than I had originally planned.
