The What's for Dinner Thread - August 2014 (recipe index in OP)

What a week!

This week, we signed up to a Music Festival for DS. It was rather intensive and immersive all-round. This year, DH and I signed up to participate in the guitar ensemble as well. Oh my! We really used the right side of the brain this week. I'm totally so left brained focussed that I forgot that, whilst incredibly fun, the right side of the brain can get just as tired as the left side of the brain. The experience made me appreciate how tiring the 4 day program is for DS. We only have to work on the ensemble piece for 90 minutes per day. DS has full mornings to get through. :faint:

It could be a very busy fortnight for me. DH is heading off on a work trip and I'll be doing to single parenting thing. Wish. me. luck!


What have we done for food this week?

Lunch have been salads, dips, hard boiled eggs, lots of fruit and cheese.
I made a big pot of homemade chicken broth/soup. I've used it as straight soup and also as stock for bean thread noodles. We also had baked potatoes with the standard trimmings. I was rather pleased that we only resorted to take-out once this week.

Right brained is not my way of life, I imagine that you were tired.

Funny, I get wired after all that right brain activity! Granted it's physically tiring to play for a long time, but normally we only play for 90 minutes.

Ellen - I'm glad your life has calmed down for a little while. I hate when days are so crazy!

Last night I roasted a whole chicken and some asparagus. When I was at Walmart, I found a package of GF Cornbread mix, so I decided to have it with dinner. OMG! It was soooooo good! I ate the whole piece of cornbread before I even dug into the chicken!

Tonight I had Prime Rib planned with Burgundy Mushrooms and Roasted Vegetables, but I'm considering switching that out for tomorrow night and making tomorrow night's dinner tonight. In that case we would be having Chicken Enchiladas Rancheras. Decisions Decisions.

DH is now in Silicon Valley on a work trip. I wish I were there with him; but there was no way I could leave my work in the state it is in. Single parenting is a lot of work! The difference is that DS14, nearly 15, is being incredibly helpful.

Tomorrow will be the first real test for how independent he is. He's going to be walking home from school, organising his afternoon tea, feeding the cats and making sure that the oven automatically turns on. Plus...he needs to wash out his lunch containers, practise music and finish any homework he needs to. I have every confidence in him!

Now.....if only he remembers to lock the door in the morning before he walks himself to school. :rotfl2:
 
ugggggggggggg...........it's Monday again. How come the weekends go so fast?

We had such a great time, and even won a bit. Matthew was the big winner though. He went home with more than he came with.

Wow, that was quite the surgery. How is he feeling now?

Alison ~ your Chicken Enchiladas sound so good. There are a few things I really miss and Mexican is one of them.

I am so hoping for a quieter week this week. I have so much that I have put off till I had time. I hope now I do.

.....darn, I keep forgetting that I bought one 10 days ago and it's in my freezer! :badpc:
