The What's for Dinner Thread - August 2014 (recipe index in OP)

I made my Szechwan chicken stir fry last night. I think I posted that when we did Asian month. I've taken to jut throwing in what ever veggies I have on hand . normally I do broccoli,red pepper and onion, but I also added celery an bean sprouts (leftover from the egg fu young).

Tonight we go to band so take out or drive through. I'm starting t sound almost normal again.

:wave: Evening everyone. It's Wednesday night and we had dinner at mum's. One of the family was celebrating a birthday; so we got some cake as well. It's been a while since I've had a vanilla sponge cake and whilst it was tasty, I think I can't eat that kind of sweet anymore. :(

Last night I had roasted cauliflower, bell peppers, and butternut squash. David had a chicken breast grilled with his dinner.

As far as the cook off, Anything is fine with me.

I'm interested, just don't have any suggestions, hey wait! How about repurposing leftovers? I have to make a turkey that weekend, we are talking the 24-26 right? I could do something with what I do with leftover turkey. :confused3

Repurposing leftovers sounds great to me!

I have some frozen meats in the freezer that I need to turn to a hot/sour soup. I may even have some leftover turkey in the mix as well.

I used to love hot and sour soup, David does not :( but I wonder can I make that without meat? or Meat broth?

You can totally make it without meat. Most places I have it, they serve a vegetarian version, just not vegan because the add an egg. It's mostly tofu and mushrooms. The hot and sour is done with white pepper and red wine vinegar. At least that's how my recipe goes.

Good morning my dear friends.

I am so sorry I just dropped off the face of the earth. I always say Easter/Lent is busier than Advent. I have been slammed at work so I had no time to get in here it play.

Saturday we celebrated Lilly's 3rd birthday. My oh my where did that 3 years go. The day was nice - windy but nice. Poppy and I stayed till after dinner and we dyed Easter Eggs. That was so much fun. Then I tried to explain to her about the Easter bunny and that he would hide the eggs. She was just precious trying to understand. Oh to be 3 again.

Sunday dawned a beautiful day and NO wind. We had a wonderful day! Poppy and I filled plastic eggs with treats for Lilly and Liam and after lunch we hid them outside. Oh what fun that was. We had a ball. After dinner that night we took a nice long walk. Lilly got a new "Hello Kitty" bike for birthday from her parents, she rode I walked.

Monday I had off - believe me I needed the day off. I worked at home but it was nice to be home.

Tuesday I had 3 Dr. Appointments - might as well get them all done at once. They were in Kearney so I pretty much had the whole day with Stephanie and the girls. This is Stephanie's last week of maternity leave. She is really wishing she could stay home.

So needless to say when I got back to work on Wednesday I was swamped!! I haven't had a moment I didn't have something to do. But today I am back to normal. I do know from now on my days are going to be very slow. It seems once Lent is over things really calm down. And then once school is out, it is like a ghost town here. WOOHOO!! That is when I will really get things done.

We have had some yucky weather since Sunday. That is the last day we saw the sun. It has rained and even yesterday it snowed most of the day and then last night we had a thunderstorm. ONLY in Nebraska!! We have gotten some very much needed moisture. But of course now the farmers are wanting dry and sunny weather to get into the fields and start planting.

Alison ~ I agree - normal is good. I think your idea of repurposing is wonderful. I love leftovers - Doug not so much but once in awhile he HAS to eat them. Especially not that we don't eat the same food.
So glad to see another trip has been planned. Fingers and anything else I can cross for this one to be a go.

Kimmar ~ How is your brother doing?

PIO ~ Isn't it just funny how our tastes change. I used to love cheeseburgers. Now when I see them on TV with French fries I can just feel my arteries clogging. Doesn't even look good anymore.

Brandi ~ You almost had me on the Creamy Pumpkin seed Alfredo until I saw the peas. I think I could leave them out though. But wow, the enchiladas sound amazing. I might just have to try that. I have been taking Sundays off as I love to cook and bake. I find that if I go off plan that one day (I say off plan, but really I just eat normally just not plan food) I really do better the rest of the week. Those enchiladas just might fit the bill. Thanks

We celebrated (very quietly) our 35th Anniversary on Saturday. Since it was Easter and Lilly's party we did nothing. But tomorrow we are going into Grand Island. Matthew and Katlin are meeting us. We are going to the Horse Races, going for a celebratory dinner, spending the night - we have reserved 2 king rooms, and going to the races again on Sunday. I can't wait!!!

Your busy days are almost over for awhile anyway! I know you are ready for them to get here.

yes you can leave the peas out of the Alfredo and it would be fine, you could really add anything green in its place. I think it is just a way to disguise some more veggies.
