The What's for Dinner Thread - August 2014 (recipe index in OP)

....WFDT? Boston Market chicken with loaded mashed potatoes, spinach with garlic, and veggie medley...

Kimmar ~ I love your house!! The cabinet that DH built is amazing. You are one lucky girl!! Thanks so much for sharing.
Wow, that was quite the surgery. How is he feeling now?

...thanks....he built quite a few things around the house...

...each day, his recuperation is a little better, but he can't really get around...

lets see Sunday night for dinner was quinoa and lemon garlic spinach (boston market copy cat), and David had some Ahi Tuna with his.
Monday night was veggie pizza! (Meatless Monday) for both of us with a big ole salad
Tonight is Brussell Sprouts, bell Peppers, and cucumbers for me and David will grill a pork chop with his.

Good morning my friends,

Beautiful morning here on the Plains. The sun is shining, no wind and clear skies. It is suppose to get into the 70's today. I am not complaining and neither is anyone else.

Kimmar ~ Well your husband does some beautiful work.
I will continue to keep your brother in my prayers.

Alison ~ Prime Rib on a Monday would NEVER happen here. And we are beef farmers. We tend to keep the primes for a special occasion.

Brandi ~ I had brussell sprouts last night and I thought of you. Wow, were they good. I roasted them and they were like candy.

WFDT ~ grilled hamburgers, mine OP, tomatoes, green beens and roasted beets.

Make it a great day!

Well with only two of us, not many special occasions and too much meat in our freezer, I do it when I can fit it in! :rotfl2:

Tonight we're going to drive through McDonald's. I will be having a salad.

Ellen, to me that is the best way to eat them. Glad they made you think of me. Hope you enjoyed the 70's

We did have too many special occasions either, it is hard to do too much with just two people.

Busy, busy here! And I'm tired...so I'll try and catch up tomorrow.

Ellen - It's not DS that worries me. As I expected, he's been a fantastic individual so far and has managed to get himself to school, lock up the house, feed the cats, turn on the dishwasher, organise breakfast and his afternoon tea, plus get his homework and music practise in with very little supervision from me and only a little prompting. It's DH I worry about! I don't think he can cope without his DS to fuss after!!! :rotfl2:
In many regards, I do like when DH is away on a work trip and we stay home. It's moments like this that I know that my influence as a parent has struck home and I can see that DS is actually a pretty well-adjusted teenager. I did have a chat with him on Monday about how he has a different pattern of behaviour when DH is home. He knows that he can play his dad like a master fiddler and he likes having his dad run after him doing stuff for him. At the end of the day, I can't change DH. I can only make sure that DS is taught how to manage things for himself IF he wants to.

Alison - Hope that you and Fran are doing well. Not long now till your birthday celebrations!

Brandi - I've gone back to being good with my diet this week. I'm eating a lot of colour; and have been eating fresh/raw for lunch. With all the nightly preparation I'm doing for the next day, it's been easy to toss some salad into a container for me to take into work the next day. I've added some falafel to lunch on one day, hard boiled eggs on another and avocado on the 3rd. Small steps....but its a start.

Kimmar - Hope that your brother is doing well! I'm thinking of you all.

WFDT? Wednesday night and we were at my mother's for dinner. Rice, stir fry and curry. YUM!

Good afternoon ladies,

PIO ~ This doesn't surprise me one bit. You and DH should be very proud of the wonderful young man you have.
Sometimes the biggest baby we have is the DH. I TOTALLY understand this!!

Alison ~ How is Fran feeling? I hope each day is better that the one before.

Brandi ~ Nope, the only way I will eat them. :snooty: :)

Kimmar ~ Prayers will continue for your brother.

Really boring day here today. I am lovvvvving it!!I have gotten a few things finished that I had put off for days like today. All of the kiddos will be here soon and the church will be buzzing. Only 5 more weeks till school is out and then it truly is like a ghost town. I think I will take a nice long vacation. I have been looking into Disneyland. Doug is adamant that he does NOT want to go, but I think once he was there he would love it. I found flights from Denver for $164 RT/PP. Wow that is amazing and a 1/3 of what it costs to go to Florida. I am going to get a bunch of estimates and present my case. I do know that if I book it and tell him - he will go. But I want him to want to also. Ya know what I mean?

WFDT ~ Spaghetti with meatballs, salad and breadsticks for Doug.

Make it a great day!!

That sounds like very solid plans and congrats for making good choices.

I must say that those are amazing flights and I would jump on that. Flights from the East Coast to the West coast are so darn expensive. I need to get back out there.

a partner that loves Disney is sometimes hard to find, but I was lucky finding David, he already had bought into DVC when we met. :)

Stormy ugly Thursday,

Man it looks like it is 7pm outside. We had thunderstorms - the real bright kind - all through the night. This rain is a million dollar rain. We needed it SO bad. It is suppose to rain all day and night, and even forecasted for tomorrow also. Matthew is on his way to Vegas today. I just talked to him and he just left Lincoln in sunny, blue skies. Hopefully he won't have bad weather as he is flying.

Brandi ~ Ya know, I think Doug thinks he won't like it. He LOVES WDW - I mean really loves it, and I just think he thinks that DL won't be as much fun. I don't really know, as every time I bring it up he says - I don't know!!?? But like everything else, if I really want to go and keep on it - he will go. And I know he will love it once we get there.

Hope everyone else has a wonderful day!!

WFDT ~ Hamburgers, roasted beets, sweet potato fries and a salad.

Make it a great day!!

:wave2: Hope everyone is well!

Ellen - I would totally go to Disneyland. Comparisons are always inevitable but DL and WDW offer totally different experiences. Whilst I do have a slight preference for DLR, I LOVE them both!

Brandi - I've bought fresh mushrooms this week to add to the lettuce and cucumber and 'protein' (egg, falafel etc) salad. The local Lebanese place sells organic homemade hummus and I would love to take a small container of hummus to dip the mushrooms into.

Alison - Hope Fran is getting better all the time.

It's been a full-on week as a single parent this week. Even with DS helping, there always seems to be something to get done all the time.

Life has been pretty mundane here....cooking, cleaning, sleeping, working. But I'm hoping that all the hard work during the week means that both DS and I can have a little time to ourselves this weekend. As far as I know, there are no more chores to be done today except for organising dinner. DS and I even sat down this morning and planned out our breakfast, lunch and dinner menu for the next week. And then I headed to the supermarket and got all the items I needed to make prepare/cook to the menu plan. I will still need to get things like bread and some more fresh fruit, but I think we're set on the kitchen front now.

I've been very good with food all week, mostly cooking in and organising lunch for school and work, so DS and I decided we were definitely doing take-out for dinner tonight. We haven't decided what just yet.

Ellen, I would love it if you came out here! I would totally meet up with you and show you guys a good time at the park!

PIO, I'm glad that the single parenting is going well and that you have raised a good young man, even of he takes advantage of his father when he can.

Brandi, its so nice that you and David had great compatibility before you mer. I remember thinking that I would never get back to WDW when I was with my first girlfriend and then I meet Fran who is like the epitome of Disney lover!

Tonight I made a turkey. I think I missed making one in March so I think I have seven left in the freezer. I splurged and made homemade mashed potatoes. They were so good! Now I have to put it away for tonight and then tomorrow cut it all up for Olga.

The things we do for our cats.

Alison - I'm feeding my cats on a raw meat diet. It's 1 kg raw meat with 200g of livers/kidneys with taurine, Salmon Oil, vitamin B and a couple other vitamins. We mix it, freeze it and bring it out to feed the cats. Like you say...the things we do for our cats. :rotfl2:

Wow! That's much more involved than we do with our cats
Only four of them actually eat human food and we feed them Cooked stuff, not raw. Olga seems to like the turkey and chicken so we cut it up for her.

I make hummus every week and David and I enjoy it with Celery and Carrots. It is very easy to make, and now I just throw stuff in the blender and spin, I don't even measure anymore.
