Ok gals! I need a favor....

My Grandpa gets out of rehab next week and I am going to visit at the end of the week. I'd like to fix some meals and put them in the freezer for him. I'm already planning on a soup or stew of some sort and the meatloaf muffins (although I need a side other than the mashed potatoes I normally serve with them).

I need some ideas that are easy to divide into individual portions/meals, and have clear and easy reheat instructions- Gramps is doing well, but I don't want to confuse him.

And keep in mind this is food for a 80something male. Who tends to be crotchety at times....;)

I don't get home often enough so I'm hoping this will let him know that I think about him everyday and I care about him even though I don't get to call or visit everyday.

Hey y'all,

Real quick check in, I have to get to physical therapy on my hand this morning. Finally, the dr's office screwed up the coding so I'm really behind starting on this. Although using my hand a lot on the trip, seems to have worked out most of the pain.

Ann, I'm sorry about the baptism mess-up. I feel really bad for your brother this really must be difficult for him.:hug:

Lori, How about meatballs with gravy and spaghetti sauce, shepherds pie, shredded chicken in sauces would be good over rice or pasta...look at a cooking once a month website for other ideas...:hug:
 

Has anyone had any trouble making ADR's online? I did them for our last trip with no problem but had to call and make them this morning. When I'd try and click on the calendar to pick my date it wouldn't let me, I had to enter the date manually. Then when it checked for availability it kept sending me a quote file that my computer can't open???????

Kat, people over on the Podcast board have been having problems since the system went to 180 days a few days ago.
 
Now my shoulder is aching me...what the heck? My hand is still pretty bad and now my shoulder. I guess I should go to the dr...maybe when I come back. I will soak in the hot tub when I go.

Sounds like you have carpal tunnel, it can go all the way up your arms and in to your shoulders.

How about some breads, sweet ones, some corn bread maybe. Cut them up into individual pieces or make muffins out of the batter. You could always put together the main dish, sides and a muffin in quart or snack bags then put the meals together in gallon ziploc bags.

They decided DSIL will come to the Christening and stand up for DD, and another one of my DBs (Luke's godfather) will stand in for my DB. My heart aches for my DB, they have not told DS yet that he can not play sports going forward. It is going to crush him because he is a very competitive and active kid.

Poor kid! I am glad they were able to work something out, but sorry they won't all be there for Emma's big day.

Marilyn, I think that might be the case. I usually have a hogh tolerance for pain but this wrist thing is BAD! And things keep happening like the baby flinging back while I am holding him, my friends dog jumping on me...OUCH! I could cry in pain. I know I am stupid for not going to the dr but I will take my naproxen and go get a splint to wear.

OK, gotta take Riley out - I've been trying to clean all morning and not getting far...Maybe I should go put a bra on so the girls aren't flopping around when the pre k gets off the bus and I am out there with the dog! :scared1::lmao::rotfl:
 
Kathy- Here's the shrimp scampi recipe, it's not the one I usually make but it was tasty. It's from barefoot contessa. I cut the recipe in half since the kiddo doesn't eat shrimp.

Baked Shrimp Scampi
2 pounds (12 to 15 per pound) shrimp in the shell
3 tablespoons good olive oil
2 tablespoons dry white wine
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallots
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko
Lemon wedges, for serving
Preheat the oven to 425 degrees F.

Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

Lori, does your Grand Dad like pot roast? That freezes great & has the veggies already in there. How about chicken pot pies? Again veggies & just a heat up required.
 
Lori- I sometimes make a big batch of chili and freeze it in single portion size containers for my gram. I make some corn muffins to go with it, I wrap them seperate then put them all in a ziploc bag.

Lauren- Hope your wrist doesn't get in the way of a fun vacation.

Aimee- Enjoy your new shoes, I know nothing about shoes except flipflops in the summer and sneakers in the winter.

Ann- I'm sorry for your brother, I hope he enjoys the game knowing your okay with going. Who schedules a game on a Sunday anyway?

Steak and cheese subs with carmalized onions for dinner and whatever veggie is hiding in the freezer, probably broccoli.

I know I sort of dropped out of sight with no explanation. Some of you have kept up to date a bit with me on FB.

I owe huge apologies for not keeping in touch on here and being in "print" letting you know that you all have been in my heart, thoughts, and prayers.
I have lurked almost daily and just have not been able to get myself to jump back in. I feel awful for leaning on you all through some rough times then not being here for you all when you needed to lean.(I can say that I have prayed daily for you all, and have read all posts and sent strength to those who needed it)

Kat has talked to me quite a bit about coming back, so I am here with my tail between my legs and my head hanging. I do promise to be a better friend to you all. :grouphug:

So if you all don't mind, I would love to come home again?!!?

PS- supper is roasted chicken breasts with fresh herbs under the skin, cheese rice and fresh squash and peas. (those of you on FB might have seen my posts about being sick with bacterial bronchitis and sinus infection..I feel like death, but this chicken has to be cooked tonight and Ross loves it this way...so like any other mother we suck it up, lol)

Ugh, yesterday my SisIL said they'd have plenty of food & I only needed to bring adult beverages. Today she emails me & wants the veggie chili I made several years back. Of course I can't find the recipe, probably because I winged it. Now gotta go grocery shopping & cook chili. I was going to make us a curry for dinner but now we'll probably eat veggie chili.

Lauren, Hopefully you just sprained something!:hug: But please go or at least call your dr!!
