Disneyland's Blue Bayou Au Gratin Potatoes

3 lbs. potatoes, peeled and thinly sliced
1 onion, thinly sliced
1 tbsp. Butter (for dish)
2 Cups heavy cream
1 1/4 tbsp. salt
1/8 tbsp. fresh ground black pepper
1/4 tbsp. fresh thyme leaves
2 tbsp. granulated garlic
1 tbsp. jalapeno pepper, finely diced
4 oz. parmesan cheese, grated


Mix potatoes, onions and jalapeno; place in buttered baking dish. Mix cream, garlic, salt, black pepper and thyme leaves. Pour mixture over potatoes and onions; cover.
Put in preheated 400 degree oven; bake for 1 1/2 hours or until pototoes are tender. Remove potatoes from oven; sprinkle with parmesan cheese. Return dish to oven uncovered and bake 10 more minutes or until brown.


These are really good, I have made them, minus the jalepeno :scared: My family loves them too!

No, the casserole recipe isn't my own. Actually, it's a pretty popular recipe. I first saw this recipe in a Taste of Home magazine. The recipe in the magazine is actually made with asparagus, but I decided to use broccoli instead. I later found out that most people make this dish with broccoli.

Here's another good recipe. This chili is pretty spicy if you make it as written. My family and I can't take things too hot, so I omit the jalapenos. I know, that's some sort of sin, right? :rotfl2:


Cha Cha's White Chicken Chili (from allrecipes.com)


1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese




-Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.

-Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

That's ok- I forget to quote certain posts at times. We did have fun at DHS (it was me and two suitemates). We ate at Sci-Fi Dine-In Theater. I don't know why I've read so many bad reviews of that place, because it was so much fun!!!!!! The atmosphere was amazing and we had the best server ever, so that added to the experience. I had the Italian Grilled Chicken Sandwich and fries- the sandwich had bruschetta on it in place of a sauce. :faint: Perfection on a ciabatta bun!!!! And my cherry Coke was phenomenal..... so yeah. We did Voyage of the Little Mermaid (first time in 12 years since I'd seen it so it had changed), then my suitemates went to Fantasmic while I did Rock 'N Roller Coaster. It was worth the 45 minute single-rider line wait (the stand-by was 80 minutes!), as always.

-We STRONGLY suspect that Jenny's work crush has a crush on her!!!

-Creepy Elvis guy has been leaving Jenny alone. In fact, he seems to be avoiding her. Thank goodness!!

-Jenny informed us of the new Earthquake attraction at Universal Studios featuring The Rock. (I HAVE to see that!!)

-Jacoby 46 (aka Mrs. Ellsbury here on the UC thread) got pretty sick the other day. Her daughter has been sick, too. Please keep them in your prayers.

-Jacoby 46 (Mrs. Ellsbury) made a new Jacoby button siggie like Soarin's.

-We started posting silly signs and funny videos (starting on page 102). I posted some clips from Perfect Strangers. Remember that show? You gotta see the Balki music video!!!

-Honu had some great ideas for Unicorn T-shirts. (page 106)

I think that's pretty much everything. I hope that I didn't leave anyting out. You already know about Honu's big news, so I think that you're all caught up.

We certainly didn't have 600 check-ins today. It was pretty dead. Thankfully. Now I have two days off!!!:woohoo: And it was so funny, I was texting Honu on the bus ride home, and next thing I knew, my phone was vibrating and it was her calling me since she couldn't text and drive. We talked for over two hours!!!! My ear is hot and red!!:rotfl: I've never been one to talk on the phone much but I loved talking to her. We talked about pretty much everything under the sun. And know I'm doing philosophy homework and waiting for it to be 9pm so I can listen to Glenn Beck on the radio. I hate philosophy. I don't think this deep.:laughing:

We were a little hesitant about eating there after seeing some of the reviews, but we still wanted to experience that place at least once. That Italian chicken sandwich sounds great! Awww, too bad your daughter isn't into the Little Mermaid that much anymore. Well, maybe someday she'll like it again. Tell her that there are lots of cool, adult DISers who still like the Little Mermaid. Maybe that will get her interested in it again.
