I have no idea what we'll be having for dinner tonight. Probably just leftovers. I really have no desire to cook, and it looks like I'll be spending my day at the doctor's office with Leslie today. She has been running a temperature of between 100-104 for the past 4 days. It comes and it goes depending on the medication I give her, but it just won't go away!!! I'm getting really frustrated and so is she! She just doesn't feel very well! I'm starting to get concerned since she's not eating. She's drinking water all the time, so I'm not worried about dehydration, but she hasn't eaten a meal since Saturday. She has had bites of things, but not enough to my mind. I guess I'm concerned since she's such a little bit of a thing. She's 5 years old and only weighs 32 pounds. She can't afford to lose much!
 
We met Wendie and her family this morning. They are great! I want to adopt Ross! Wendie- when you get home and read this just know you're in for trouble....he's just like me and I was a handful!:lmao:

We all had breakfast and I have pics (of the people, not the breakfast) that I'll post when we get back to NOLA.

We're having leftovers tonight. We had a Glazed Ham, 'Ohana scalloped potatoes, broccoli & cheese, pineapple stuffing, cream cheese corn and a pumpkin crunch cake. The scalloped potatoes were the big hit - they are incredible. Has anyone made them using half & half instead of the heavy cream????

Like Nancy, I don't feel like leaving the house today, but Caili has skating this afternoon. She is already lobbying to skip it, which she has never done before, so that tells you how lazy we are all feeling today.

Dinner tonight is the leftovers from yesterday for me. I'll have to figure something else out for the kids...probably pasta.

Tonight I am making chicken enchiladas - and probably making mexican rice to go with it. I've never done more than Rice a Roni so I hope it turns out! I still have company, but it's my sister and we're both being lazy today. It's rainy and cold.
 
Well, lunch is turkey rice soup made last night from the leftover turkey dinner after our guests left.
Tonights dinner is fish sticks (DS' request :eek: ) and fish filets with leftover salad, rice and stuffing.
Tomorrow will be turkey and gravy, also made last night.

Ok, here are some of our favorites:

Cinnamon Raisin Chicken

1/2 C. chopped onion
3 garlic cloves, minced
3/4 tsp. ground cinnamon
1/8 tsp. pepper
1 Tbs. vegetable oil
4 boneless skinless chicken breast halves
3/4 C. orange juice
1/4 C. raisins

Ini a skillet, saute onion, garlic, cinnamon and pepper in oil until onion is tender. Add chicken; turn to coat. Cook, uncovered, for 10 minutes or until juices run clear. Add orange juice and raisins. Cook over low heat for 5-10 minutes or until heated through.


Slow Cooker Lemonade Chicken

6 boneless skinless chicken breast halves
3/4 C. lemonade concentrate
3 Tbs. ketchup
2 Tbs. brown sugar
1 Tbs. cider vinegar
2 Tbs. cornstarch
2 Tbs. cold water

Place chicken in slow cooker. Combine the lemonade, ketchup, brown sugar and vinegar; pour over chicken. Cover and cook on low for 3-5 hours or until chicken juices run clear. Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until thickened. Return chicken to slow cooker; heat through.


Creamy Tomato Chicken

6 boneless skinless chicken breast halves
2 Tbs. vegetable oil
1 can Italian diced tomatoes, undrained
1 can cream of chicken soup, undiluted
1/8 tsp. ground cinnamon
6 slices mozzarella cheese
Hot noodles

In a large skillet, cook chicken in oil over medium heat until juices run clear. Remove and keep warm. Combine the tomatoes, soup and cinnamon; add to the skillet. Cook and stir until heated through. Return chicken to skillet; top with cheese. Cover and heat until the cheese is melted. Serve over noodles.


Italian Pineapple Chicken

4 boneless skinless chicken breast halves
1/2 C. Italian salad dressing
2 Tbs. olive or vegetable oil
1 can sliced pineapple, drained
1/3 C. shredded Swiss Cheese, optional

Flatten chicken to 1/2-inch thickness. Pour salad dressing into a shallow bowl; dip chicken in dressing. In a large skillet, heat oil. Add chicken; cook over medium-high heat for 5-7 minutes on each side or until juices run clear. Remove and keep warm. Add pineapple slices to the skillet; cook for 30 seconds on each side or until lightly browned. Place a slice on each chicken breast half. Sprinkle with cheese, if desired.


Chicken in Creamy Gravy

4 boneless skinless chicken breast halves
1 Tbs. canola oil
1 can cream of chicken and broccoli soup, undiluted
1/4 C. fat-free milk
2 tsp. lemon juice
1/8 tsp. lemon pepper

In a skillet, cook chicken in oil until browned on both sides, about 10 minutes; drain. In a bowl, combine soup, milk, lemon juice and pepper. Pour over chicken. Reduce heat; cover and simmer until chicken juices run clear, about 5 minutes.


Tangy Almond Chicken

6 boneless skinless chicken breasts
3 Tbs. butter
1 jar currant jelly
1/2 C. prepared mustard
1/2 C. slivered, toasted almonds
3 Tbs. brown sugar
2 Tbs. lemon juice
1/2 tsp. ground cinnamon

In a large skillet, brown chicken in butter for 4 minutes on each side. Remove and keep warm. Add the remaining ingredients to the skillet. Cook and stir until jelly is melted and mixture is smooth, about 2 minutes. Bring to a boil. Return chicken to pan. Reduce heat; cover and simmer for 10-12 minutes or until chicken juices run clear.

Thanks Kathy, Janice and Stephanie for your wonderful cards. My mailbox was filled with cards today. It was a nice way to keep that Christmas glow.

Tomorrow we're going to the Nutcracker, so that should keep the spirit going as well.

Tonight we had jambalaya with leftover ham. I think I should have added some chicken.

I think I may take it easy tonight I'm tired from not doing much for 4 days. We had fun playing disney pictionary with my neighbors last night. I think I've finally found a game I have a chance at.:rotfl:

leftover ham and potatoes here too!! I made way too much food!!

I put a pineapple slice on a slice of ham, put it under the broiler, yummm!
 
Good thing I love ham. I think 1 more night of ham than I will retire the rest to the soup pot.;)
 
I don't want to see ham again for a LONG time. Now those 'Ohana potatoes are another story. There wasn't even a spoonful left, they were that good.:goodvibes

Tomorrow we're going to the Nutcracker, so that should keep the spirit going as well.

I loved the Nutcracker! Kady liked it but she loves the music. Buddy was suffering through the ballet and then we put the story on the CD player on the way home. I did not know it was possible to cringe in so many ways :lmao::lmao::lmao:

I wanted to share that we got wonderful news on Christmas Eve. My sister heard from Timmy, which is a little unusual. He calls but between her hours and his, he ends up leaving messages. Then she is upset, but this time he reached her. He is scheduled to come home in less than two months which is earlier than we expected. he prepared her for a very long tour so this is welcome news. Please keep him in your prayers. Until he is back home we are going to worry, but now there is a light at the end on the tunnel.

Dinner tonight was chicken soup and sandwiches fore DH and sandwiches for me. DD went tot he movies with Kady so they will eat out. We also had some dessert left from yesterday. I have been eating cookies all day long :upsidedow

I'm just so glad that Christmas is over it was a rough couple of days. Next hurdle is the anniversary of Mom's death. Sorry for being so depressing everyone.:sad1:
