I got some other news today that a dear friend of mine may have had a miscarriage, still praying and waiting on more info.

Sheryl - The entertainment center is beautiful!!! I'm doing the traditional NYD stuff too. Johnny HAS to have pork roast, cabbage and black-eye peas. NY Eve will be my choice - Prime Rib, Bacon-Wrapped Scallops and lots of Champagne!:woohoo:

Glynis - I hope Leslie starts feeling better soon - keep her drugged.;) Your fondues sound awesome!

Kathy, It does get a little better as the years pass. But wow good for you not smoking! That is a wonderful gift to yourself & Johnny & Kyle!!! Boy I want to come to your house for New Year's Eve!!!! That is my kind of meal!!! Tell how to you cook the Prime Rib & the Scallops?
 
I already told Mom I'd cook the cabbage to which she replied with raised eyebrows "YOU'RE going to cook it? Don't you like my cabbage?" :sad2: Well no I don't & she won't like mine & will be sure that everyone knows that she doesn't like it. What ya gonna do?.... ;)

Buddy and I were talking about the Holidays and he said it gets easier. He told me that there is always an empty place in his heart but that it is not as bad as it was. He said that I should expect to miss her every Holiday but that it would not hurt the same. I figure he knows what he is talking about, his Dad id gone for 20 years. He adored that wonderful man and has no family that he can really turn to during the Holidays but his cousin. :grouphug::grouphug:

The scallops are Becky's recipe on pg. 616. The Prime Rib is an old fool-proof recipe I've used for years:

Fool-Proof Prime Rib

1 prime rib roast (Bone-in)
EVOO
Salt, cayenne pepper, black pepper and garlic powder

Preheat oven to 500 degrees. Rub the roast generously with EVOO & seasonings. Place the meat on a rack in a roasting pan, uncovered, on the bottom shelf of the oven.

Cook the meat at 500 degrees for five minutes per pound, then turn the oven off. DO NOT OPEN THE OVEN and leave it in the oven for a total cooking-resting time of two hours. If your rack weighs 5 lbs, cook it for 25 minutes, turn oven off, then let it remain in the oven for 1 hour and 35 minutes. The meat continues to cook after the oven is turned off. The total time in the oven is always 2 hours no matter the weight of the meat. This gives you a perfectly medium-rare rib roast!

Well, I did take Leslie to the doctor and she has a MASSIVE ear infection in her right ear. Apparently, she either has a high pain tolerance, or the fever was making her so loopy that she really didn't feel anything. Her eardrum is bulging and has a large blister formed on it. The doctor says it will probably burst sometime today unless we're really lucky! She's now on heavy duty antibiotics and pain meds. It's kind of funny to see a 5 year old "drunk" on meds!!

Ouch! Poor kid. I hope she feels better soon.

Dinner plans for tonight have changed - DH wants to go out instead of cook:rotfl: so we're going to Acme Oyster House. I promised DD we'd take her before she goes back to school. They do pretty good chargrilled oysters.
We are always home on NY eve; don't know what we're doing NYD yet; we were expecting a crowd, but found out on Christmas that the crowd was going out of town. I know we'll do cabbage and black eye peas. Daughter IL was talking about making gumbo, but I know she's working; so I'm not sure if she'll make it and send with DS or what.

I can give you an awesome lasagna recipe; but its a bit of work. Let me know if you want me to post it.

Hi everyone -

Just wanted to let you all know that the friend I was talking about earlier who had a miscarriage was our sweet Lauren. She was so excited about this pregnancy but wanted to have it confirmed before she told everyone. Unfortunately this pregnancy was not meant to be. She & Tom are looking forward to having a baby and I'm sure she'll be back with us when she's feeling up to her chatty self again. Please keep her & Tom in your prayers.

I just wanted to check in and say hi. I have had a rough few days that started with family drama on Xmas (we left my sisters before dessert...my brother and sister - yes the A SS that has given me trouble before - started trouble again).

This was the start and the end was that I had a miscarriage today. We are pretty bummed but know in time things will work out. At least we know I can get pg with my thyroid problem, right?

I haven't been cooking but have to get back on track with healthier eating since we have gained quite a bit with our trip, Xmas and I took advantage of eating for 2 for about a week ;) ...

We are doing OK but please keep up in your thoughts to help us be strong. Love you guys!

Lauren! I am so sorry that you are having to go through this. I know how tough it is. I'm so glad that you are focusing on the positive! It will happen for you and Tom, I'm just sure of it!

It's simply a large rump or chuck roast. This year it was beef, but in the past we've also had elk. DH didn't manage to bag an elk this year, so we had to make do with beef. Oh well. We call it roast beast since my kids love How the Grinch Stole Christmas. We've tried to talk them into turkey for Christmas dinner, but they won't hear of it. It has to be roast beast!

Haven't decided on dinner for tonight, but I'm thinking of soup. It's just bitterly cold here, and I need some comfort food!

We really don't do much for NYD. Just kind of nibble around on appetizer kinds of foods and sandwiches. However, on NYE, we do fondue! I make a cheese fondue, a pizza fondue, a chocolate fondue, and either a caramel or strawberry fondue. We also do a hot oil fondue to cook meats, etc. The kids love it!!! It's always fun to eat off a stick! Don't tell my kids, but I also set the clock ahead a few hours, so when they think it's midnight, it's actually 9:00. They feel like they are celebrating, but I get them to bed at a decent hour. My parents began a tradition of a visit by Baby New Year. He brings a small gift to each child, so I like to get my kids in bed early to carry on that tradition.

Guess I need to get the fondue stuff this week, huh? I'm running out of time!

Olivia still has a horrible cough, the fever thankfully is gone.
