MMMMM, everything sounds so good today. Gives me some ideas for later this week!

We had grilled Thai ginger beef kabobs, corn on the cob and pierogies.

LOL, sorry I had to go to work after dinner but here is the recipe I used for the cake part (I'm addicted to allrecipes.com, LOL) ~ http://cake.allrecipes.com/az/ButterCake.asp
I topped it with the Jell-O pudding that you cook (one 4-serving box, cooked).
After the cake was done, I poked holes in it, and poured the warm pudding over it ~ we ate it while it was still warm and oh my goodness, it was delicious!! :love:
 
Tonight I am making the Cheesy Chicken Dinner (Crockpot) on page 1. I'm serving it with rotini and French bread :)

Yesterday was a crazy day! DGD had fallen the evening before, and her gum was still a little swollen in the AM so I took her to the dentist for an xray. SHe was fine but the day went off kilter from there. It was so hot that my neighbor and I spent the afternoon watching the girls play in their pool and run under the sprinklers. After my DH got home he took her down to the lake for a few hours, so we took advantage of Subway, finished off with homemade Frostys (1 cup milk, 1/2 cup Quik, 4 cps vanilla ice cream. Blend well, and freeze at least 1 hour. You can adjust the proportions to suit your own taste.). Tonite is the chicken caserole.
 

I have cube steak ready to be baked. I will just have the kids pop it in the oven and make some mashed potatoes and if things workout, I can come home to an already cooked dinner!

Today I am going to roast a chicken (using lots of melted butter infused with rosemary, garlic, paprika, fresh cracked pepper and kosher salt) ~ I'll also make baked potatoes and we'll finish off the pot of baked beans from a couple of days ago. :sunny:
 
It is going to be soooo hot today, there is no way I am turning the oven on! I have some flounder that I am going to roll around a shrimp "mousse" and then put into foil packets with some white wine, butter, and herbs, then cooking it on the grill. I am also making a salad from mache, orange slices, and almonds.
 
I am making pasta with bacon, avocado and grape tomatoes. If I have any salad ingredients in the house, we will have salad too. If I don't, we won't. It is way too hot to go out to the store.
 
Chicken fried rice with mixed veggies :)
 
Steamed corn on the cob, green beans, fresh baked rolls, leftover pasta salad, tossed salad, and peaches for dessert. Yes, I went to the farmer's market. Lol. Got to eat it while it's fresh!
 
Tilapia with crabmeat stuffing, broccoli, and some kind of noodles.

That sounds like my kind of dinner, yum! I wish I was getting out of work early enough to hit the farmer's market...
 
My pasta dish was really yummy, and easy, so I'll post the recipe. I have to give credit to DSis for suggesting a bacon and avocado sandwich, so that inspired this dish.

Bacon, Avocado and Tomato Pasta

Serves 2

1/2 box pasta (I used farfalle)
6 slices bacon (mine were small, if the slices are larger when cooked you would probably only need 4)
1/2 pint grape tomatoes, cut into fourths
1 ripe, but still firm, avocado
2 tbsp fresh lemon juice
chives, cut into small pieces
olive oil
salt
pepper

In boiling salted water, cook the pasta according to box directions.
At the same time, cook bacon in a skillet on medium heat until crisp, about ten minutes.

Drain pasta and either return to pot or put in serving bowl. Add enough olive oil so the pasta doesn't stick.

When crisp, put bacon on paper towels to cool slightly.

Peel avocado, remove pit and dice into 1/4 inch chunks. Add to pasta, along with tomatoes, lemon juice and a handful of chives.

Crumble bacon and add to pasta. Toss gently to combine and add salt and pepper to taste. Serve at room temp.

This was good, but when I make it again, I will add some lemon zest and some red pepper flakes. I think that will make it even better.
 
Just wanted to report that we tried the pork chops, apple pie filling (we used sugar free), and stuffing recipe and it was VERY good. If you like the combination of apples & pork you would probably like this. Easy peasy and very yummy!
 
Where on earth has this month gone??

Tonight we are having meatloaf with cheddar garlic smashed potatoes. I have a favor to ask. For those of you that put strips of bacon on top of your meatloaf, woud mind posting how you do it? I've never done this before and was wondering if it's good.

Tonite I want to try the pork chop and apple recipe. I need to shop so if the chops look good, we'll have this with a salad and fresh veggie.
