Tonight I am grilling DH a strip steak--I've go it marinating in a mix from the Babbo cookbook--red pepper flakes, sugar, salt, garlic, porcini mushroom powder, black pepper, and olive oil.
I'm also trying a new recipe--it's basically cornbread, but instead of cooking it in the oven, you wrap small servings of the batter in corn husks and then grill them--quasi tamales, I guess. If it comes out good, I will post the recipe.

Other sides will be sweet corn with butter, green beans, and sliced tomatoes.
 
Instead of having dinner, I'm going out to coffee tonight with my dad. I'll have what I usually have, a nonfat cappuccino. He'll probably get some coffee and a toffee crunch bar or a scone.
 
We had grilled Arctic char, grilled Italian sausage for non-seafood-unless-it's-fried DS, sauteed spinach, macaroni and cheese for the kids, and garlic bread. It was good.
 
Tonight I am making the smoky chicken patties (see page 1 for recipe- Rachael Ray funs will know this one as "Boo Patties") and potato wedges. We are going out to a light lunch with my ILs :)

I have not figured out the side dishes yet, but the main course is going to be this recipe:

Grilled Striped Bass with Garlic-Mustard Sauce

Striped bass (figure about 6 ounces per person)
Olive oil, chopped fresh thyme, salt and pepper for marinating

Marinate the striped bass in olive oil, thyme, salt and pepper for an hour or so, then grill until just cooked through, about 10 minutes, turning once.

Garlic-Mustard sauce (for six servings)

7 tablespoons butter
4 cloves of garlic, finely chopped
1/4 cup dijon mustard
1 tbsp. fresh thyme, finely chopped
2 tsp. lemon zest

Melt the butter and stir in the remaining ingredients. Whisk over medium heat until blended, about 2 minutes.

Serve sauce over fish
 
Well, yesterday my BF and I ended up taking my 3 yo nephew to Chili's. He had a little cabin fever since his little sister was born last week and he doesn't go out like he used to, or get attention like he used to. So, he wanted to go to the bookstore (B&N) and we took him there and to Chili's.

I had Margarita chicken with pico de gallo over rice and black beans. It was pretty good. Their mango iced tea is delicious.

So, today, I'm grilling that turkey london broil for sure. And I am going out to get sweet corn now. :goodvibes
 
I made baked chicken breasts seasoned with Mrs. Dash and a drizzle of Italian dressing, macaroni & cheese and baked beans. :sunny:

It is currently 95 degrees here and super humid...I'm thinking dessert will be cones from the local ice cream place. :thumbsup2
 
Ancho rubbed Pork and mashed potato. It's in the toaster oven and the house smells awesome right now. :thumbsup2
 
DD and SIL cooked a great meal tonit for us. We had crostini with fresh mozzerella, garlic chopped tomato and fresh basil; grilled chicken thighs, noodles dressed with sour cream and chives, sweet corn on the cob, and salad. Watermelon for dessert.

The fish was SO yummy. You know summer is really here in New England when you can get striped bass. It's here for such a short time, I could eat it every night!

Our sides were green beans with basil, summer squash and zucchini, and scallion potato pancake. DSis didn't like the potato pancake, but the rest of us thought it was good.
 
I had takeout from Macaroni Grill. It was sooo good! I had bowtie pasta with sundried tomatoes with a roasted garlic cream sauce. Then for dessert I had the lemon passion cake which was a citrus cake soaked in sweet cream, topped with lemon mousse and whipped cream. YUM! :)
 
Where on earth has this month gone??

Yesterday our lunch ended up being pretty heavy, we went to Chili's, so we just had a snack for dinner. So tonight I am going to make the Smoky Chicken Patties and potato wedges I was planning on making last night.

ETA: Minnie, I LOOOOOOOOOOVE the lemon cake at the Macaroni Grill. That is my absolute favorite local restaurant :)

:rotfl2: I find that a strike in the kitchen is an effective way to get my family to appreciate my efforts to feed them well. My DH usually has to take us to dinner because they are all pretty inept with meal prep.
 
Tonite I am fixing a chicken an stuffing casserole with summer squash and onions, along with a salad of some kind. We still have corn that was not cooked yesterday, so I will steam it.

We are so fortunate because our good friends have a large family farm in the next town, so we have the best produce all summer and into the fall. I cannot wait until our native tomatos are ready, but we are a bit behind because of the rain.

It's so good isn't it!? The Macaroni Grill is my favorite local restaurant too. :)

Tonight I'm having leftover pasta from the Macaroni Grill. I can't wait! I don't have any leftover dessert, I ate it all. :blush: It was so delicious.
 
Tonight we are grilling Cornell chicken and having sides of sliced tomatoes, macaroni and cheese, and asparagus.
 
I made enchiladas smothered in colby jack shreds and lots of sauce ~ yum!!

I also made a homemade yellow cake with chocolate pudding poured in ~ double yum!! :cloud9:
