I am making grilled swordfish with avocado butter, mashed sweet potatoes, and sugar snap peas. DD will have haddock and a baked potato and the peas. I am not sure about DS. He spent the afternoon at a pool party, so he may not be hungry...he'll be sugared up though.
 
Tonight I am making the sausage subs I thought I would make yesterday. Depending on my laziness factor when I get home, I might make some french fries to go with. Otherwise, it is potato chips.
 
I got the recipe for the Vodka sauce a couple of months ago from allrecipe.

Here it is, Enjoy. :thumbsup2

makes about 10 servings

Ingredients

1/2 cup butter
1 onion, diced
1 cup vodka
2 (28 ounce) cans crushed tomatoes
1 pint heavy cream

(It's not listed in the original recipe here, but I always also add some chopped fresh Italian herbs too like basil, parsley and a little bit of garlic)

Directions:In a skillet over medium heat, saute onion in butter until slightly brown and soft. Pour in vodka and let cook for 10 minutes. Mix in crushed tomatoes and cook for 30 minutes. Pour in heavy cream and cook for another 30 minutes.

Could you possibly substitute tomato sauce for the crushed tomatoes? I like tomato products, but not the actual tomato. Strange, aren't I? :)
 

This is a wonderful thread, and I can't believe that I haven't stumbled across it before now! Would you mind if I joined in? I have gathered some wonderful recipes here and am getting some great ideas for dinners. Thanks, everyone!

Tonight for dinner we are having Poor Man's Stroganoff with Brown Rice. Dessert will be ice cream sundaes with leftover ice cream from my daughter's ice cream social birthday party!

I'm not the OP, but just wanted to say that I hate raw tomatoes, too. (It's the "gel" that surrounds the seeds for me.) However, I love salsa, tomato sauces, etc. Crushed tomatoes are much more like plain tomato sauce than raw tomatoes, or even the whole tomatoes in the can because they don't have the same texture- no seeds, gel or skins. I even found I can eat raw tomatoes if I blanch, skin and seed them.

You probably could sub plain sauce, (without seasonings, sugar, etc.) but then the texture would be more souplike. I think you might like the crushed tomatoes anyway, if you're like me. It adds that slight chunky texture in it. If you don't mind the pieces in salsa, it might not bug you.

I'll be busy tomorrow so I'll post my dinner now. :)

I will be making kielbasa and pierogies with kale. (Rachael Ray has a recipe for her Polish Stir Fry with Herbs and Sour Cream- I can share it with you if you like- but I've made a few tiny changes. :) ) I might need to start the meal with a shot of vodka for tradition, though. I am making an altered version of loosemeat sandwiches and I'll cook up a pan of fried potatoes with lots of garlic to go with them. :sunny:
 
Okay here is the Broiled Pizza Burger Recipe

1 pound ground beef
1 tablespoon chopped onion
2 teaspoons cornstarch
1 can(14- 1/2ounces) diced tomatos, undrained
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon onion salt
1 bag mozzerella shreddered cheese Or any cheese you want to use.
4 rolls split
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Sprinkle with cornstarch. Stir in tomatos, oregano,salt,onion salt. Cook uncovered, for 5 minutes or until slightly thickened . Add 1/2 the bag of cheese:cook and stir until cheese is melted and blended.
Place hamburger buns cut side up on a baking sheet: spoon about 1/4 cup meat mixture onto each bun half. Top each bun with remaining cheese over the meat mixture. Broil 6-8 minutes.Enjoy :wave:
 
I am feeling lazy today, so I am just reheating my leftover Indian food from the other night. I'm not sure what I'll make the kids, but it will have to be something DS likes. He returned from the party hungry yesterday (he only had one pringle) and had a bit of a meltdown when he found out we were having haddock and baked potatoes. He ate it though.

Yummo!!! That sounds wonderful! I'll definitely be trying this one!
 
I haven't quite decided, yet. My choices are Nutty Salmon with brown rice pilaf and broccoflower, or Chicken with Paprika Cream, brown rice pilaf and broccoflower. It will depend on how I feel when it's time to cook.

Knowing me, I'll probably go with the salmon as I can do it in the microwave and not heat up the house.
 
I am not sure what we are having. I was planning on weekly grocery shopping today and buying something to cook and eat outdoors, but the little one is sick, so that is out.
 
This is our favorite pasta dish. Tonight we are having this with shrimp! We make it with either chicken or shrimp. I found this recipe in a Sam's Club buisness member publication, but I have altered the recipe a little for our taste.

Penne a la Vodka

1 pound boneless/skinless chicken breast
1/2 C olive oil
2 tsp Kosher salt
2 Tbsp. minced garlic
1 Red thai chile, seeded and chopped
1/2 tsp black pepper
1 lb penne pasta
3 Tbsp unsalted butter
3 14.5 oz cans diced tomatoes
2 bay leaves
2 Tbsp Vodka
1 Tbsp lemon zest
1/8 C fresh basil


1. Marinate the chicken in olive oil, salt, garlic, chile, and pepper in refrigerator for 1-2 hours.

2. Pull out chicken to place on grill, and grill until done, and then cut into bite size pieces. Pour marinade into a skillet and saute for 4-5 minutes.

3. Add the tomatoes, butter, and bay leaves to the skillet and simmer gently for 5 minutes.

4. Add the vodka and lemon zest, bring to a boil for 1 minute.

5. Remove from the heat, add basil and set aside for 3-4 minutes.

6. Add the drained, cooked pasta, and the grilled chicken.

7. Top with Romano or Parmesean cheese (optional) and serve.
 
I am grumpy and I have a headache, so I am not cooking. STRIKE! Good thing DH doesn't mind taking me out to dinner. :)
