I just have to say that Glynis's Ranch Potato Salad was a big hit here! Littlest DD had a huge plate of it, DH said I definitely have to make it again and even oldest DD's friend who was here for dinner told me 3 times how good it was! Thank you, Glynis!! :thumbsup2
 
Sorru I'm just now getting to this, but the DIS was down a long time this morning and I had to get to work. Tonight we are having hamburgers with sauteed onions, peppers, and mushrooms.

We're having hamburgers with sweet potato hash

Sweet Potato Hash

2 sweet potatoes
1 tomato (squeeze to get seeds and juice out)
1 red pepper
1 zuchini
1 C corn
1/2 C lima beans
olive or peanut oil
salt and pepper

Dice all vegetables into small 1/4 inch pieces. Coat your pan with oil (I prefer peanut) and start your sweet potatoes first. Let those cook for about 5 minutes then throw in the rest of your vegetables. Just let them cook until they are tender and then add your salt & pepper to taste.

Also, if you like certain vegetables more than others, feel free to change how much of what you put in. Sometimes I put cooked & chopped bacon in too. It adds a different flavor but it is excellent with or without.

I'm telling you, this stuff ROCKS. It is sooooo good.

We are having stuffed shells, spinach salad with tomatoes from our garden mushrooms and garlic bread.
 
I'm making a Mexican Cornbread casserole. I have no recipe and am just throwing it together tonight. It'll have a bottom layer of shredded chicken breast and taco sauce, then a layer of shredded cheese, then the top layer will be a very moist Mexican cornbread. I've been gone and busy all day and hadn't thought about dinner at all...had to use some chicken in the fridge.
 
I made grilled chicken on a bed of angel hair pasta with olive oil, garlic, fresh basil and fresh tomatoes. We had our usual broccoli too. The pasta was so good I could have eaten all of it myself.
 
I needed quick and easy tonight, so I fixed grilled cheese and tomato soup.

I made mine a little different. My stomach cannot "stomach" really hot and spicy foods, nor shriimp (even though I LOOOVE it), so here are the things I switched.

*I left out the hot peppers and added 1 huge green bell pepper.

*Instead of andouille sausage I used smoked turkey sausage. Since I didn't put shrimp in it, I diced the whole pack instead of half. And I stirred it INTO the pasta, not on top.

*I don't cook with beer so I just used 1 1/2 cups of chicken stock.

*My husband and I don't like tomatoes (the actual tomato, not sauce or soup, etc.), so I added at 15 oz. can of tomato sauce instead of the crushed tomatoes.

*Since the heavy cream is added to "cool off" the spicyness (is that a word?) I only added a few tablespoons because mine wasn't hot. Oh and I used half-and-half instead of cream.

Ok, I think I got it all. Seriously, it was so yummy I thought my husband was going to have a foodgasm!! :)

Here you go!!! I never posted it in the official list, for some reason. If you have any questions, please ask!! Oh, FYI, when I made it this last time I forgot to get any cream or half-and-half and it was still delish, so feel free to omit it :)
 
I recycled our leftover meatloaf and made tacos. Really good. We finished off the peach crisp with some ice cream afterwards. :)

Tonight I made a salad using Romaine lettuce, grilled chicken, Caesar Salad dressing, croutons, feta cheese, cukes, grape tomatoes, purple onions
It was very good and easy (a quick clean up too!)
 
We did a mexican inspired meal tonight. My partner made some homemade guacamole (2 avocados, juice of 1/2 a lime, 1 small diced onion, and 3 or 4 of our fresh tomatoes from the garden, diced)which we had with tortilla chips, and I made stuffed papayas:

2 papayas, split in half, seeds removed
1/2 lb. lean ground beef
fresh ginger root, grated, to taste
chili powder
raspberry chipotle salsa

Brown the ground beef with the chili powder, grate the ginger into the beef, add 1/4 cup of the salsa. Arrange the papaya halves in a baking pan skin-side down, scoop beef mixture into centers of papaya halves and bake in 350 degree oven for 15 minutes.
 
Tonight will be beef stew here. We were going to have it last night- but with my son's escapades I never made a "real" dinner last night!
 
Tonight we are having the nutty chicken recipe with my kinky succotash (both recipes on page 1). My husband's number 1 favorite!! I am doubling the recipe so we will have leftovers tomorrow.

Today we're having a rotisserie chicken from the deli and on the side I'll make some baked potatoes and sweet corn. :sunny:
 
Last night I had pasta with cherry tomatoes from the garden, basil, garlic, olives, and onions, along with some pesto bread.

Tonight DH is able to catch a flight back from Mexico in time for a late dinner (hooray!), so I am serving grilled jumbo shrimp with garlic aioli, an heirloom tomato salad, and a sesame ficelle bread from my favorite bakery (Iggys, for those of you from around Boston).
 
We're having crockpot pepper steak over noodles. No iea on the sides yet. Something green and then strawberry shortcake, I guess.
 
Hi everyone..I'm back from disney..We got upgraded to an Executive suite at CSR...It was the sze of 4 rooms,had 2 living rooms 2 bathrooms and a large dining room table..It was awesome...
Today I'm detoxng from all the good and bad for me food..I think we will have turkey and hummis wraps
