We're having Santa Fe Chicken over rice tonight. It's a new recipe, and it smells good.

Tomorrow is the first day of school. I'm thinking we may do breakfast for supper tomorrow night. I could make ahead a breakfast casserole and just do fruit to go with it.
 
beef kabobs marinated in Greek seasonings, corn on the cob, sliced tomatoes and cukes. I was thinking twice baked potatoes them took a nap and now its too late. Oh well.
 
Tonight we had honey lime grilled chicken breasts, fresh corn on the cob, homemade mac and cheese(with penne pasta, my favorite) and hot dogs for my two youngest. For dessert we had grilled fresh pineapple and caramel sauce...YUMMMMMMM..... :goodvibes
 

I made meatloaf, squash casserole, (with plans for a green bean dish) and a peach crisp before we headed out for some fun today. We stayed out too long and ate out!

So it's on the menu for tomorrow night! :sunny: :thumbsup2
 
Tonight we are having leftover Jambasta. Boy was it good!!!

Pot roast, potatoes and carrots. I started the roast in the crock pot yesterday so it should be very tender!
 
Roast beef, mashed potatoes, corn, and rolls. Today is carb-o-rama comfort food day. ;)
 
we had pot roast last night so tonight we will be having that over egg noodles with sauce...yum!
 
DS started 4K today, so we are having one of his favorites tonight: spaghetti! I put the sauce in the crockpot this morning, so all I have to do when we get home is boil the noodles and toss a salad. :sunny:
 
Tonight I'm making a slab of ribs on the grill, and I'm also going to make Glynis's Ranch Potato salad that she posted on page 98...sounds yummy! :thumbsup2
 
I'm going to make mini meatball burgers, mac & cheese, and corn. I was going to make burger dogs, but I already have the mini rolls that I need to use up.

Has anyone ever made a recipe with meatballs and Ramen noodles? I remember seeing one somewhere, but don't remember where.
 
Tonight we're having green beans, potatoes and smoked sausage in the crockpot along with sliced tomatoes and fried zucchini. We'll also have fresh pineapple for dessert again(They were on sale this weekend at our local grocery, so I bought 3!!). :)
 
Breakfast casserole, toast or biscuits (depends on how much time I have, I guess), and fruit.

The meatballs with ramen noodles sounds good. Post it here if you find it, okay? It did make me think of a chicken and ramen recipe I used to have. I'll have to look for that one.

I've never actually made them before. It's just an idea that came to me when I was trying to figure out what to do with the little rolls I have. I'm going to use my meatball recipe, but make them bigger and flatter. I haven't decided whether I'm going to grill them or bake them in the oven, like I do with the regular meatballs.
Here's the meatball recipe:

1 egg
1/4 cup milk
1/2 cup dry bread crumbs (I use Progresso Italian Style)
1 Tablespoon dried onion flakes
3/4 teaspoon salt
1 - 1½ lbs. ground chuck

Beat egg, add milk, onion, salt and bread crumbs - mix well. Add ground beef and combine. Make meatballs, any size. Bake at 375º for 25 minutes (for golf ball size).
 
We didn't end up on the Cape today because it is pretty overcast and a little too cool for swimming. Hence, no fried clams for my dinner. Instead, I am planning on making a cheddar cheese souffle, an arugula salad, and a tomato confit that I will serve on crusty bread.

I could give you the recipe, but I have to warn you that I can never make it come out right. I have stood next to my Mom and watched her make them, and I still can't duplicate it. They either come out underdone, or the eggplant mysteriously disappears inside the coating. If you still want it, I will post it, as long as you don't hold me responsible if the recipe doesn't work for you either! :)
