I think I'm going to make a Mexican casserole today ~

Line the bottom of the pan with tortilla strips.
1st layer is browned ground beef seasoned with a packet of fajita seasoning and a small can of green chilies.
2nd layer is refried beans and the 3rd layer is shredded colby jack cheese.
Bake until cheese is melted and bubbly and then top it with sour cream and fresh chopped tomatoes.

I'll make a pan of homemade cornbread on the side. :sunny:
 
LAst evening we went to the Chowder Pot for dinner. MMMMMMM! I had lobster bisque baked potatoe and coconut crusted talapia with mango salsa. It was amazing, and so much to take home.

Today it is muggy so I may avoid outdoor cooking. I am in the mood for a roast pork, but we'll see when I finally get to the weekly shopping.

MMMMM, this sounds really good and EASY! Might have to try it. I was thinking about Mexican Salsa burgers for tonight which is a Dream Dinners entree. Ground beef with spices, topped with cheese, jalepenos and salsa. They had samples and I didnt think I would like the jalepenos on it but YUM!!!!
 
We are having ham with ruby red glaze, boiled potatoes, and a green salad for dinner today. For dessert we are finishing up my DD's ice cream birthday cake.

I have a recipe for derby pie if you want it. I don't know if it's the same as Lindsay's, but mine is really good if you like chocolate chip cookies. Let me know if you want it!
 

Yesterday I made DH a seared rib eye steak, and a panko-crusted chicken breast with honey mustard sauce for me. Sides were macaroni and cheese, seared spinach, garlic bread, and spicy corn-zucchini saute.

Today we are having grilled striped bass with the same sauce we had last week, along with mashed sweet potatoes, green beans, and my Mom is making her unduplicatable eggplant sticks.
 
Tonite we are having spaghetti and sausage with my homemade red sauce. I use lots of garlic, onions and mushrooms, and grate fresh parmesano regiano (sp) into it at the table. I also will have garlic bread and a green salad. Ice cream sundaes for dessert.

Glynis, I would like your recipe for the Derby Pie if you please :goodvibes.
 
I ate at my moms tonight because DH was at the Met game. We had Ceasar salad, meatloaf mashed potatos and corn. :wave:
 
Tonight I am making us hamburgers and potato wedges. I am so tired I can't hardly move so I need something easy tonight.

I think today I'll just make a pot of goulash (nothing fancy...I'll just toss in whatever I have in the pantry and fridge) ~ and I'll make some bread to go with it. :sunny:
 
Tonite I'll have hamburgers and turkeyburgers on the grill, corn on the cob and sliced tomato and cucumbers. I like potato salad with it, but I think I'll fix french fries so the little one will be happy. Homemade frosty's for a late dessert.
 
We had a very busy weekend that I'm still trying to recover from, plus I work until 6 today, so tonight's dinner will be an easy one--kielbasa and mac & cheese--maybe tomorrow I'll be more ambitious!

Thanks, Lindsay, for the vegetable soup recipe--will definitely use it when fall sets in!

My cousin and her husband have a lobster boat and are charging 4.99 per pound right now- so we are getting 8 of the little darlings!! :teeth:

My son who is 9 is allergic to shellfish has requested corn chowder so that is simmering right now.
 
I don't know. I need to go grocery shopping and then maybe I'll decide. Tomorrow is going to be Italian Beef though. I am already slow cooking the beef. ;) Tonight may just end up being a "fend" night where everyone has to fend for themselves. ;)
 
I'm making LaJolla CHicken, which is chicken breast with spinach sun dried tomatoes ,garlic and wine..Plus Orzo with Spinach,sun dried tomatoes,Wine and garlic..It's SOooooooooooooooo goood

La Jolla Chicken (Chicken with Spinach and Sun Dried Tomatoes)
6 chicken breasts..This
1 tbsp olive oil
3 cloves garlic,minced
1 package spinach
1 cup chicken broth
1/2 Cup sun dried tomatoes
1/2 cup white wine
Parmesan cheese
1) Grill chicken in a large skillet with olive oil and garlic until it gets nice and brown on both sides
2) When the chicken is about half done add remaining ingredients and simmer for about 15 minutes..The wine can be replaced with chicken broth if need be
3) Serve chicken with spinach/sun dried tomatoes on top..Throw some parmesan cheese on top

Derby Pie

1 unbaked 9 inch pie shell
1/2 C. flour
1 C. sugar
2 eggs, slightly beaten
1/2 C. butter, melted and cooled
1 C. chopped nuts (I like pecans)
1 C. chocolate chips
1 tsp. vanilla

Mix all ingredients together and pour into unbaked pie shell. Bake 45-50 minutes at 350 until set. Serve warm with ice cream.
 
Today is Pioneer day here in Utah. We are having fried chicken, ranch potato salad, a jell-o mold and root beer floats for dessert while we watch fireworks. If I get really ambitious, I'll whip up some strawberry shortcake as well. I've got the jell-o in the fridge, the chicken marinating in buttermilk, and the bacon cooked for the potato salad. Should be easy to throw together later and put in the picnic basket to take to the fireworks.

This does not sound like pie......looks like we are talking about a warm little circle of heaven topped with ice cream. Maybe guild the lily with some whipped cream? ;) I think I am going to try this little gem this weekend. Thank you for sharing.

Wow, great deal on the lobster! I LOVE lobster!!! Wish we could get it for that price.

I'm making lasagna, salad and silver dollar rolls tonight. I need to get to the store first, so I'd better get my butt off the computer.

This is so odd!! I made this exact pie yesterday to take to a get together. It is awesome!! The best way to describe it is it taste like the middle of a chocolate chip cookie that's not quite done :)
 
Tonight I am grilling cornish hens and serving them with a garlic aioli. We are also going to grill some corn on the cob, and I will slice up some tomatoes and cucumbers.
