Quick eats tonight! Steaks on the grill, sliced potatoes and onions on the grill, and sweet corn on the cob.
 
Just discovered this wonderful thread & have copied many recipes. I work until 6 almost every week day, so week night cooking is pretty quick & basic for me. I try to cook "good" food on the weekends & use my crockpot whenever I can during the week.

Tonight is spaghetti with meat sauce, salad, and garlic bread at our house.

Lindsay, could you please post your vegetable soup recipe? We eat a lot of soups & stews in the fall & winter & I am always looking for new recipes.

What a coincidence, I was just about to ask that question! :) Lindsay, I'd love to have your recipe for vegetable soup. I'm a vegetarian and I can't believe I don't even have a recipe for vegetable soup! :blush:


Today it is so hot outside, it's 100 degrees right now and it's supposed to be even hotter. I'm going to have a veggie sandwich with onions, tomatoes, avocado, lettuce and garlic hummus on pita bread. On the side, I'm having raspberries, blueberries, watermelon and some other fresh fruit. :sunny:
 
Thanks for asking! :) This soup is very forgiving. Feel free to add/substitue/take away any of the veggies/seasonings you don't care for.

1 lb. lean ground beef/ground turkey (brown it and let it drain on paper towels. You don't have to put meat in this if you don't want to, but if you do, sprinkle it w/ salt and pepper while browning)

Heat a soup pot on medium high heat. Saute the following ingredients for about 5 minutes or so. Just long enough for the onions to get tender and the carrots not be so hard.

3-5 carrots, chopped
1 medium sized sweet onion, chopped
1 bay leaf

Add your beef/turkey to your veggies and combine. Add about 2 cups of beefstock and a 16 oz. can of tomato sauce (I think it's 16 oz., it's the soup can size). Bring to a boil. When carrots are good and tender add some frozen corn and frozen peas (I use the little baby peas). I never measure these, I just put in enough to look like there's plenty. Then add a can (or 2, your choice) of diced potatoes, drained. When all the frozen veggies are heated through, your soup is done.

Sometimes I add some fresh or dried flat-leaf parsley at the very end. It brightens the soup up.

Thank you for the recipe Lindsay, it sounds wonderful and easy to make. :) Adding parsley at the end is a really good idea, I would have never of thought of that. I can't wait to try it once it cools down outside. It was 108 degrees today. :faint:
I'll have to substitute the chicken stock for vegetable stock since I'm a vegetarian. Do you think the soup would turn out ok if I did that?
 
Next week is my husband's birthday so we are going out to Shogun today and going to see POTC again to see if we can get into it more the second time. We just weren't that thrilled with it the first time.

Oops, I made a boo boo. It's actually beef stock I use, not chicken. But to answer your question, it should be fine with veggie :) I use to just add water but found the stock gave the soup a deep flavor I really liked.

Some thyme would also be good in here. Sometimes I go nuts and add a lot of herbs, sometimes I don't. Depends on how quickly I need to get the soup made.

ALSO: If you like Jiffy cornbread (you know, the sweet kind), it is AWESOME broken up in this soup!! COMFORT FOOD!!!
 
I have to be in to work shortly after lunch and will not be home until after 10:00 so I am going to run up to the local pizzeria in a bit and grab some dinner for everyone ~ I'm thinking subs for DH and myself and a cheese pizza for the kids. :sunny:
 
I am going to my brothers block party today so we will be eating there. No cooking for me today. :cool1:
 
Thanks for answering my questions Lindsay and for the recipe, it sounds delicious. :) I can't wait to try it. Oh and thanks for the suggestion about breaking up Jiffy cornbread into the soup. I love Jiffy cornbread, it's really yummy.

I'm not sure what's for dinner tonight since it's going to be be over 100 degrees again and it'll be too hot to cook. I'm probably get take out. I'm thinking maybe Macaroni Grill. YUM! :sunny:
 
We had the Broiled Pizza Burgers last night and they were great! Tonight will be spaghetti and meatballs & salad.

Even though it is humid here, I am in the mood for pasta tonight (and not in the mood to go to the store for something else). I am making the eggplant pasta recipe posted on p 72, a spinach salad and bread.
 
I think we will have grilled marnated flank steak, Baked potatoes, corn on the cob and a salad
 
DH got called in to work today, so I'm on my own with 4 kids. They don't like any fancy stuff, so it will be simple mac and cheese for them, and a grilled chicken breast for me. Nothing fancy!
 
Steak, gingered baby carrots and lemon-dilled steamed broccoli.
 
We are going to a get together tonight which is being catered by Stick Fingers so no cooking for me!! :) I made a derby pie to take :)
