It's missing my favorite part-the Down Under Darned part! Float a shot of chambord on top of that bad boy. YUMMY!

Morning!!! WFD at your house tonight?

We are going to my family's Easter dinner tonight. We are having a big spread including ham, homegrown green beans, mashed potatoes, slaw, okra, banana pudding, and my vanilla rich chip cake :)
 
I'm making a simple pot roast in the crock pot so it can be ready after our long day of soccer game, errands, and getting ready for tomorrow. :sunny:

I'm still sewing DD's dress, so have to get that finished!
 

I'm thinking we're defrosting the west indian chicken kabobs. I need to hit the farm stand for easter veggies, so I'll pick up some onion and peppers to put on them.

DH and I are heading to his parents for dinner today. Whatever we are having, it will be awful. I love my MIL but she is a horrible cook! Oh well, at least the company will be good, and there's always snacks when we get home.

I too headed to my in-laws. MIL is not a great cook. However, today wasn't too bad. She prepared bone-in rib roast. The last time she made it, it was completely overcooked. This time, she cooked it for less time...she said she didn't realize that the searing time counted toward the overall cooking time. We also had roasted asparagus (I had to trim the ends off...she wasn't going to...I didn't bother mentioning peeling them), mashed potatoes, and butternut squash, which she purchased. The gravy was terrible. I think it was just beef stock.

I'm now thinking about what snack I will have later.

Today we are going to my MIL's for Easter dinner. They are grilling out hamburgers and hot dogs. MIL is not a good cook so this is a great idea! :) I am taking a lemonade cake for dessert.

We're also going to my inlaws. We're having boiled shrimp, but I'm not sure what else. I'm bringing dessert: Peep cupcakes and Strawberry Daiquiri cake.
 
We were going to have rack of lamb and mushroom risotto, but DH is on a low fat diet for a few days, so Sunday's linner instead is grilled cornish hens, marinated in cumin and lots of black pepper, with a mango salsa, sweet potato oven fries, roasted asparagus, and a big mixed greens salad. I think I am going to make a pan of cornbread too, as I have some buttermilk to use up. I have not figured out the wine yet--something red!

Later tonight we'll have a cheese plate with the Sopranos (not DH-he can have pretzels).

Well, time to get offline and go boss my sister around in the kitchen! :)

Morning all!!

I needed a good "leftover" meal for tonight, so we are having spaghetti and meatballs for dinner tonight. MMMM, boy, that never gets old!! :)

My family needs to detox after spring break last week. Whatever I fix, it will be low carb and no SUGAR! :goodvibes

Editing for a menu change. It went from being a nice day to freezing! Now we are having grilled cornell chicken--if you have not tried this method, you should. It makes very moist, flavorful chicken. Here is the recipe:

For two chickens, combine 2 cups cider vinegar, 1 cup vegetable oil, 3 tbsp. kosher salt, 1 tbsp. poultry seasoning, 1 large egg, and 1 tsp. fresh ground black pepper in a blender and whirl to combine. Baste this mixture on your chicken every five minutes or so while grilling. I usually marinate my chicken in half of this mix for a couple of hours before throwing it on the grill, then use the other half for basting.

I am serving this with a salad of grilled corn, tomatoes, hearts of palm and mixed greens, and cornbread.
 
Wow, I just saw this thread! This is great! I'm always lookng for new recipes to cook for DFi! I'm going to have to try some of these. They sound great.
 
Hope that everyone had a nice Holiday. Tonite, we are going to have some leftovers from our Easter meal. I made mac and potato salad to have with sandwiches last night, but we did not touch the, so I am taking them out to have with ham and turkey. I sent everyone home with food, but we still have plenty.
 
Found a recipe in an old Cooking Light for Thai style ground beef and rice--going to try it tonight--sounds yummy!
 
Okay, I know this is late, but I spent most of the day cleaning DS's (he's 7) room. As a result, we just had hotdogs and hamburgers for dinner. I wasn't feeling inspired.
