Lindsay, that sounds really good!! Enjoy your girls' night :teeth:

Today I am roasting a stuffed chicken (basted with a rosemary garlic butter), and I'll make some mashed potatoes, gravy and corn to go with it :sunny:

We'll make some cinnamon rolls for dessert at the kids' request ;)
 
Last night I did not end up making what I said I was going to. I forgot that I had to go shopping to pick up an Easter dress for my niece after work. By the time I got home, there was no time to do all the chopping and blanching you have to do to make pasta primavera. So, instead I just cooked some tortellini, and made a quick sauce of butter, cream, parmesean, basil, green peas, and lots of pepper. I also threw together a salad of arugula, chopped tomatoes, and balsamic vinagrette, topped with smoked mozzarella that I lightly breaded and fried until it just started to melt.

Tonight we are eating in front of the television with american idol, and I am making roasted portobello mushroom sandwiches, served on ciabatta bread with roasted garlic, montery jack, and herbs. Go withs are cole slaw and oven fries.
 
Chicken enchiladas with spanish rice. Dh will also eat about a gallon of red sauce with it as well. :rolleyes:
 
Tonight will be something easy--like pasta with marinara sauce and Italian sausage--have an afternoon playgroup that always runs into dinner time--so need something DH can start for us!
 

I have another no cooking night. Last night we took my DGD to Chuck E Cheese because she filled her goals chart. Tonite, she needs to go to the dentist for 2 fillings. She has reflux, and it ate the enamel on her teeth, and the dentist thinks that they should be filled. This is the second time my DD is trying to get this done. The last time it was a disaster, so we are taking her to her favorite restaurant, Red Robin, if the dentist thinks it will be okay. WIsh her luck, will you?
 
Oh you guys, if you like Chinese food you HAVE to try the recipe I posted yesterday. OH MY WORD! It was soooooo delish!!!!! My girl's night was awesome, we had a blast.

Tonight we are having burger w/ swiss chese and fries.

WFD at your house??
 
I'll have to go back and try that recipe--was it the hot/cold noodle one? Anyway, we are going to have chicken with lime sauce and cumin roasted potatoes tonight (courtesy of Cooking light)
 
I think I'm making BBQ chicken breasts on the grill with baked potatoes and grilled marinated veggies
 
Homemade calzones today (well, I buy the dough premade ;) ) ~ artichoke, tomato and mild peppers in mine, cheese, pepperoni and pizza sauce for everyone else :sunny:
 
Hi, I'm new to this thread, but DSis, liamsaunt, said I should join.

Tonight at our house is grilled, whole chicken seasoned with cumin. I'll have mine with some type of avocado salsa or sauce...haven't quite dreamed that up yet...potato salad, and probably grilled asparagus. The kids will have the chicken plain, the asparagus, and bread.
 
Tonight, I think we are having burgers and mixed veggies. Last night, I had peanut butter and jelly and NC Beast had some homemade turkey and rice soup.
 
Tonight I am making a riff on a recipe I found in this month's Food and Wine: lots of asparagus topped with poached egg, crunchy breadcrumbs, and brown butter hollandaise sauce. With a baguette.

Just a note to my dinner-cookin' friends,

Please say a prayer, send good thoughts, have a piece of pie or SOMETHING for me tonight. My dad came by my house to tell me he and my stepmother are getting divorced.
 
I have a boneless roast pork in the oven crusted with minced prociutto, garlic, butter, rosemary and parmesan cheese. We are havein mashed potatoes, gravy, corn, steamed asparagus, and a tossed green salad.

It smells amazing, so I hope it is good.


ETA: It was amazing!!!!!!!!!!!! I will be making this again.

Lindsay, I am so sorry to hear your sad news. I'm thinking of you, :hug: will say a prayer, and will have some strawberry shortcake for you. Dessert always makes me feel a little bit better.
