Well, when my cookbooks took over 2 bookshelves, he insisted that something be done. So, I've been going through all my cookbooks, making copies of the recipes that I actually use and love. Usually, I only have maybe 10-12 recipes per book that I've tried and liked. Once I get them copied, I donate the books to Good Will. I'm sure there are some other cook book addicts out there that will appreciate them. So far, I've donated 4 banana boxes full of books, and there are more to go! At least this way, I'm keeping all the recipes that I like, and compiling them into a book that I'll be able to use.

Just 2 shelves? Amateurs, I have a full bookcase, a closet and 3 boxes :rotfl:

Lindsay I will look in my books and let you know I know somewhere I have a virgin margarita recipe.

Tonight we had grilled italian sausage and green beans.

I'm back to the grind stone. I need to get current on my other part time job.

Thanks! Okay, I admit, I am completely ignorant when it comes to coffee. I have no idea what you are talking about -- coffee machines have pods? Isn't that from Invasion of the Body Snatchers?? -- but I will pass along your offer to DH. I don't know how much he can take with him this time, but if he thinks a coffee machine can be shipped to wherever he is, I will let you know.

Nancy -- I hope that apple cake was good! I would have eaten it just for the cream cheese frosting. I love that.

Our first roast chicken was a hit. I only have one sandwich bag of meat left.

Football practice for Ross until 7:15 tonight....so his supper will consist of mac and cheese and cukes........Kris has to work so he will eat whatever he grabs when he gets home.........and I will have leftovers of the parm crusted chicken and glazed carrots from last night, mmmmmmm!

Glynis--I am really looking forward to the pictures.......congratulations on your "new" family member it is a wonderful thing when a new member enters and is not only loved, but liked as well!! Looking forward to the pics!!

Sheryl--I hope today you feel a bit better then yesterday, try to get some rest!!

Not sure what's for dinner. We leave tomorrow, and I don't want a bunch of leftovers in the fridge while we're gone. Maybe we'll go to IHOP for dinner tonight.
 
Artichokes are probably my favorite vegetable, but I rarely buy them b/c they are hardly ever on sale. How much are artichokes where you live?

Now you have me craving artichokes!!! I love them, too! I'm not sure how much they are here, but I'll let you know after I get back from the store. I have to run pick up some stuff to make pear butter with the pears from our tree. Wish me luck!

Hmmm, an artichoke for dinner would be yummy!!!!!

YUM..i love the idea of a brie sandwich...and those peaches look great too..lately my peaches have been over ripe or something..yuck.

WFD tonight..not sure, i have class so i might have to scrounge.
The last exciting thing i made was pizza sunday night, mushroom/garlic..yum. It was much better than the VMA's I watched...can we say trainwreck!? haha

Thanks Wendie:hug: I'm feeling a bit better, starting popping a couple of aleve a day & that's helping.

Oh and what's for dinner! Well Bob & I just realized F&W is only a little more than a month away & in 2 weeks we have a big local fest we love with tons of good cajun food, & german brats & beer. :eek: So of course we realized we need to be dropping some pounds!!!! :sad2: So I've got to tighten up the meals around here! Tonight will be salmon or halibut. I had Maple glazed salmon on my mind but I guess that's a NO-GO on that! Any of my dieting friends have any good ideas for me??:confused3

MomNeedsVacay, On Artichokes, don't know the exact cost, but they AIN'T CHEAP!!! ;) If I get myself to the store, I'll take a look at the price for you.
 
Okay, what is a Smoky Boo Patty???
There was a whole 30 Minute Meal episode once all about Rachael Ray's old dog, Boo. It was all people-food that Boo loved. One of them was a smoky chicken patty. I make it with ground turkey instead. She called them Boo Patties and so do I :) Here's the recipe:

1 1/2 pounds ground chicken breast
1 tablespoon smoked sweet Hungarian paprika, available on spice aisle in small cans*, a palmful
1 1/2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
1/4 to 1/3 cup chopped parsley, a couple of handfuls of leaves, chopped
1/2 medium yellow skinned onion
4 cloves garlic, finely chopped
2 tablespoons extra-virgin olive oil, 2 turns of the bowl
8 slices sandwich white or whole-wheat bread
2 to 3 tablespoons butter, softened
2 cups chopped baby spinach, watercress or arugula (Boo would skip the greens)

Heat a large nonstick skillet over medium high heat. Place chicken in a bowl and add the smoked paprika, grill seasoning and parsley to it. Using a hand held grater or microplane, grate the onion into the chicken. (Boo liked onion juice and its flavor, but she did not like big pieces of onion). Add the garlic (Boo LOVED garlic!) and mix to combine. Make a mini patty, the size of a quarter, and cook it up, a minute on each side, to taste and check seasonings. If you want it really smoky, like Boo, you can adjust the seasonings accordingly. Drizzle the chicken mixture with about 2 tablespoons extra-virgin olive oil and form 4 large thin patties then place them in the pan. Cook patties 5 minutes on each side. Toast bread slices and spread liberally with softened butter. Serve patties on buttered toast with some chopped dark greens.

Thanks Lindsay! Sounds yummy & if I cut back on the butter, lowfat too! I'm going to go look for some sweet paprika today!

I never serve this on buttered toast. Just whatever hamburger bun I have in the freezer :) It's a very lean and yummy burger!! Also, I use plain paprika, not sweet, in the recipe. I can't seem to find it around here.

I just found that using ground chicken made it VERY bland. We eat ground turkey a lot and we like it :)
 
Janice, thanks for the clarification on the coffee maker and for the offer. DH (Greg) said to thank you (he can't believe someone he doesn't know would be so generous to send him something like that), but he doesn't think he will be able to have it. He thinks on this mission he won't be able to have too much extra stuff. Apparently, coffee maker doesn't make the Army's list of essential items.

Laura, Y'all still don't know where they are going to send your DH?

We don't know the exact location. We don't even know when he is deploying. However, I did hear from him last night and he thinks he might be able to come home two more times...at least once...before he deploys. I didn't think we would see him again until the spring or summer, so that is good news.

Tonight is a skating night, but we won't get home too late. I think I'm making cheeseburgers or pizza.

Yes, I've looked for that sweet paprika before & couldn't find it. World Market seems to carry it but is always out of it, when I'm looking for it! I would try it with the turkey & not the chicken, I've found the same thing with ground chicken, blaaah.! I'll pick up some ground turkey & try that later in the week, Thanks!

I was going to offer congrats on the new sister, but it sounds like I should be congratulating you on not losing a brother. ;) :rotfl: :rotfl:

Thanks for the memories of pear butter. My late Nanny used to make pear butter to use some of the pears she would have each year from her trees. I haven't had any since she died and boy, do I miss it.

Tonight's dinner is smothered pork chops with buttermilk gravy, rice and field peas. Southern supper for sure.
