I'm going to have to go look for that! I think I had Goya Mojo before but don't remember the Criollo being on there....? Nope, I just went look at the goya site, never tried that before! Our regular groceries don't carry all of that stuff! I'm going to have to go check the little latin market nearby.

Lauren, I don't think mushrooms of any kind can be frozen, even after cooking. Maybe I'm wrong but I seem to remember that, because of the high water content. Anyone else know? Hey why did it let Lindsay say ****ake but not Lauren?!

Lauren, BBQ shrimp is similar to scampi, but with lots of chopped onions, garlic, bell pepper, parsley, etc. and worchestershire and lots of cajun spice!!!

I lucked out on having good cheese in the house & since it was something different than our usual, it felt really special! Pulled out the BIG FAN & ate outside, DH said he felt like he'd gone on vacation! ;)

I can send you some if you cannot find it...you can make your own too. Here is the recipe (Goya's has alot more spices like cumin, oregano, etc):

Mojo Criollo
7 cloves garlic
1 teaspoon salt
1 medium-size onion, very thinly sliced
1/2 cup sour (Seville) orange juice
OR
1/4 cup sweet orange juice, MIXED WITH
1/8 cup each fresh lime and lemon juice


Directions:

Using a mortar and pestle or a food processor, crush the garlic with the salt to form a thick paste. In a mixing bowl, combine the garlic paste, onion, and juice, and let the mixture sit at room temperature for 30 minutes or longer.

I am going to have to try you recipe for BBQ shrimp. Do you have a recipe or do you just put everything together?

Sure, why not? Andrew will occassionally eat srhimp and Tom only likes shrimpo cocktail so I can scale down a recipe or like your Velvet Shrimp, make chicken for them. OK, I am babbling!

I just wing it when I fix it, but here's a recipe that's pretty close. I'm afraid there is nothing diet about this!:eek: I have made it substituting olive oil for half of the butter. I've also made it with a good quality white wine if you don't like beer & have also left the alcohol out of the recipe totally by adding shrimp stock and or light italian salad dressing. My best ones have been with a lot of dried & fresh herbs thrown in! Also traditionally it's done with the shells on, but I peel them first! It's just so messy to eat with the shells on!

New Orleans Style BBQ Shrimp


2 pounds butter (Yes, you read right. Two pounds. Eight sticks. Don't whine. DO NOT use margarine! Real butter only.)
2 tablespoons Creole seasoning, to taste; OR
2 - 3 teaspoons cayenne pepper and 3 - 4 teaspoons black pepper, to taste
2 tablespoons chopped rosemary leaves
1/2 cup Worcestershire sauce
6 ounces good beer (microbrewery is preferable to mainstream swill)
5 - 10 cloves garlic, finely minced (or as much as you like)
1 medium onion, very finely minced
3 ribs celery, very finely minced
3 - 4 tablespoons chopped parsley
2 teaspoons fresh-squeezed lemon juice
5 pounds shrimp, heads and shells on
[This feeds 8-10 people, BTW ... cut it in half if you need to.]
Melt a stick of the butter in a skillet. Saute the garlic, onions, celery, parsley, rosemary and seasoning blend for about 2 - 3 minutes.

Melt the rest of the butter. Add the beer (drink the rest of the bottle). Add the sauteed stuff, Worcestershire and lemon juice.

Drown the shrimp in the seasoned butter, using as many baking dishes as you need. Make sure the shrimp are more or less submerged. If they're not ... melt more butter and add to the sauce. (Aah, what the hell ... what's another stick or two when you're already up to these butterfat levels?) Bake in a 350 degree oven until the shrimp turn pink, about 15 minutes.

Serve in big bowls. Put in a handful of shrimp and ladle lots of the spicy butter sauce over it. Roll up your sleeves and wear a bib (DO NOT wear nice clothes when eating this!) Serve with plenty of French bread to sop up da sauce!

This is a great pairing. The last time we had these sweet potatoes, it was with a maple glazed salmon. There is so little curry powder in the recipe, you can't really tell what the spice is...just use sweet curry powder and not hot.

Tonight I "think" I am making corn and cheddar cheese chowder and popovers.

Okay, another weird sister bonding thing. I'm making corn and cheddar cheese chowder tonight too. No popovers, though. I've figured out how to make a lot of things egg-free, but popovers is not one of them.

Youngest DD, not so much. But she rarely likes anything with a tomato sauce.

Caili won't eat tomatoes either. I don't know how she is my daughter. Every week I buy five pounds of tomatoes at the market, and I eat them all.

I've given up on most cakes, they usually come out lopsided!

My cakes always come out pathetic too. Your bread looked awesome!!

Congratulations Lulu! I've always thought that Wishes would be the perfect time for a wedding proposal.

With Sheryl's permission here's another version:

BBQ Shrimp

6 lbs. large shrimp, unpeeled with heads on
2 sticks butter
3/4 c. olive oil
1/4 c. Worcestershire sauce
Juice of three lemons
1 tsp. garlic powder or fresh minced garlic(as much as you like)
2 tsp. paprika
2 tsp. cayenne pepper
1 tsp. black pepper
1 1/2 tsp. salt
1 Tbsp. dried rosemary
1 tsp. dried oregano

Spread the shrimp in a large shallow baking pan or two if needed. In a saucepan, melt the butter, then add the rest of the ingredients. Mix well, pour the sauce over the shrimp and marinate for one hour. Bake at 325 degrees, uncovered, for 15 to 20 minutes. Stir a couple of times during cooking. Do not overcook. Serve in a soup bowl with french bread.
 
Well, I'm only having frozen chicken strips and salad for dinner, but I wanted to share my news.

During Wishes on 8/14, Rob proposed to me! I was so shocked and so happy when DF told me that he can't wait to make all my wishes come true! My ring is so beautiful and I had the most amazing surprise (SHOCK) of my life! I will be calling soon about my DFTW!

I am really happy and excited and when I get back off cloud nine, I will post some of our food pics, because we had a great trip in every way (including the food!) and now the diet starts seriously!

I will post a picture as soon as I can! :)

Hey Y'all!

I'm so excited my french bread came out really good! The white french bread came out beautiful, the wheat I sort of messed up the shape moving it to the pizza stone, but still tasted great! For my first time making french bread, I'm pretty proud of myself! I didn't realize how much cheese I had in the house either, so we had a really yummy dinner!

The cheese was (from top left) St. Andre. Fleur de Lis Cow's Milk Triple Cream, we actually had this Louisiana cheese at Flying Fish on our last trip. I found it at Whole Foods. Then Amish Blue, and the brown one is the Norwegian Goat's Milk Cheese that was given to us by Bob's Norwegian business associate. With creole tomatoes, apples , olives & proscuitto we were stuffed!

I have not used curry in years, so if anyone who knows better thinks I should change this, please let me know. I am not starting dinner until late this afternoon, I have to take my Aunt to the eye doctor. The poor lady thought that I was not going to because of the fall and called my sister worried that she would mess her appointment.

Here's my only tip for working with curry. If you are using curry powder, and it's a bit old, you can microwave what you'll be using for about 10 seconds, and it will help release the oils and freshen the flavor of the curry.
 
Sorry I'm so late posting today. I had to take the twins to the school for their kindergarten assessment. It's amazing to sit and listen to the two of them. I have a hard time, sometimes, remembering that they are individuals. I expected them to know the same things, but it was very evident that Mary is the more "educationally advanced". Leslie just seems a bit behind. The teacher assures me that it's pretty standard with twins for one to be a bit ahead of the other. I guess she should know. She's been teaching twins at least one set a year for the last 13 years. For some reason, my town has a plethora of multiple births! I'm pleased with her, and she thinks the twins will do really well.

Anyway, WFD tonight? Tasty Onion chicken. I think I've posted it before. All my kids like it, and I'm in the mood! Alan will be coming home from the mine tonight, and we all can't wait!!!! It looks like he won't have to go back, either. They are drilling one last hole, expected to punch through on Saturday, and then they are capping the mine. So, Alan's participation in the story is over! We'll get to have him back until the middle of September. At that point, he'll be gone for 2 weeks covering the trial of polygamist Warren Jeffs. Poor guy! He just wants to stay home, but the OT of these out of town gigs is too choice to pass up!
 
Tonight's dinner was a huge hit! And it was....listening Kathy?.....EASY!!!

I heated up 1/4 cup vegetable oil and 6 tablespoons butter in my large skillet. I then cooked 6 medium sized salmon fillets for about 4 minutes per side, until it flaked easily. Meanwhile, in a small sauce pan, I mixed together 1/2 cup honey, 1/2 cup chopped pecans, and 6 tablespoons of butter. I heated this while the salmon was cooking, and then served the sauce over the salmon! DELICIOUS!!!
THAT sounds so yummy..i love salmon, and will have to try that!

And now, my dinner. Note I have not talked to Laura for a couple of days, but tonight DH and I had....chicken with honey chipotle bbq sauce (note mine was stuffed with pepper jack cheese), corn on the cob, and broccoli--my broccoli was shredded in a slaw with great hill blue cheese....yum.

TONIGHT: I didnt' end up making eggplant last night, went for sushi instead..yummy. I am going to do a "healthier version" tonight for my bookclub meeting. I am going to Grill the slices of eggplant on a grill pan with a little evoo and layer that with the marinara and mozz. instead of breading and frying the eggplant..i hope its yummy!
 
Nancy, I searched all over the net for different tips! Do you want a recipe or just tips? I found someone's blog that helped a lot, with pictures! I didn't use that recipe though. So if you want that let me know. Here's the tip site:

I used a pizza stone & a pan in the bottom of my oven for the steam. The wheat roll, I tried to slide off the parchment onto the stone, that was hard. The white a just slid the parchment onto the stone & baked on the parchment. It made a very slight difference in the crust, a little bit less crusty, but I think I'll do it on the parchment again next time. Or try using my pizza peel to move the bread, but I think that my ruin the shape. I can do it with pizza crust but this dough is a lot softer & more delicate.
I bookmarked the blog and am noting your tips. If you would share the recipe that you used I would appreciate it. I want to take a class but have never been free when they are offered at the satellite school in town.

That sounds great to me. DH doesn't like curry so I've avoided the recipe. Not sure I can hold off much longer. Do you know off hand what page the recipe is on?


I'm feeling a little better today, the pain is still pretty intense during the night, when laying down. My dentist called my pharmacy to give me MORE pain pills. So hopefully I'll be getting better every day!:goodvibes

Aren't weddings fun? The potato recipe is on page 693. I did not post the chicken recipe and now I a kicking myself. I cannot find it so I am going to have to wing it, and you all know what can happen when I just fly wit what sounds good :rotfl2:

I didn't get a chance to post yesterday. We had chicken fajitas. Tonight I'm making grilled tuna steaks, sushi rice, steamed baby carrots and canned green beans for my carrot hater.

Well, tonight, I think, is going to be polynesian chicken. And maybe some rice or pasta on the side. I'm sure the kiddos will have chicken nuggets b/c they are SO picky. Any advice on getting kids to eat a variety of foods? Heck, I would settle for them eating anything other than carbs--the ONLY meat DS will eat is chicken nuggets--everything else he spits out! Luckily both of them really like fruit b/c the only veggie they'll eat is carrots (and they have to be out of a can :scared: )
