Lindsay- :grouphug:. I hope that a day or two of rest helps to lessen the shoulder pain. I know that it is hard to "let it go" but there are times, and this is one of them, that anything but the essentials should wait. Take care of yourself.

Glynis- a piece of your cake would make it better :thumbsup2. I had to settle for ice cream and chocolate sauce. My Mom always kept baskets and dishes of chocolates around, and I won't share how many pieces I had while biting my tongue. ( Might as well swallow chocolate with the snippy remarks ;))

Tonight I will have leftovers. Buddy invited some friends for dinner tomorrow night so I want to make sure I have plenty of room in my fridge.
 
Oh Lindsay, I am so sorry that your shoulder is really bothering you...:hug: :hug: :hug: Try and take it easy like you said and hopefully that will help a little.

Nancy, I am sorry that you are having such a hard time. :hug: Coming from a family of 7 children, I am all too familiar with family drama. I am glad that you liked the onions...

DS's school is closed due to the Noreaster...DF is upset that he has work...we have a state of emergency and he doesn't even have a delayed opening...:confused3

I really need to go shopping but the winds and rain is too bad to go out. I have a small filet mignon roast and fish that I will make tonight and whatever veggie is in the freezer...

Lauren, we are having heavy weather here as well, but not as bad as those downstate or up and down the coast. Stay home and stay safe. Buddy is home, he is not moving heavy equipment today, they aren't working in this.
 
Morning Y'all,

We had a nice weekend, no cooking for me! We went to a very nice 'classic New Orleans wedding Saturday Night. They had a brass band & another dance music band, it was at a hotel on Canal Street, really fancy & fun!!

We had GORGEOUS weather yesterday, highs in the 60's low humidity, something we get very rarely down here. Today looks like another pretty day. So yesterday DH & I headed out to the French Quarter for the Fest. Listened to some Jazz & ate a lot of great food! Really busy weekend for us too homebodies!

My feet, knees & back are hurting from all the dancing & walking! Boy I'm getting old. So it's going to be our regular easy Monday Meal, Red Beans & Rice.

Kathy, You must still be trying to recover from DS's ordeal with our wonderful health care system down here. Hope he is improving.:hug:

Nancy, Sorry you are having this family drama on top of losing your Mom. :hug:

Good morning everyone!

Thank you all for the kind words, you're all incredible. Kyle is fine and back to school. I'm somewhat rested but very angry about this health care situation we're facing down here. I plan on writing everyone possibe - I may be only one voice, but it's gonna be a loud one!:mad:

Nancy - I really feel for you. I haven't begun to go through Mom & Dad's things yet, but when I do I won't have to deal with siblings. I wish I had some comforting words of advice for you, but all I can say is take baby steps, maybe it's too soon for you. Always know I'm here for you.:hug:

Glynis - Yes, they did catch the stone and it was a calcium stone. They think the reason he developed one at such a young age is due to a conditioning powdered drink he's using while working out for baseball. It's from GNC, totally safe, BUT he needs to drink mega amounts of water while using it and he was not drinking nearly enough. BIG lesson learned!

I'm going to take the day off from work tomorrow - I feel like I lost a whole day, well I guess I did! Anyway, I'm going to cook what I planned on cooking yesterday - Creole Shrimp Stuffed Bell Peppers and macaroni & cheese.

Kathy, sorry to hear about your son’s kidney stone. I hope he is feeling better today and you are both able to catch up on your rest.

Nancy, thankfully I haven’t had to go through what you are now with your sister, but I can imagine your frustration with her. When dealing with very difficult family members (read DH’s step mother), I find chanting the following in my head before meetings helps – “I will not choke my ___________. I will not choke my _____________.” You get the picture. Good luck and don’t let her get to you.

Lindsay, take care of yourself. Take it easy or whatever else you need to do to heal that shoulder.

Lauren, stay inside as much as possible and stay safe. We were supposed to get the heavy winds and rain from that storm yesterday, but we really dodged that bullet. It barely rained and the winds were only bad for 10 minutes or so. Hope you got your taxes finished and are able to get out in the storm and get the returns postmarked today.

Tarheel Tink – Just figured out the chocolate almond pie I made last month was your recipe. My DS loved it.

Liamsaunt – love your pictures, but I am humbled when reading your recipes. I would love to get the courage to try them, but I think they are beyond my abilities and time restraints.

Sandy – I hear you about the camping. At least you made the attempt. My DH loves to camp, but I have told him the only way he is going to get me to sleep outside in a tent is if our house were to burn down and my credit card melted in the blaze. I’m NOT an outdoorsy type of girl.

Sheryl - Glad you had a good time. Youngsters get sore from the dancing, etc., they just usually have such a hangover they don't notice. ;)

Tonight’s dinner is going to be burgers and baked beans. DH got a new grill for his birthday and he is dying to try it out. I hope the new doesn’t wear off for a long time, I love the help with dinner.

Good morning everyone! I hope no one has flooded away! We had a gorgeous day yesterday, but woke up to wind and rain this morning.

Dinner tonight will be Chicken Parmesan with green beans and noodles on the side. I'm babysitting 2 of my neighbors kids tonight. Their mom is in Boston right now, attempting to run the marathon! I wouldn't want to be in her shoes!!! Dessert will be the leftover S'more drops from yesterday. They turned out great tasting, but really messy. I think I'll let the kids finish them off for me!

:lmao: If I wouldn't have had to drive home, I would have had one too! They had free-flowing Champagne, so it was hard to stop!

I decided to cook Pinto Beans with a beef soup bone & serve over yellow rice tonight. Then we can have some refried beans with something Mexican during the week.

Anything for your sweet DH!;)

Creole Shrimp Stuffed Peppers

8 medium size green bell peppers
2 Tbsp. olive oil
1 large onion, chopped
1/2 c. chopped parsley
4 cloves garlic, minced
1 1/2 lbs. ground beef
2 lbs. peeled shrimp
Tony Chachere's or any Creole seasoning to taste
1 small stale loaf (about 18 ounces) sliced white bread
2 Tbsp. butter
cayenne pepper to taste, optional
1/3 c. fine dry breadcrumbs

Cut peppers in half lengthwise, clean and parboil for 10 minutes; drain well.

Meanwhile, heat oil in a large skillet over high heat. Add onions, parsley and garlic and saute until onions are browned, about 5 minutes; transfer vegetables to a bowl.

In same skillet, cook beef until no longer pink and drain excess fat. Add shrimp and reserved onion mixture, folding all together; continue cooking 10 minutes more. Season heavily with creole seasoning and remove from heat.

Pre-heat oven to 350. Chop four of the parboiled pepper halves and mix into the meat. Transfer mixture to a large mixing bowl.

Sprinkle bread with water (they shouldn't be soaking wet), and add bread to bowl; mix together until the bread disappears. Add butter and taste for seasoning, adding more creole seasoning and cayenne pepper if desired. Stuff mixture into remaining bell pepper halves and arrange on a baking sheet. Sprinkle with breadcrumbs. Bake, uncovered until breadcrumbs are nice and toasty - 20-30 minutes. Serve immediately. These freeze well also!
 
I'm planning on having hamburgers, Paula Deen's crockpot mac & cheese, and maybe corn for dinner tonight. I haven't stuck to any of my dinner plans recently so we'll see what happens.

The chicken casserole last night was pretty good. DS didn't like it, but I didn't really expect him to. He likes his meat, starch, and veggies to have their own personal space and doesn't think they should inter-mingle. :rolleyes:
 
I love Jack, all I do for the spinach is get a pan really hot, put in a little butter, and then dump in as much spinach as I can fit. I cook it over really high heat for just a minute, until just wilted.

Zandy, here is the linguini with clams recipe I use:

Linguini with White Clam Sauce

2 pounds littleneck clams, well scrubbed
2 tbsp. olive oil
3 tbsp. butter
1 bottle clam juice
1/2 cup dry white wine
2 large garlic cloves, peeled and very thinly sliced
2 tbsp. finely chopped parsely
1 jalepeno pepper, seeded and minced
1 tomato, seeded and finely minced
1 lb. pasta
handful of fresh basil, roughly chopped

Place the clams in a covered pan with the bottle of clam juice over high heat. Steam the clams until they just open. Take them out of their shells and cut in half. Strain the clam liquid through a paper towel set in a strainer to make sure there isn't any sand in it. Pour the liquid over the clams and set aside.

Bring a large pot of water to a boil.

In a large skillet, melt the olive oil and butter together over medium heat. Add the garlic and saute for about a minute. Add the parsely and the jalepeno, then the tomato. Cook for about 2 minutes, then add the wine. Simmer for about a minute, then turn off the heat.

Meanwhile, cook the pasta in salted water until it is almost done. When it is still a little undrcooked, strain the pasta and add to the skillet along with the clams and their juices. Bring the skillet to a gentle boil, allowing the pasta to continue cooking in the pan juices. When the pasta is done to your liking, season with salt and pepper, add the basil and serve. Tonight I am roasting a chicken that is seasoned with rosemary and lemon, roasted acorn squash with honey, green beans, and mashed potatoes. It is miserable here today so this comfort food should fit the bill! At least I did not have to go to work today (Patriots Day is a holiday in MA)...hmmm...I guess I should get out of my pajamas finally!
 
Hello, all! I have been reading and catching up on everyone's weekend-I logged on yesterday and was getting ready to post last night's menu when the power went out! I never got back on the computer since DH was catching up on some work from home once the power was back on, so I hope everyone is doing OK.

We ate out on Friday and Saturday. Last night we had the Cheesy Crockpot Chicken with rice, corn on the cob, and the rest of the broccoli casserole from Easter that I had frozen. Tonight will be pan fried pork chops, mushroom risotto and broccoli spears.

Kathy, I hope your son is feeling better. I can't believe that you all have to wait that long in the ER! I would be writing letters too!

Lindsay, sorry to hear about your shoulder. Sounds like you definitely need to take it easy for a couple of days.....easier said than done, I know.

Nancy, hate to hear that you have all this family drama. I dread the day when we have to go thru my mom's things. We have drama now and she is still healthy. Big hugs to you. :grouphug:

Lauren and everyone else dealing with the horrible weather now, stay warm and dry and most importantly, SAFE!

Nothing fancy for dinner here, we're so busy trying to get packed for our cruise and getting things lined up for the kids. We'll have hamburger helper (cheeseburger macaroni) and some corn on the cob. DH isn't crazy about HH but the kids LOVE it and like I told him, we'll be feasting like kings come Thursday!

Can someone tell me how to post a picture? I wanted to post a pic of the boys from Saturday night but I honestly can't figure out how to do it.

:lmao::lmao:My nephew was like that. He would not touch anything that was mixed up, did not like "things" in his food, and was picky about what was left. Well, 12 weeks of boot camp later and he was eating anything that was not nailed down. It was a sight to behold! He just reenlisted for 4 more years so he thinks his mothers cooking is good...(she burns everything or orders out), and looks forward to whatever someone here has cooked.

Ladies, thank you for the support. I was not ready to do this but somehow this decision was made....I think it is way to soon and way too fast. I decided to take matters into my own hands and went down there today and took out the things that matter a lot, called my sister in law and told her I will safe guard them and Pat can come in and ransack the place. She has enough. My DD said that she needs to take all of these personal things because she hasn't interacted with the family in so long. We have real memories, she needs to hold onto things.
 
Kathy my nurse dd manages an emergency room here in Florida. She is in Cleveland for a few months because my sil has a temporary assignment down here and she is helping her sister. I plan to ask her about the 10 hour wait when I speak to her. I know they try to cut down waiting time (although she rants about a couple of doctors and PAs who aren't as attentive as they should be) and I know she tries to make it as easy on kids as possible. I'm so sorry that he (and you) had to go through all that.

marlasmom - Welcome!!!! I would appreciate any feedback on this ER issue that you could provide. I am not sure about other places and whether or not this is because of Katrina and an obvious shortage of doctors here, but the entire time we were waiting we were being told there is only ONE doctor working the ER????????
