Hi All!

Crappy weather here today. We are all still in PJs and working on my taxes...yuck! I tried my hand at an Ebay business and wound up not liking it (it wound up being too busy...:rotfl: )...now I am surrounded by piles of invoices trying to figure out what I did!!! I was not the record keeper I should have been...:)

I am making some low carb meatballs, doctored up sauce (probably stewed tomatoes), ww pasta and salad.

I am dying to try the Rosa Regale but we decided to save it for a special occassion...:confused3

Comfort food here tonight- with that stupid storm heading our way. We are going to have meatloaf, mashed potatoes and whole green beans.
 
Today we are having linguini with clam sauce, crusty bread, and arugula salad.

Yesterday we had seared halibut with a white wine/cream/lemon sauce, roasted asparagus, seared spinach, and macaroni and cheese. The picture of the plated food came out blurry. Here is the halibut, just finshed cooking:

I was watching Giada De Laurentiis make her Spaghetti with Pinot Grigio and Seafood this morning and it made me think of linguini with clam sauce. It used to be one of DH's favorites when we went out, but I've never made it before. Can you share your recipe, please? And also your recipe for white wine/cream/lemon sauce? TIA BTW, the halibut looks very good.


I'm making chicken fajitas for dinner tonight. I hope it stops raining, I don't like grilling in the rain. :umbrella:
 
Well, it is clean out the refrigerator night. I have a baked potato left over from dinner out the other night so I made it into a stuffed potato for DH tonight with cheese and (I swear) some diced Spam (Hey! It is his Spam; I have no shame). We are having Baked Salmon Dijon and asparagus along with leftover strawberry shortcake with ice cream.
 

My boyfriend and dad are making Dorito Casserole. I stayed on a diet all week and now this! lol.
 
Hi guys! Just wanted to pop in and say no dinner for us tonight. DS came to me at midnight complaining of severe abdominal pain and this kid is not a whiner. I normally have to force him to go to the doctor. He was hurting so bad we went to the emergency room. Since Katrina average wait times in all ER's here is 8 hours. Well our wait time was 10 HOURS!! I was a wreck watching my son in severe pain all that time. We just got home - he had a kidney stone which thankfully passed after they got the morphine into him. I am so tired I'll be off to bed in a bit. I should be back in the kitchen tomorrow!

Hello all-
We are in the start of (as our news/weather stations have said) "the perfect storm" we will have around 5 inches of rain along with 8-12 inches of snow paired with winds up to 50mph and wide spread power outages.......somehow I don't see the perfect in this, but it is Maine soooo anything goes.....Right now it is 33 degrees and snowing..

Sandy- How did the backyard camping turn out for ds and you?

Marla's Mom- Welcome look fwd to your meal ideas!!

Gretchen- Oh what a wonderful b-day gift for dh, brought tears to my eyes!

Lauren- Pj's here too today....taxes though (thank goodness) are long ago done

Kathy- Oh no I hope you can all get some rest now. How awful the ER waits....get some sleep. Let us know how ds is feeling later on, poor thing.

Glynis- How nice you and dh had a great night out together, I agree the hole in the wall places always taste the best and seem to make a perfect night.

Thanks to all who gave congrats to ds he got a kick (get the pun) out of reading them on here!

Tonight's supper is going to be grab what you feel like, as I am beat after being at the tournament all day then out to eat. It was the first time I had gone out in 3 weeks since I had been sick, so I begged off cooking.

I also picked up a bottle of the Rosa Regale (since so many talked about it) when we were out yesterday, I will make a yummy choc cake this week to go with it.

I am so sorry that DS went through this and for so long...I am glad that all is well and hopefully he is feeling much better. :hug:

Can you post the recipe for this? I bought 2 big bags of doritos at sam's club a bit ago and we ate one bag and are sick of them so I need a way to use up some of the other one..:goodvibes

Dorito Casserole

2 (10 1/2 ounce) cans cream of mushroom soup (I like to use the cheese soup, though)
1 1/2 cups water
1 (10 ounce) can Rotel tomatoes, drained and chopped (can use plain tomatoes or salsa, too)
1 (13-16 ounce) bag regular Doritos (save about 1 cup for topping)
1 1/2 cups chopped onions
1 clove garlic
1 lb lean ground beef
1 cup grated cheddar cheese
1 cup sour cream
salsa
2 T sliced scallions

Preheat oven to 350 degrees.
Bring to a boil the soup, water, and tomatoes.
Cook onion with ground beef.
Place layer of slightly crushed Doritos in the bottom of a casserole.
Add a layer of ground beef, a layer of soup mixture and a layer of Doritos.
Continue until all ingredients are used.
Top with cheese.
Bake in 350 degree oven for 25-30 minutes.
Serve topped with sour cream, salsa, scallions and remaining crushed Doritos.
If you like things spicier, you can add more chiles, salsa or some taco seasoning to the beef mixture.

It's a very "homestyle" dish but really easy and kids LOVE it.

Get well wishes for your son and get some sleep wishes for you! I am so sorry you had to wait 10 hours in the ER - that is just terrible. It's really sad- senators and governors make 150,000-200,000 a year and keep cutting back on nurses, teachers, firefighters and cops to save money. Look where it gets us. :( A kidney stone is very painful and I don't often hear of someone so young with one! It is good that you took him to the ER and got it taken care of.
 
TigerKat I had a kidney stone. I am so sorry your son had to go through that. :hug: I would welcome 10 days of labor before I go through that again. Keep him hydrated. From what I have learned I wasn't drinking enough water. I hear it loud and clear now.

Still haven't decided what we are having I better go figure it out.

I bet Sheryl and Lori are having a good time at the festival today N.O. board has been quiet today. I kinda wondered if something was wrong since you didnt post.

Kathy ~ :hug: I'm so sorry your DS had to go through that. It's bad enough he had the kidney stone, I can't imagine waiting 10 hours in the ER in that kind of pain. I hope he's feeling better now. Get some sleep.

Wendie ~ We had fun watching the movie and eating popcorn in the tent, but we decided it wasn't a good night to sleep out. It was really windy, muggy and hot. I was glad DS didn't fight me about camping out. I'm so not a camper, even in my own backyard. I will sacrifice when the weather is nicer though because I know he really wants to do it.


I decided not to do the chicken fajitas tonight - too lazy. :rolleyes1 I have a chicken/Stove Top/mushroom soup casserole in the oven instead. I hope it's edible.
 
Kathy- I am so sorry that your son had to suffer through 10 hours. I just cannot imagine that. My SIL had a kidney stone a few years ago and it was terrible. Take care of the two of you, the stress must have taken a tole on you as well :hug:.

Glynis- we had your pot roast today also! It was so good. I served it with potatoes and carrots and onions cooked in the gravy, and some steamed broccoli on the side. I had a lot of chicken pie filling that i did not use so I made one for Marisa. I also made one for my Aunt and my son.

Lauren- The onions were so good. I would only admit to my dinner friends that I made an onion sandwich because they tasted so good on my hot dog that I knew they would be even better if I did not dilute them :blush:

Liamsaunt- I cannot tell you how good your food looks! You could open your own gourmet restaurant!

:offtopic: Ladies, today I needed to go to my Moms once again to go through some more things. It still is not real that she is not there yet, so this is way too fast for me. Each time I am joined by my older sister I come home complaining for at least an hour! This woman has barely been involved with her for the past 20 years and needed to be pushed into helping her once she got so ill that she needed 24 hour care, and now she is attached to everything that my Mom owned! When she took all of her State quarters that she saved over $300 worth, and her little bundle of card money (she has not played cards with her in at least 30 years) for "sentimental" reasons I thought Gail was going to rip her throat out! Thank goodness that it is all back to normal once I check in here!

Oh, I'm so sorry about the kidney stone!!! As the "proud" (insert sarcastic voice here) passer of 18 kidney stones in the last 7 years, I feel for your son! There's nothing worse. Give him a big hug, and then insist that he ups his water intake! Were they able to catch the stone? I ask, because if they did, they can analyze it. There are 2 types of stones, calcium, and uric acid. If it's a uric acid stone, they can give him pills that will reduce his liklihood of a recurrance. If it's calcium (like mine) there's nothing at all they can do!

Morning all. :surfweb: I am so out of it with this shoulder pain. I have another doctor's appointment today. I'm noticed the pain is really bad after I've had a day of transferring in and out of my car/husband's car. So I'm trying to stay home or limit my car transferring as much as possible. Blech :sad1:

So on that note, I am making vegetable soup and garlic crescent rolls for dinner tonight. We will have leftovers tomorrow. When I get home from work I will NOT feel like cooking.
