You're never a pest! Here's the recipe:

S'more Drops

4 C. Golden Grahams cereal
1 1/2 C. miniature marshmallows
1 C. semi-sweet chocolate chips
1/3 C. light corn syrup
2 Tbs. butter
1/2 tsp. vanilla

In a large bowl, mix the cereal and marshmallows. Set aside. In a 1-quart microwave-safe bowl place the chocolate chips, corn syrup and butter. Microwave 1-2 minutes, stirring every 30 seconds until smooth. Mix in vanilla. Pour over cereal mixture and stir to coat evenly. Dop by tablespoonfuls on waxed paper-lined cookie sheets. Let harden in the refrigerator for half an hour.

WE had honey garlic ribs yesterday (you people are getting me cooking again!). If you are not a big BBQ fan(like me) you will LOVE honey garlic ribs:
rack of pork baby back ribs
1/2 c. honey
1/2 c. brown sugar
3 tbs. soy sauce
1/2 tbs. garlic powder
1/2 tbs. ground mustard

boil ribs for about 15 minutes(or whatever amount of time you think they are partially cooked)
combine all the other ingredients into a bowl(or freezer baggie), mix throroughly
cool ribs for about 15 minutes and mix them up with sauce(put them in the baggie or bowl and cover if in a bowl)
Let them marinate about an hour or so in the fridge
preheat oven to 350
Line them up in a pan and cook on 350 for about 30-40 minutes(turning them over every 10 -15 minutes, basting them in the honey glaze)

Done-YUMMMMMMMMMMMMMMM!eat them up!
My MIL says to marinate overnight, but I find it better when all in the same day. This is the ONLY kind of ribs I will eat! And if you do not parboil the ribs, cook them in the oven by adding another 30 -45 minutes. I like parboiling them -it seems to get all th "yuoook" off of them.

Today I am marinating chicken in the Polynesian Luau recipe from my Cooking with Mickey cookbook. We seem to be doing some sweet recipes so I am trying to make the healthier by using part honey and sugar or part splenda and part sugar. I'd for my food to have that same aftertaste my tea does! I can only take so much non sugar sweeteners(except honey-yum)
DH asked if I was making the Luau's Banana bread with it(these are recipes from the early 90's in WDW). I heard they no longer serve these recipes. BUT heard they were better! We are doing the Luau next year when we go.

Lori- those ribs sound soooooooo good!

Kathy- I'm not sure what the normal wait is, but I heard that the wait in Hartford is a long time on the weekend. Marisa said 4 to 5 hours she was told when Jeff had a stone. My BIL was there, though so he was lucky. I think that there is a shortage of staff everywhere.
 
FWIW I had a TIA (mini-stroke) about a year ago. Actually I had 2 - but for the second one we went to the ER. Our local hospital in Winter Haven is not regarded very highly, but they had me in a wheelchair before I was 6 feet into the lobby and into a bed within 3 minutes. Nothing to complain about. It's been years since I made regular visits to the ER with my kids, but I don't remember ever waiting for any length of time.

Did anybody look at your son in that 10 hours and at least assess what was happening?

Yes, within 30 minutes of our arrival the triage nurse assessed him and ordered an X-ray, they wanted to rule out appendicitis. Then I kept asking and asking what the X-ray showed - no one could answer me because no one knew if the Dr had reviewed the x-ray, finally after 5 hours I was told it was not his appendix. After 7 hours triage nurse assessed him again and took a urine sample. All this time he is in pain and I'm begging them to give him something for the pain and they couldn't until the Dr. saw him. Then hour 10 arrived and we get back there and have blood work done and a CTscan of his kidney was ordered by the Dr., still nothing for pain. It took 2 more hours for the scan to be done and another hour for the results. Then came the pain meds and the stone passed.:sad1:
 
I am appalled. I had wondered about appendicitis and I was thinking it could burst in tha time frame. Maybe the triage nurse was on the ball. Was the ER crowded? Was there maybe a bad accident jamming things up? I'll talk to Marla probably tomorrow morning (she usually works nights) and see what she thinks. I'm so glad he is ok. I have heard people say they would rather have 20 pound quintuplets than pass a kidney stone.

Tonight I grilled chicken breasts with a red thai sauce from my favorite store (trader joes) green beans and mashed potatoes. Didn't have time to make rice.

Thank you all for the well wishes...there was no damage in my area but there was flooding and I am sure the river here will or is overflowing (I did not go out today). There are parts of NJ being evacuated. It is still bad out but not down pouring like earlier. I hope everyone else is OK as well.

I just have to share with all of you that last nights and tonights dinner was horrible...the low carb meatballs came out like rocks, the sauce I used and doctored it up was too sweet (I do not like sugary sauce...I guess I should check labels before I buy) and then tonight I decided to try a new recipe for broiled fish...it was yucky. I should have stuck to the normal lemon butter broiled fish...of course, DF's filet mignon was good.

I'll stick to the tried and true recipes from now on!!!

Tonight I'm trying a new "Easy" recipe I found on Martha Stewart's website - Roast Chicken with Potatoes, Lemon & Asparagus. Probably a salad on the side.

Lori, I with you on the "yuoook" with ribs! :laughing: I'm going to have to try your method, sounds good! Thanks! Would you post the Luau chicken recipe, I'd love to have it. The old foods at the Luau rocked!
I have tried using Splenda in a few things to cut back on the sugar, just be careful not to use to much. It has worked well, but it's easy to overdue it with the Splenda.

Morning!

My pinto beans with the beef shank that I cooked last night came out really well. I wish I would have put more beef in it, because the meat came out tasting like Ropa Vieja. I soaked the beans about 3 hours. Then I browned the beef shanks in oil, added chopped onions, garlic, celery, cilantro, cajun seasoning, dried mexican oregano, & maybe 1/3 a can of diced tomatoes, and the beans in my pressure cooker. Cooked about an hour & a half. I served the beans & beef over saffron rice.

Jenn, we also had fresh spinach that I cooked like liamsaunt suggested it was really good. I added a little bit of garlic when I melted the butter & seasoned the spinach with salt & fresh ground pepper. It came out really yummy.

I don't know if I'm doing something with the leftover beans tonight or saving that for later on this week. Will let y'all know.

Tonight's dinner will be a Ginger Salmon Salad. We are having our only "hot" day of the week before snow comes tomorrow, so we're celebrating with a salad! The kids are off starting tomorrow for Spring Break, so things could get a little hectic around here for the rest of the week.
 
Tonight's dinner is Glynis's Polynesian Pork Roast. It is in the crock pot cooking now. I think we will have some sort of rice dish and maybe some garden peas, but I haven't decided yet.

Dessert will be the leftover cake and trifle from DH's birthday.

Paula's Crockpot Mac & Cheese was really good last night. I did alter the recipe a little though.

I wanted to do the chicken fajitas that I never made last week, but I don't think I'll have enough propane to grill them. So, dinner tonight is going to be reuben sandwiches and salads.
 
The little bits of beef in my pinto beans, had me craving Ropa Vieja so that's what I'm cooking, along with some Green Chili Corn Bread. With the pinto beans & a green salad w/tomatoes, onions & black olives we should have a pretty good dinner.

Hi All! I hope that everyone is safe and sound after the past few days.

My DH invited some friends over for dinner tonight so we are having
"Show Off Roast Pork". It had garlic, Parmesan Cheese, prosciutto, and butter inside and on top of it. So Good.
Mashed potatoes, gravy, steamed broccoli, corn salad with honey lime dressing and garlic bread. I made a peanut butter pie and I tried the almost apple pie again. I bought ice cream "just in case" because things don't always come out right lately.
