Oh my, people!!! I just made the Cheddar Cheese Soup recipe from Le Cellier (posted at http://allearsnet.com/din/rec.htm) and it came out fantastic!!!!!

Cheddar Cheese Soup
Le Cellier
Canada - Epcot


Ingredients:

1/4 lb. smoked bacon finely chopped
1 medium red onion cut into 1/4 in. pieces
1/2 cup finely sliced celery
1/2 cup finely chopped carrots
3 TB all-purpose flour
3 cups whole milk
2 cups chicken stock
12 oz. grated white cheddar, Canadian Black Diamond
3 dashes Tabasco
1/2 tsp. Worcestershire sauce
1/2 cup Moosehead Canadian Ale, room temperature
salt and pepper to taste
1 TB thinly sliced chives

Method:

1. Cook the bacon in a large heavy-bottomed, non-reactive soup pot over medium heat until wilted but not browned.

2. Add onions, celery and carrots and cook until the onion is translucent and bacon has crisped.

3. Sprinkle in flour and stir constantly for 2 minutes. Stir in milk and stock, a little at a time, blending well to ensure there are no lumps. Bring to a boil, then cover and simmer for 15 minutes.

4. Remove from heat and whisk in cheese, Tabasco, Worcestershire and ale. Season with salt and pepper to taste.

Serve with your favorite bread and top with chopped chives.


I am definitely making this for Christmas.
 
No clue yet what we're having for dinner tonight, but last night we had grilled boneless teriyaki pork chops, eggrolls, rice, and broccoli.
 
For some reason, I turned into a baking fiend yesterday--homemade dinner rolls, peanut butter cookies with Hershey's kisses, magic cookie bars--that I'm kinda cooked out today (still might make more cookies :teeth: ) So, I think tonight will be something easy--pizza or pasta. I'm taking DD to a high school (my alma mater) holiday band concert tonight, so we'll be eating and running!

Another snowy day here in Utah! It's finally beginning to look like Christmas. My kids are so excited!

I just took some chicken out of the freezer, so we'll have some kind of chicken dish. I'm thinking of doing teriyaki chicken (baked). Have to check and see what veggies I have on hand. I'll also do a brown rice dish to go along with it.

I'm also starting my Christmas baking today. I'll be making cookies, fudge and brownies. Snowy days are great for baking!!!
 
I have 4 defrosted chicken breasts that should have been used up yesterday (of course DH wanted to go out). I have to do something with them right now Before they spoil) that can be reheated for dinner (without tasting like leftovers). Any ideas?

Here is a recipe that can use cooked chicken...its yummy served with rice:

Hot Chicken Salad:

4 cups cooked chicken
1 Tsp salt
1/2 Tsp pepper
4 cups diced celery
1 cup slivered almonds
1/4 cup minced onion
4 Tsp lemon juice
2 cups Mayo
1 cup grated cheddar
2 cups crushed potato chips
***Optional (I never use) chopped green olives

Mix all the ingredients except for the cheese and chips. Put in a baking dish and top with chips and cheese.

Bake at 450 degree for 10 - 15 minutes, until bubbly.
 
Was going to make meatloaf, but so much leftover salmon (I wasn't feeling too well last nite), so will make salmon cakes. Have to think of a starch.
Have plenty of tinned veggies (DH doesn't like frozen :rolleyes: ) & fresh carrots.

Corned beef hash, for us, is simply leftover cb, chopped boiled or baked potaotes, S&P to taste. We like a little garlic, too. I like some sauted onions &/or bell pepper in mine. I like a little celery seed thrown in, too. The family does not like onions, celery or bell pepper tossed in. I cook in a low & slow in a skillet with canola oil (although, in the day Mom used bacon drippings).

Though most of the time, I am a Hormel girl! ;)
Unfortunately, that is true for the waistline, too!

We're having pork chops, long grain rice and peas. It's not very exciting, but it's easy and we'll have plenty of it.
 
Tonight is my husband's monthly Geek meeting so I am on my own tonight. I may have a mug of tomato soup with croutons. Quick and easy, but comforting :)

I also have Brokeback Mountain in from Netflix. I want to see what all the hub-bub is about.

Easy day for me today. DD has a private cheer lesson, so we won't get home until almost 6. I'll just have hubby throw in a couple of Digiorno (sp?) pizzas. DD will be happy, and it will be easy clean up for me afterwards. I am feeling worn out lately. Too much running around.

Speaking of Digourno (have no idea how's spelled), my hubby and I had the new garlic bread pizza this weekend. Oh...my...word!!! It was SOOOOO good!! I bought some pizza sauce to dip the crusts in, too. This is going to be my new PMS food! :rotfl2:
 
Dh has a late meeting tonight so I'll probably make some sort of sandwich.

Tomorrow early am we are hitting the road to go to Disney World!!!

I thought it was a really good movie...DFi was squirming the entire time watching it...you'll see...but like I said it was a great story...

Dinner will be left over pot roast...this is a truly great recipe...Thanks Glynis for sharing!

Wow! Sounds like I should have gotten that one. I think I just got a pepperoni one and a cheese one. Actually we haven't had frozen pizza in a very long time. We usually pick one up at the local pizza shop, but I picked them up on a whim the other day at the grocery store. Oh yeah, I actually thought about going out to the freezer and seeing how to spell it. Decided it wasn't worth my time as I wouldn't remember next time I needed to spell it anyway...........LOL :rotfl2:
