Tonight will be a honey/lime marinated pork tenderloin, caribbean rice and green beans.
 
tonight we are having people over from church for a potluck. I ordererd a cold cut/cheese tray with rolls from the grocery store.

I made the Meatball and spaghetti stoup last night for Thursday night's dinner. I had some as my husband was out. It was pretty good- one problem is that when stirring in the spaghetti, I broke some of the meatballs and the spaghetti took longer than I thought.
 
not sure, something quick and that doesnt have leftovers because we leave for WDW in 2 DAYS!!!! and I dont want a fridge full of leftovers. Maybe hotdogs.
 
We are trying the Chinese BBQ Pork Tenderloin from this thread. Going to have brown rice and broc with it.
 

Well, I was going to do leftovers tonight, but DH decided to take the leftovers for lunch instead! Guess I'll have to search this thread for some ideas. Off to the first page to look. I'll come back when I've decided.

I have taken to cooking the noodles seperate from the stoup. Works easier, quicker, and I think it tastes better.
 
I think tonight will be tacos! DD was sick yesterday, so I'm hoping we're on the mend now. Also, crossing my fingers that DH and I don't get sick--or if we do, make sure it comes and goes before we leave for IL's next week.

Episode: A Barefoot Contessa Holiday

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam

Preheat oven to 350 degrees F.
In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until just combined, and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic wrap and chill for 30 minutes.

Roll the dough into 1 1/4-inch balls. (If you have a scale, they should each weigh 1-ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve
 
Chicken Enchiladas for us tonight. I really should some ground beef I have in the fridge but I'm not in the mood for that.

I just realized I haven't posted in a few days.

Monday we had boneless NY strip steaks, baked potatoes, and peas.

Last night was Rice Krispy Chicken, angel hair pasta with herbs, and squash.

I bought boneless country style ribs for dinner, but I don't know what to do with them. Any ideas?
 
Tonight I am making pasta with a garlic-cream sauce, with sauteed broccolini tossed in, and some parmesean cheese. Plus an arugula salad and some crusty baguette with French butter (Extra fat! Yum!).

So, here is a challenge for my WFD friends. My inlaws are coming for dinner on Sunday. This is a very rare occasion, as they usually prefer we go to them. Honestly, they come to our house maybe once or twice a year. I need to think of something to make them for dinner, but incorporating their food restrictions: nothing at all spicy, nothing too salty, no nuts, no pork, no onions (!!!), no garlic (!!!!!), and no strong flavored cheeses. It can't be vegetarian, and if it's poultry, it can only be chicken, and only white meat. They also don't like most fish, with the exception of haddock or tuna, but the tuna has to be well done (YUCK!).

So, I guess what I am asking is if anyone has an interesting recipe for haddock or chicken breast that incorporates all the above restrictions. I really would like to make them something nice, as I love them dearly.

Oh yeah, I don't own a crockpot either, so no crockpot recipes.
 
Tonight Hubby is going to be at the lab late doing SEM so I am on my own for dinner. I think that I'll be having Baja Sol as a award for having him spring on me the idea of buying his grandmother a X-mas gift suddenly today (like I have any idea of what to buy his grandmother :confused3 ahhh!)

Tonight we're having Creamy Italian Chicken, but I didn't put it in the crockpot so I'm trying it out as a casserole. I've made it on the stove before, but this is something new.

Yum, chicken kiev! HOWEVER, I forgot to mention that in addition to my in-laws' restrictions, my brother in law will also be in attendance, and he only eats low fat foods!! AAAAHHHH!!!!! You see, he's a bodybuilder. Hmm...maybe I should just make him a protein shake. :)

So, to recap: low fat, low salt, no pork, no nuts, no spicy foods, no crock pot recipes, no garlic, no onions, no vegetarian, no strong cheeses, white meat poultry only (on the bone is OK), or haddock/cod. Finally, turkey dinner and anything related to that is definitely out, since my MIL is serving that to us Christmas weekend, and I don't want to replicate her menu--she'd be insulted.

I am SO doomed. :eek:
 
We are having leftover soup and cornbread tonight. I did something really cool with my soup last night. Instead of adding a dried herb or 2, I added a tablespoon of herbs de Provence. Ohhh, it was to die for!!!

I am making my candy today. I am making the Oreo truffles and am going to attempt to make chocolate covered cashews. Wish me luck with that one.

ETA: Liamsaunt, my heart goes out to you. I'd be so tempted to tell those folks to go fly a kite and cook for themselves! LOL!!
 
Linsday, Have fun making your candy...those cashews sound like they may be hard to make since they are small...but I am not good at things like that...I always burn myself, etc...Very Clumsy here! :)

We are having pizza delivered tonight...we have a credit a the local pizza place (they charged our cc twice) so we are taking advantage of that.
